Turkey leftovers? Any ideas?

What do you with your leftover turkey?
This year it won't be much of an issue for us because the day after we are leaving for WDW, :wave2: but in the past I've always wondered what would be a good use of them except for the obvious sandwiches, which are very good BTW.

So what do you do with your leftovers? Sandwiches? Soup? Casserole? :confused3
 
I cajun fry mine. After T-giving I grind up the meat, add a little mayo, little relish and a little horsradish. YUM-YUM!
 
We eat it all up with sandwiches. Sometimes I make hot turkey sandwiches with leftover mashed potatoes and gravy. We use the carcass for soup.

We eat turkey quite a bit throughout the year so this is an ongoing thing with us!
 
I make sure to have a few sandwiches with it first. Then I chop it and make a casserole. I learned how to make it in cooking class in high school. I don't have the recipe anymore, butI just wing it. This makes a square casserole. I sometimes double it. I've also made it with chicken. It's sooooo good.

First, make a few cups of rice and layer in pan. Then, melt a spoonful of butter and add a few tablespoons of flower in about a 2 quart pan. continously stir until it makes a paste. Add 2 cups of milk and 2 bullion cubes and bring to a slow simmer. It will get pretty thick. Add 2 cups of cubed turkey and a can of mushrooms. Stir together and simmer a few minutes. Then layer over the rice. Top with shredded cheddar cheese and bake for about 30 minutes. The sauce will have soaked into the rice and there is so much flavor in it. I crave it every year. It's sooooooo good.
 

I make a sort of cassarole - I don't know the name, I think its Martha Stewarts recipe - it uses all your leftovers. In a pie plate put down a layer of stuffing first, then vegetables, turkey, cranberries, and on top put a layer of mashed potatoes, and put in the oven to bake - it's actually really good.
 
I make turkey soup but I pretty much put all the leftovers in. The carcas gets boiled down and disposed of. The left over meat, potatoes and veggies go in, the gravy too. I add everything but the stuffing and cranberrys. I'll add spices to taste, a box of rice and maybe a can of tomatoes and it's good to go!
 
My mom had a really good recipe for turkey gobble ups. I don't remember exactly how it went, but you buttered some english muffins, spread an avacodo mixture on them (avacado, onion, mayo I think), put a slice of tomato, some turkey, and topped it with cheese. Then it goes under the broiler for just a bit.

Very yummy. I should get the recipe from her...
 
Turkey Pot Pie!!! I use the extra crust from the box I buy for the pumpkin pie I make, and follow the WDW pot pie recipe from my Cooking With Mickey book.

Oh, and the best part is I can chop up the turkey that night, make the filling and freeze it to make the pot pie later if we won't have it right away.
 
I just learned how to make turkey soup last week! My MIL was over and I made a turkey breast. She showed me how to boil the carcas, add some bouillion cubes, add carrots, celery, leftover turkey and noodles. It was delicious.

Christina, that caaserole sounds yummy. I'm going to print out that recipe and try it. Thanks.

I always buy turkey bigger then what we need just so we have leftovers. I think the favorite is the soup and the sandwiches but I made a few casseroles before and they all turned out pretty good.
 
We always just cut ours up into small chunks, then mix it with the gravy, heat it and serve over bread or mashed potatoes. Yummy. But the casserole sounds better LOL.
 
Here's a good one:

Turkey, Gravy and Stuffing Wraps

12 inch tortilla wraps (pita bread works well too)
Cranberry sauce
Sliced cooked turkey
Stuffing
Parsley, for garnish

Spread 3 tablespoons of cranberry sauce on a tortilla wrap. Lay 2 to 3 turkey slices on the wrap. Top with 3 to 4 tablespoons of stuffing. Roll the wrap, and cut on the bias. Enjoy!
 
Here's another good one! It's very simple to make, and is very good!

Next Day Turkey Pot Pie

1 medium onion
1 C. carrots, thinly sliced
1 C. celery, thinly sliced
1 T. vegetable oil (you can also use olive oil)
9 oz. frozen chopped spinach
3 C. cooked turkey, chopped or shredded
1/2 C. country or baked ham, chopped
10 3/4 oz. canned cream of chicken soup
2 1/2 C. milk, divided
1/4 t. black pepper
1 1/2 C. self-rising flour
1/4 C. Parmesan cheese, grated
1/2 C. butter or margarine (I prefer butter)

Heat oven to 400 degrees. Grease shallow 3-quart baking dish.

In large skillet, cook chopped onion, carrots and celery in vegetable oil until tender. Stir in spinach (thawed and drained); pour into baking dish. Add shredded or chopped turkey and chopped ham; distribute evenly in baking dish.

In medium bowl, combine undiluted soup, 1 cup milk and freshly ground pepper; pour over turkey mixture. In medium bowl, combine remaining milk, flour, grated parmesan cheese and melted butter or margarine; stir until smooth. Pour over ingredients in baking dish.

Bake 45-50 minutes or until golden brown.

Makes 6-8 servings.
 
As if Thanksgiving Day didnt have enough calories, there is nothing like a good Turkey Tettrazini Casserole. I dont have a recipe handy though.

Our family is not a big fan of Turkey soup.... :crazy2:
 
Turkey in Gravy

Cut up the turkey in bite size pieces.
Put a pot on the stove with cream of mushroom soup, milk, thyme, and gravy master. Throw in the turkey, heat and serve over toast. Yummy!
 
We do sandwiches with Turkey, cranberry sauce and cream cheese on Marbled rye.
