Lemonade Mouth had been sitting on my DVR for months now! The kids had seen it once or twice before but Id never seen it. Guess what? I still havent seen it! On the day of the earthquake, I was pretty nervous and I needed to calm down. Baking has been my go to activity to relax. I decided to make Lemon Poppy Seed muffins when I got home. Then I thought we could turn it into a whole lemon-themed dinner and make it a movie night!
I figured the muffins would be good for breakfast, so I decided to make citrus Jello for dessert that night. As True stirred up the Knox gelatin



I took packs of orange, lemon and lime Jello and put them into three different pans. I couldnt resist making this:

A Lime Green Mickey Head! Literally! True thought I was weird for doing that!
After mixing the Jello with the Knox

I got to work on the Lemon Poppy Seed muffins.


I also made a variation of them that I called Pina Colada muffins. I used lime instead of lemon, coconut instead of poppy seed and added rum and coconut extract. They were yummy and tart. Next time, Im using more rum extract to make them taste more like a Pina Colada, but the lime flavor worked well for our theme that night.

True also helped me to make a lemon glaze and a lime glaze to go on top of the muffins:

They were so good that I had to show off and take some mini muffins to share at work the next day:

Well, the kids and I sampled so many muffins that having Jello for dessert that night too wouldve been too much! So I left the Jello for another night
So for dinner that night, I continued the theme by making roasted lemon chicken, rice and spinach:

True helped me to mix up the seasoning for the chicken and said it looked gross
but she and Coy really enjoyed dinner. I put that in my rotation of chicken dinners
After dinner, I think we each had another muffin! So it ended up being a good ending to a crazy day.
The next night, Coy helped me to cut up the three pans of Jello into cubes. We mixed up the lemon, lime and orange Jello and had citrus Jello for dessert that night.


Dinner must have paled in comparison to the Jello, because I cant remember what we had!
