Trip soon, changing plans re: weather?

So here's the basic situation:

A while back, I planned a trip for my kids that got bumped from Sept to Jan/Feb. Here and there, plans have shifted and I ended up adding a day (and then the kids really wanted to go to Legoland - so I thought, ok, we'll do that our first day and then settle into our DVC rental and do WDW). Now, the weather for Saturday looks blah. I appreciate someone on the board when I commented on a Legoland (wanted to abbreviate it, realized Lightning Lane messes that up ) thread and they said it would be okay with a jacket (but the temp forecast has fallen more, winds picked up, etc). So, here's where my plan was most recently:

Day 1: land (early - 8:30 or so), Legoland, get to to AoA in the evening
Day 2: transition to AKL, breakfast (kid desperately wants Boma) and then MK
Day 3: AK
Day 4: Break or DHS
Day 5: DHS or Break
Day 6: EP
Day 7: MK
Day 8: extraneous (flight leaves at 8:40 or so pm)

I definitely wanted a break day in there - and I bought tickets thinking about this plan (and even before Legoland, my thought was that we'd arrive and do resort stuff). But now, I'm thinking:

I mean - it just doesn't help to have a break day as the very first day. So, how would you use a day with no set plans that would likely be best served mostly indoors? I'm the only adult going (using an ECV as I have muscular dystrophy and some other stuff) with two kids - one is 8 and will be 9 the day after we leave the trip and the other is 5 (basically their first time going; I've been 20+ times incl back in Sept). Are there any particularly good parks for cold days (Epcot, maybe?)? I sort of want to tough it out because I didn't really want to do Legoland this trip (I had the perfect WDW trip planned and then my oldest got ahold of it and I don't want to disappoint them. My tickets are non-refundable but I can use them for up to a year - maybe that's the best idea (wait and take a weekend trip just for Legoland). I rented a car, in part for LL - so I could let go of that if we're just going to stay on property the whole time.

Any insights from folks?
 
I’m not sure what I’d recommend re: planning dates but it’s probably good to remember that Saturday there is no guarantee what time your room will be ready. We land shortly after you and while I’d love for our room to be ready before heading to a park, it may not be ready until afternoon or evening.

the beginning of the week looks cooler so we plan to layer up to keep warm when it’s cooler. The good thing is, there currently isn’t any rain in the forecast got the dates we’ll both be there.
 
I guess part of what I'm wondering is:
  • Do Legoland on Day 1 and tough it out (but might not make the kids as happy as they'd like)
  • Do a WDW park on Day 1 and revisit Legoland another day that week
  • Do a WDW park on Day 1 and save Legoland for later this year
  • Do nothing of substance on Day 1, do my normal plan, and depending on how we feel, try to fit Legoland in on the day that was a break and/or the Saturday we leave.
    • I wanted that Saturday in case we didn't get everything ridden, etc - my main goal (I mean, a family vacation is the goal ... but ... ) is a fun trip to Disney World.
  • Some other option(s) I'm not considering
In all truthfulness, I'm good at winging it (for the most part) but don't really want to completely do that for this trip (for a variety of reasons).

Very true - and that's part of why (I'm glad you named it - I should've/meant to). So, if I knew we could just crash in our room, etc - I'd do that. But it seems less likely. The kids wanted to try the arcade, etc and I thought this could be a good way to get Disney Springs done (rather than at the end of the trip). So, yeah. And I could take them to do things like the Skyliner, etc and make it a sort of "orientation" day. But yes - great point!
