Turkey bacon - recipes?

I got a few packages on sale at Publix for a great deal (99c each after coupons!), and I'm curious what to make with them. Planning on breakfast for dinner, and probably using it in a quiche, but what else?

Anyone have any other great recipes incorporating (turkey or otherwise) bacon?

Can you freeze turkey bacon?

Yes. Take one slice of turkey bacon and 3 slices of real bacon and put them on a sandwich with lettuce and tomato and mayo and you have yourself a delicious meal.

I found out the hard way that all turkey bacon is not equal We love the OM brand and the Butterball, but the Jenni O is rubbery. They do have to contain a little *fat* to taste good. I use it all the time in place of pork bacon. It tastes great to us. And, yes, I freeze mine with no problems

I have frozen turkey bacon without issues. We use it on burgers, BLTs, or as crumbles for salads.

Well, Jennie O is what I bought, so I guess I'm stuck with rubbery bacon!

I never buy bacon b/c it's usually so expensive (not to mention unhealthy). So we'll see how it goes!

Wrap it around fresh asparagus that has been drizzled with olive oil and roast for about 20 minutes. Yum.
