This is going to make me hungry way too early in the day.
1. Spanakopita Triangles- This is a dish I'll make in casserole form, but I've never had the patience to do all of the phyllo folding on my own. So, I love when DH picks me up a box of the triangles from Costco. Hey, at least I'm getting some veggies when having this snack. I also have a big tub of Greek yogurt and often make a little thing of homemade tzatziki for dipping.
2. Potstickers/Dumplings- I love them at restaurants and I like having them handy at home for a snack. DH hates when I make them in the house because the cabbage can make the place smell like a diaper pail (you should have seen him during DD18s kimchi phase), but I love them. I'm more fond of pork dumplings, but right now I'm settling for chicken. I have no dumpling skills so I buy premade or order for an appetizer in a restaurant.
3. Hummus and friends- This is one that I do like to make on my own. Sometimes I go traditional, sometimes I add in more Mediterranean spices, and sometimes I change it up a bit and blend in avocado. I like to keep corn tortillas around so I can slice them up and make my own tortilla chips. It's labor intensive, but it doesn't have as much of the salt and preservatives you find in store bought. Having carrot sticks handy is also a must if I'm in a hummus phase. If I want to compliment it with another dip and I can find it in store (because I hate making it), I will also have some baba ganoush. A nice olive tapenade can also mix in well.
