I remember several years ago using the "video-phones" in the morning at the (now defunct) Communicore at Epcot to book ressies at WS restaurants for that same afternoon.

Ahhhhhh! I remember that too!

There are a couple of restaurants that I try to book as early as possible if I want a really specific time (California Grill or JIKO, for example) but the rest I book about a month out. I always tell people that if they really really really want a reservation at a very specific time and it will ruin their vacation if they don't get it, they should pay attention to the 180 days out. Otherwise, I don't think it's that important.
