I'm planning a trip to go to all three Disney Asia parks, a visit to one of the parks will likely land on a weekend. Which park is the best to visit on the weekend? Or which is the most important to avoid on the weekend?

Your best bet is definitely Hong Kong on a weekend. Tokyo and Shanghai are way more crowded.
