When we were there during Irma we fared better at All-Stars than other places did in terms of the rooms. The advantage to Deluxe is ability to go out of the room whereas you were not supposed to with exterior doors but we only had minor tree damage whereas Poly had some pretty bad damage and I believe POR had water leakage into rooms (they had given ground level sand bags). All-Stars is located in Osceola County and had different curfew (county level that is) than Orange County at the time. Presently Osceola for Ian is under the emergency declaration. Just mentioning this because majority of WDW is Orange but there are portions that are not which includes All-Stars.
Irma's track went more west in the end than originally expected. They had evacuated to places that ended up getting direct hits from it (Tampa for one IIRC).
Pre-pandemic this was super easy to deal with Disney. Disney and Universal shut down for 2 days. We extended our trip by one day getting our discount rate and being able to stay in the same room and our flight was covered under SWA's travel advisory policy so we did not pay anything. But with park reservations I am not sure how they will handle this. And date-based tickets either. I'm not sure a hurricane has affected Disney since Irma which was before date based tickets came out and before park reservations. I do however think they were good on MNSSHP refunds and don't think that would be impacted by time and change in park ticket/reservations.
They took care of people very well during Irma, the meals you could buy much better than Matthew in 2016, great little pop up interactions with characters (goofy came to the food court at All-Stars for us). However...quite frankly I don't know if that same level is there now. You'll be safe there, locals do get hotel rooms there either in preparation or because power outages. After Irma we ran into a good amount of locals there to spend the day because they had no power at home. The parks were very empty however they had shut down the airport a day before it hit and Disney and Universal were closed for 2 days so the impact was anticipated to be big enough.

Irma mostly hit overnight and for me that was better as I was able to sleep through most of it, my husband woke up due to the winds though. Even with an exterior door and being on the top level I did feel safe there.
The present path for Ian shows a similar enough pattern to Irma however Irma went up through more of FL on it's way to Orlando which helped weaken it more so that is going to be a primary factor in how much impact Disney gets. If it stays out in the water more it can have time and fuel source to strengthen on the other hand that may allow for less travel disruptions (I say less here but only marginally so if it would be less). For Irma so much of the state was engulfed in it.
