We were at Tokyo Dining a couple of weeks ago. They did have a sushi platter option.
We didn't order the sushi platter, but considered it. Instead, we ordered a mix of sushi, rolls and sashimi. The fish was fresh and very tasty.
I checked the Tokyo Dining menu here on the DIS, and these are the platter choices I recall that we considered (there are pictures of them on the sushi menu):
Sushi Combination - Tuna, Yellowtail, Salmon, Shrimp, Masago and 4 pieces of California roll. - $18.95
Sushi Deluxe - Tuna, yellowtail, salmon, Isumi-dat, shrimp, conch, squid, egg omelet, salmon roe, and 3 pieces of Tuna roll. - $23.95
As for kobe beef, although we didn't discuss having it while there, I note the menu on the DIS shows these options for Japanese wagyu beef:
Wagyu Beef Aburi Nigiri - Thinly sliced rare Wagyu beef. 2 pieces per order. - $18.50
Wagyu Beef Nigiri - Thinly sliced raw Wagyu beef. 2 pieces per order. - $18.50
