I brought my triplets twice when they were 5, used strollers for both trips.
I would highly recommend a good, sturdy double and then an umbrella single which, when needed, you can fold up and lay over the canopy/handle of the double. We did this with a double Bob first trip, double umbrella the second.
Now, obviously, my use case was different than yours, but here was our thinking: we wanted seats for all 3 so that they were contained during rope drop and could rest when we were leaving the parks at night. At 5, they weren't using strollers anywhere else but I wasn't keeping them up past bedtime and then telling them to walk out of Fantasmic in my day-to-day, either. We were planning a trip that pushed them well past their normal night limit and I wasn't going to force them to walk that late. Also, during rope drop and when moving between sections of the park, it was much easier to have them all contained so that adults could just walk at a normal pace without watching for little, distractible people in a crowd. We needed 3 seats for those times.
That said, we also had plans that left 1 adult with 3 kids. They weren't quite 44", so rider swapping was going to happen at a few rides and the non-riding parent needed to be able to traverse the park. That's when we put 2 in the double, folded the single onto the handlebars, and had the 3rd kid hold the stroller while we walked. I did that while Hubby rode Everest. He did it while I rode FoP, etc. Also, when stroller parking was tight, we could put the single on the double to park both in one space and it was much easier to find later because it was so obvious.
As to buses, the kids were old enough to get in the bus themselves by that point, so we each took a stroller. But, at 1:00am when I had 3 out cold after a
MNSSHP, Hubby started loading the kids into the bus one at a time while I broke down strollers as they emptied and it was fine. The double in the bus is a PITA but the umbrella isn't.
My biggest concern with the Zoe would be navigating the parks. I know it's technically in the size guidelines, but, by being both a wide and a long stroller, it's going to be a tough squeeze in certain places. And, I can practically guarantee that someone is going to trip over your front kid because they come from behind trying to cut you off, go to turn in front of you, and then realize there's more stroller there. Heck, I had people trip over the wheel of the Bob because they cut it too close trying to cut me off and that was just a regular double. I've never used the Zoe (mine were moving out of strollers when it came out) but I've operated a few other triple stores, wagons, etc. The double feels so breezy by comparison, yet it was tight in Disney crowds. The double/single gives much better options to get where you're going without getting stuck. Also, I'm not sure how bulky/obnoxious the Zoe attachment seat is compared to an umbrella stroller for folding and loading/unloading.
