Thank you for this thread and all of the replies.... It is helping me with our plan!
I have 2 ADRs for every full day of our trip. We eat 2 meals per day at Disney, and I prefer them both to be table service meals, so we get good food, a chance to relax, and a guaranteed table.

We do 3 ADRs most days of our trip, so I see no problem what so ever with 2 ADRs in one day, especially since it's breakfast and dinner. You've gotta eat anyway, so why not enjoy some of the great TS options? We are 3 meals a day people at home, and I always say keeping your eating/sleeping pattern as close to home as possible is one key to a successful trip. Personally, QS drive me bonkers, so I try to avoid them. I love having lots of TS meals during my vacation, it adds to the overall enjoyment. Plus they are a fantastic way to build in breaks/cool down periods into your touring plan.
it's kind of all about priorities and attitude. If you are angry that you need to stop and eat at all and the longer it takes and the more expensive it is, the more miserable you are... well then 2 TS in a day is too much. If you see dining as part of your vacation and are looking forward to enjoying a lot of the destination dining at WDW and see it as value added and not park time taken away then no it is not too much at all, as long as you space your meals apart widely enough (my only caveat). I am doing mostly breakfasts and dinners with the occasional very late or very early lunch to fit it all in (replacing dinner or breakfast respectively). If you can scratch off just one character meet and greet which seems to be a minimum half hour between walking there, waiting in line and visiting with the characters, any character meal where you see 4 characters is not wasted park time since you'd have to eat anyway. It's nice to hear from someone who does so many ADRs. I love when others reinforce my reasons for wanting to do 2 a day. We are not breakfast eaters, so it makes sense for us to skip that, but I scheduled them for sit-down breaks as well as to experience the characters and experience the unique dining options that WDW has to offer. I've never done a single TS before, so I've been nervous as to whether it was too much. I've also never been as a parent, either, and really wanted to include the sit down meals for us.
