We'll be in U Nov 25-26. Staying in Royal Pacific to take advantage of fast pass.

Haven't been to Universal in 20 years.

Do you think Park Hoppers are necessary? Or should we save the extra money and just do one park each day?

The extra cost is minimal. I highly recommend hoppers. We stayed on site last Xmas and we would go to one park in the am, go back to the room for lunch and rest, and then do the other park in the pm. It is nice to not be locked in to one park each day.
 
We always do one park a day if only going for 2 days. If you want to get the most out of your 2 days stay in one park and have a plan. Good luck!!

You could probably get by with the base tickets but you can upgrade to park to park once you arrive. See how the first day goes and take it from there. Just make sure you upgrade before leaving the park that first day.
