Burrrrr here too. Looks like maybe 2 in of snow but sleeting now. I did not shovel.
I love Daytona USA. Only race I've been to is Dover.

hi everyone!

didn't really read everything, i was just checking for the apple pie info! thanks everyone for the advice. i bought some granny smiths. i usually like to mix 2 kinds of apples, but i almost always use 2 reds, so i'll try with the granny's and something else maybe. i just find them a little tart.

so i do make my own crust (to me, there is no choice. store crusts just do not compare). i used to use my mom's recipe, but it's very hard to roll out so now i use my grandmother's. it is extremely buttery, but does taste really yummy, and is a cinch to roll. i could post the recipe if anyone's interested.

ok i'll catch up later, both kids sick and need lots of tlc today. poor things.

Its been snowing here most of the day. Not a lot of accumulation yet, but we'll see. Hopefully it won't be too dicey tomorrow. DH is a big Jr fan. And, I agree, I kept forgetting what color to look for. But, I do like some of the new looks. The kind of old style Mt. Dew car is cool.



I'm not officially a fan, but I watch w/ DH. I never thought I would like it, and simply enjoyed being lulled to sleep by the sound of 43 motors going left for a long time, but the more I learned technically, the more I enjoyed it. I still can't focus for a whole race, but I always check in if DH is watching. In theory, I'm a Kevin Harvick fan, but I just sort of adopted him the first season I watched so I'd have someone to root for. I haven't been impressed w/ some of his antics recently. (I also like Tony Stewart, but b/c he came on an interview on QVC once and was SO nice... not really b/c I know a lot about his racing. Not sure why I go for the drivers w/ anger management issues!

Poor kiddos. (and mom) I hope they feel better. DS has been battling a nasty stomach flu. (So have I. I got it Friday night, he got it Saturday.) We're both on the mend, but right now he's just very frustrated w/ me that I won't let him eat what he wants and keep trying to get him to sleep! My little ball of winter energy. He REALLY needs a few warm days to run around the yard.

Gotta run, wasted most of my "rest time" break dealing w/ a mis-processed mortgage payment instead of getting anything accomplished.

Hate mis processed payments:furious: don't they realize you have better things to do on your break like catch up with the TK board:laughing: :confused3. Hope your DS is feeling better:goodvibes. Tony Stewart, like him too! seems like a all around nice guy.

Definitely Granny Smiths, but you need to add a sweeter, red apple for flavor. I use 1/2 Granny Smith and 1/2 Macintosh or Jonamac. Works like a charm every time!! But make my own crust? Heaven forbid!! When I've tried, it comes out AWFUL!! So I've been buying the Pillsbury roll up kind. So bad for you. I'm switching to the whole grain ones in the organic section. Only problem is, they're frozen, and just bottom crusts. So, what do I do for a TOP crust??? (NOT that I'm likely to be making any pies in the forseeable future!!!)

Just wanted to chime in that my DH is a HUGE Nascar fan. His favorite driver is Matt Kennseth since he's a local boy made good. Whenever we drive to WDW we have to make the pilgrimage to Daytona to :worship: the great race track. He's got it all figured out. When we retire we will get in our Winabago (sp?) and follow the Cup series. :laughing: And, since I love to travel, I said I'd go along.

Valentines day is not a big deal here. We do exchange cards and go out to eat. Mainly because we met each other 2 days after Valentines day and we celebrate our anniversary.

Flying monkeys are from Wizard of Oz. Love. love that movie but the kids get scared. I should borrow it from my dad one day and watch it when they are sleeping.

Tony Stewart is pretty cool. Met him twice and he is pretty nice too. DD11 met him when she was around 7 and he called her "pumpkin" :love: It made her day.

Amy was on the Design Board and she came up with designs to put onto t-shirts. She is very talented and very giving with her time. Unfortunately, Disney contacted her and asked her stop. I had a bunch of her stuff saved to my computer but now it's all lost. They are about the only thing I didn't have backed up.

Wouldl love to post some pictures of the family tonight. With the "big crash", everything has to be reloaded back into the computer. I'll try to get some up tonight.

Well here's your line, I sat on my porch watched everyone detoured b/c the main road was closed (hill) black ice. When I saw the public transportation bus come through, I new it was bad on the main road.

Love the pic's:goodvibes, your dog is so cute, and I love the vaca pic's. The best is the longerburger basket!!! I remember when we were talking about decorating for Christmas, you said something about how you didn't put much out and you had your holiday longerbugers out. I always wanted to mention how pretty that must have looked. My GF, decorates very simple but so pretty and there is no doubt when you go into her house that the holidays are here!!! Have to ask, do you or sis sell them??? Or just like to collect them?

Yahoo! Big Brother is on tonight! Its quite possibly the only reality show I could be on-with the exception that you have to be mega-hot and half-naked!

It is fun to see actual pictures of people since the pictures you get through someone's writing does not always match the way the way you thought they'd look. :) Not that I pictured anyone in a bad way, just different if you know what I am getting at.

If I can figure it out, I'll post a pic of my group. (Where's disney54us the tech guru? :laughing: )
 
I know it's late but I have an update on the family vacation and SIL....you all know how SIL is and stepmom and her just don't get along. Maybe, it's hormones, but I really want to experience Disney with my brother and their son. I was talking to him tonight and he really wants to go with us. And I know my dad would love to see all the grandkids at disney. As horrible as SIL can be, I still hold out hope that once she gets there, she will see the light, so to speak.

Anybody have any experience with planing a huge family vacation? What can I do to show that the good of the family is better than the good of one person?

PS. I pretty sure that stepmom would go along with it as long as we don't spend every moment with them, which we weren't planning anyway.
 
morning everyone!

yucky, dismal, rainy day that has made all the beautiful snow slush. yuck!! my husband took mags out last night at around 7 (after dinner), and she had a blast until she got freezing cold (plus she still has a runny nose and was so tired). the crying began! but we got her under control and she had fun.

but poor dennis was so sad that he wasn't going out but it was too cold for him and he needed to go to bed (you might remember that he didn't really sleep the night before!! :laughing: ).

ok, so i'll definitely post the recipe for the crust, and i am not kidding, it is sooooo easy, and yummy. i use a kitchenaid (my favorite purchase from last year), but you can use one of those bread thingies. you know, to cut in the butter? i have no idea what they're called. what are they called???:confused3

by the way, i loved all the pictures! i try to post some of my family in a little bit.

Pie Crust

2 sticks butter cold
2 cups flour
1/4 tsp salt
2 tbs sugar
1/4 cup ice cold water (from the fridge)

put butter in kitchenaid
pulse a few times to break up a little

add flour, salt, and sugar.

pulse a few times, then put on speed 3 or 4 for a couple of minutes until you see pieces no bigger than a pea. if you see even a few that are still a little bigger, keep mixing until they are small.

while mixing, add cold water. after a few turns, the dough will come together. stop and remove.

make into a ball, and cut in half. roll out bottom crust with one half.
put in pie pan. trim excess.

add excess dough to other half of dough, and roll out the top.



this can be made without the kitchenaid also. but the key is to make sure the butter and water are cold, and stay cold. if they warm up, put them in the refrigerator for a few minutes. you can also chill the bowl to help keep everything cold.

i also read that it helps if you put the whole completed pie in the fridge for about 15 minutes before baking, since the dough warms up during rolling.

I guess I'll go watch the ice melt off the trees. (Need to clean too) Hoping it'll melt the snow/slush so I don't have to go out in the rain and shovel. :confused3 That darn groundhog!
 
Morning friends.

I feel so conflicted. I've posted on the TK thread on the Budget Board, but I feel like I'm neglecting/cheating on us here. I want to be supportive of fellow TKers but it would be a heck of a lot easier if they just came over here and we could commisserate together.

Strangely, the temperature is supposed to shoot up and now there's danger of flooding. I live up on a hill, so flooding isn't much of an issue for me. But driving 20 minutes either way and they just get devastated with rivers overflowing.

I can't believe how simple the crust recipe is! I believe the things are called dough cutters--I'll have to consult Food Network. But they all have stand mixers, something I've secretly been coveting (along with the Wii). Frankly I don't have the funds or the counter space for a stand mixer--not that I wouldn't find space IF a mixer should seek a home under my roof.

disney54us...now I feel bad about the computer stuff. Did we establish why you couldn't do those things? Are you the Mac user? Let's try again, shall we?
