I bought tickets already (those special Maple Leaf ones that at long last sold out), and they have a spot for name and signature. When do I fill those in?

If you don't have it signed when you use it, they will make you sign it there.
 
Thanks! So...now or then. :) Better info than what I was thinking..."if I sign them now, they won't be valid" etc etc.
 

I had eight tickets on one voucher. I was the only one who had to sign the voucher.
 
Vouchers are a little different than tickets. Vouchers can only be picked up by the person whose name is on the voucher and with photo ID.

On the tickets, you can just write the name of the child on the ticket. The signature isn't really that important for park entry. It's mostly to keep you from mixing up the tickets once the biometrics are set for that ticket. There's nothing worse than lining up at the turnstiles with mom holding all 6 tickets and not knowing which one belongs to who. If the biometrics don't work it then becomes a long process trying to determine whose ticket is whose.
 
We just used our Mapleleaf tickets last week. When we got to the gate each morning there was an employee going up and down the lines making sure everyone had already signed their tickets. If you hadn't they would give you a pen and have you sign right there.
