We will be traveling from California. What are your suggestions for the first day we are there? We were thinking of just hanging out on the day of arrival, and attempting one of the parks the next day. What park would you pick considering the jet lag?

With FPs, you don't have to hit rope drop and can get acclimated to the time change without waking up at what would be 4:00 CA time.

AK would be good as you would end with an earlier park closing. If you have park hoppers, you could hop to the latest closing park if you are wide awake. I wouldn't choose MK as your first morning park because that's best to attempt at rope drop.
 
We like going to EP on our first day. Even if all you do is wander around World Showcase and get a bite to eat at one of the many really good QS, it would be a great start to your vacation. With the time difference, you may even want to go ahead and catch Illuminations before heading back and trying to sleep.

Your biggest problem will be that next day, your first morning. This is the day you may want to NOT try rope drop, but you don't want to sleep too late either. A later start on this first day would be good at AK.
 
We like Epcot on first day.....but it changes around.

We have flown from west coast to WDW at least 20 times.......just go to bed early the first night and get on the FL time schedule. Never had a problem with jet lag UNLESS I fly red eye. That kills me....too old for it anymore.
 

We come from California as well. Unless we fly a redeye we usually get in around 5 or 6 Florida time. We usually hang around the resort and have dinner. No parks for the first day. Go to bed around 8 or 9 pm Florida time (easy to do because we would have gotten up super early to catch the flight there). Then we start our next day with and early rope drop. We don't usually experience jetlag. Hope you enjoy your trip pixiedust:

I think hanging out at the resort on arrival day is a great idea. We are midwesterners so we can get into Orlando relatively early. If you get in early enough you also might want to consider hitting Downtown Disney (DD, Disney Springs (man that's weird to type)) for a little while to warmup to the World. We usually have plenty of time to checkin to the resort, get settled, and head to DD for a little shopping and dinner. We then head back to the resort for a good night's sleep and an early start at our first park the next morning.

This is what we do as well. Almost always take an early flight and get to Orlando between 4:00 - 7:00. We always rent a car so we might go to another resort (or two)for a meal and maybe Downtown Disney. Getting up really early for a flight helps get you into the the proper time zone. :)

We start adjusting our wake up times a few days before we go to help with the time change once we get there. We arrive in the 6-7 range at night, eat dinner, go to bed and wake up early to get to the park the next day.
