Apologies if this has been asked before (I did a quick scan of the last few pages and don’t think I saw it.)

Staying at Boardwalk and thinking of getting the 3 park / 3 day $89 tickets. If we use the Epcot ticket on the day they have extended evening hours for deluxe guests, we’ll be fine to stay for EEH right?

You will be fine. Extended evening hours is a perk for deluxe resort guests with regular park admission and the 3 park ticket is regular park admission.
