We ate dinner at Le Cellier on the second day of our trip (Friday, August 6 - 5:00pm reservation). I was surprised by the large number of empty tables (at least 15% of the restaurant) when we arrived, and a lot of those tables remained empty for our entire meal. When we left, the desk was accepting some walk up reservations.
We stayed offsite, but we ate at numerous resorts (and parked at those resorts).
The security person never once asked for any information about our reservations (I simply had to show a picture ID) at dinner or at breakfast. We did not receive any three hour parking pass at any resort (including at the Contemporary, Poly, BC, YC and BW). It would be very easy to simply park at the resorts all day and go to the parks. In years past (when we stayed onsite), I regularly received the 3 hour pass or the security person checked my reservation.
