So my kids desperately wanted to eat at Sci Fi and of course the only reservation I could get was at 11am.
Will I be able to get from the cruise to Carribean Beach to check in then hurry to Hollywood studios In time ?
We will have our own car

Sorry. I missed the "cruise" in there.

IMHO you're pushing it unless you have early breakfast or plan to skip it, have your own transportation and are doing Express Walk-Off - meaning you and your party are capable of handling your own luggage without any assistance.

Do you have Main Seating/early breakfast? Are you planning to get right off the ship after breakfast? Or express off ship?
 
We had early seating on our cruise last month and we made it to the resort by about 900. It is faster by car, especially if you use the toll road. It was very smooth and almost no traffic. We were in the park before 10 (after dropping off bags at resort), still in the rush that occurs when the park first opens.
 

It is certainly possible to be at Hollywood Studios by 11. In February my daughter and I disembarked after first seating, took a shuttle to Budget car rental, waited to pick up a car, and were at Disney Springs by around 9:45.

If for some reason the ship docks late or it takes longer than usual to disembark, you could go the park first and check into the resort later (assuming you don't have anything perishable in the car).
 
One other factor to consider is getting from the resort to Studios. IMHO I would drive to Studios rather than chance waiting on a bus just in case you hit a bad day/time for them. Especially with all the construction going on at CBR these days.

Just a couple of notes about traffic.
If your cruise is on the Dream arriving back in port Friday or Monday AM, there might be some traffic heading towards Orlando.Take the toll roads 528 to 417 and then take 417 to WDW resort.
Do not take 528 all the way and then jump on I 4...there is a lot of construction on 528 from John Young Parkway to I4 interchange. Not to mention that I 4 is a mess as well.

If you are arriving on Saturday then there will be less traffic, but still construction mess.
 
We are not eating breakfast that morning, and it's a Monday morning. We will only have carry on since it's a short cruise. I'm going to chance it and hope for the best.

Thanks for the info on the traffic we are definitely going to try the route you gave us.
