Tilapia recipes

I cook it by placing it on parchment paper, adding lemon and some seasoning (I'm currently using Paul Prudhomme's blackened Seafood Magic). Fold up the parchment and microwave for about 1 1/2 to 2 minutes and it usually comes out perfect. Tilapia is usually thinner and smaller pieces than the snapper I used to buy.

We do something similar to this but bake it in the oven for 15 minutes. I just use the tilapia in a bag recipe from the Red Lobster site.

Side note: First time we made tilapia, hubby insisted he wanted to grill it. I kept telling him not a good idea unless you have something on the grill (I was thinking foil at the very least). He insisted he knew what he was doing. We ended up with crumbs.
 
We have two recipes that we alternate in between. One is a parmesean crusted tilapia which is similar to a PP.

The other one we cook it on the grill but it is in a foil pouch.

4 tilapia fillets
salt and pepper to taste
4 tbl butter
3 cloves garlic
4 fresh basil leaves chopped
1 large tomato chopped
1 cup white wine

Season your fillet with salt and pepper, place pat of butter (or marg) on top of each fillet, sprinkle with garlic, basil and tomato. Pour wine over and close pouch.

I think it only takes about 15 minutes to cook, I can't find the rest of the recipe. I usually used dried basil and I usually use either grape tomatoes or cherry tomatoes. It is really yummy!

My favorite way to cook tilapia is to pan sear it. I rub the filets with sea salt and lemon pepper. I heat about 3 Tbsp. of olive oil on med-hi heat. Once the oil is hot, turn down the temp to med heat. Cook the filet 4-5 minutes on each side, turning only once. After turning, I squeeze the juice of a fresh lemon over the cooking fish.

Pan searing gives the edges a little crispiness, while keeping the fish moist and tender.

YUMMY FISH IN ORANGE SAUCE

"This is a great way to cook up a fillet of fresh fish in just a few minutes. Since it is so easy, I make it for my own lunch sometimes. For more servings, simply increase the quantities."

All-purpose flour
Salt and freshly ground black pepper
8 ounces fillet of cod, haddock, or hake, skinned
1 tablespoon butter
1 teaspoon soy sauce
1 teaspoon freshly squeezed orange juice

Season some flour with a little salt and freshly ground black pepper and coat the fish in the seasoned flour.

Melt the butter in a frying pan and saute the fish for about 5 minutes, turning occasionally.

Mix together the soy sauce and orange juice, pour over the fish, turn up the heat, and cook for about 1 minute.

Makes 4 servings

Bobby Flay had a great fish taco recipe using Mahi Mahi, but I subbed in tilapia. And to grill you definitely need foil or a grill pan! Here's what I've used before (redone from Flay's recipe):
4-5 tilapia filets
1/4 cup canola oil
jalapeno, chopped
1/4 chopped cilantro
1 tbsp chili powder
lime juice from 1-2 limes
toppings: cilantro, cabbage, sour cream (Mexian creama is much better!), hot sauce, green onion, red onion, salsa
And corn tortillas!
Whisk oil, jalapeno, cilantro, chili powder, and lime juice in bowl. Pour over fish and let marinade for 15-20 mins. Place on preheated grill. Should only take a few minutes and is done when fish flakes easily with a fork. We also grill the tortillas! Top with your favorite garnishes. Yum!!

Mix parmesean cheese and italian seasoning

Coat tilapia with seasoning mix

Bake until done.

I used to pan sautee it with butter and zuchinni, squash and carrots. Yummy! You can also put all of them in foil and bake until done.
 
Coat each side of tilapia with pesto sauce then dip in crushed unsalted pistacio nuts. Saute in olive oil. I use this for other fish also.
