Things to Do Around Cape Canaveral/Cocoa Beach?

Besides the obvious??

My mother has to attend a satellite launch at Cape Canaveral in June. My father is going along and they will be taking my son (14). My mom will be working during the day, so it's just my dad (72 y/o) and my son. They will get to go to the satellite launch on the Friday and will get some special tours but they need something to do on Thursday.

My son does not want to go to the beach and, due to my dad's age, they don't really want to do any water sports like jet skiis or kayak stuff.

I've read there is a good mini-golf place but is there some other things they could do that day?

They could go see a Brevard County Manatees game if there's one in town then, which is a minor league baseball team. Also, they could take an eco tour, like those run by Fin Expeditions and others, where you go out on a boat and see dolphins, manatees, mangroves, or whatever interests you. I took one with a mixed-age group, and the older members were able to stay on the big boat while the younger members could take kayaks out to get a closer look.
 
Your might want to post this on the cruise board here. Lots of people come in a day early for the cruise and skip the parks so they would have other recommendations.
