Just popping in for a quick hello!

We're having storms in central Texas that are MAJOR. And of course, this weather wreaks havoc on my head.

I even picked up dinner tonight! :eek: I NEVER do that.

Had another busy weekend. Friday afternoon I went to my DN's swim meet and :scared1: There were so many people there. The swim league decided to run two age groups during the same time. :headache: After her event I took her to my office for a short time then took her to dinner at Red Lobster, had a gift card, then took her back to the meet. Her dad was judging and wouldn't get done until 8 and her event was at 2:30.

Saturday her little sister came to stay the night. We had dinner at Mimi's Cafe, her choice. Afterward we went to 5 Below where she got nail polish so I had to do her nails Saturday night. Sunday we had to go to the yogurt place.

Both Saturday and Sunday my Dsis ended up coming to my house and hanging out for a little while because the pool was so crowded. She only went long enough each day to watch my DN swim.

Sunday the Park Police were called by the Fire Marshall because of the crowd. They actually shut down the meet for a little while because the people they cleared out of the aisle above the bleachers decided to come right back. The space is only about 6 to 7 feet wide and it was two to three people deep. :scared1:


Dinner tonight was my usual salmon, orzo and brussel sprouts. I did make a rub for the salmon of garam masala, cinnamon, cumin, cilantro and olive oil. I didn't realize I didn't have several of the ingredients for the recipe I had so I just Nanatized. ;) It actually tasted pretty good.

Tuesday night and it was the standard baked potato with cheese, baked beans, coleslaw and avocado tonight.
My scratchy paltry meals are still paying off. I've lost another 0.6 kg, and a total of about 3.6 kg to date. Almost 8 lbs. Only another 12 lbs 'to go'. Anyone want a doggy bag?? :laughing:
 
It's been pouring and raining and thundering all night.

I didn't sleep. That is all. :rolleyes:

I have been cooking but it is mostly grilled meat, salads, steamed green veggies. And steamed green veggies, grilled meat, salads......... I did take pity on Buddy and picked him up a Giant Grinder on Saturday night, he is eating what I eat and while he says he needs to lose his winter insulation I don't really believe him. He knows that I have absolutely no will power so I need support. I will say that I have been cheating a bit with some ice cream at night. And I did derain with teh bag of VT chocolates that Donny and Anna brought me. And of course I am tempted by wine..................;)

TOnight is grilled chicken salad and steamed green veggies of some kind. Or sauteed green veggies :rolleyes1 I am going to try to skip out this afternoon while the girls are sleeping to see Bud's Mom so we can eat at a decent hour.
 
No more snow, thank goodness! I'm cautiously optimistic that we've had our last snowstorm of the season, however, I'm not holding my breath. I remember snowstorms in May and June! I didn't like them, but I remember them!

Dinner last night was ok, but the enchiladas really didn't have much taste, at all. The sauce recipe needs to be tweaked, and the filling needs some seasoning, as well. However, for my kids who think spice is the devil, it was right up their alley.

Dinner tonight will be pasta with my mother's sauce (yum), green salad and breadsticks (if I get motivated).

I have to teach Webelos today, so I don't know what I'll feel like after that. We'll play it by ear.

Our beautiful weather is gone. Still in the upper 50's but the wind is killing us. We had horrible tornados Sunday night. I absoutly HATE this kind of weather. And this year seems to be worse than most.

No baby yet. I talked to Stephanie this morning and she said she cleaned house all weekend and last night scrubbed toilets - Nesting maybe?? I am getting so excited for this little bundle. I just can't wait!!

Howdy, everyone! It's a big day here. My twins turn 10 today!!! Don't know where the time went! We are having a family "party" which really means blowing out candles and opening presents. No friend party this year. We alternate years so we don't get burned out on parties!

Tonight we are having a spaghetti dinner at the church. We will do the twins birthday dinner tomorrow night. They have asked for steak and spaghetti.

I fixed this over the weekend and thought I would share. It was very light and really good.

Basil & Tomato Pasta
16 ounces Penne
4 tablespoons extra virgin olive oil
1 teaspoon fresh chopped garlic
1 (14.5 ounce) can diced tomatoes
1/3 cup fresh basil leaves, chopped or cut into thin strips
1 (10-12 ounces) package cooked chicken breast strips
1-1/2 cups (6 ounces) shredded mozzarella cheese
Salt and cracked black pepper to taste

Directions
Cook pasta according to package directions.
Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 1 minute. Add tomatoes and basil; cook 2 minutes. Add chicken; simmer for 5 minutes.
Toss with pasta and mozzarella cheese. Season to taste with salt and cracked black pepper. Serve immediately.
I added more chicken and diced it. Ejoy it.


Busy busy day here - The Bishop is here with the whole cabinet. Yes "THE BISHOP" and Pastor Tess is out of town (of course she is!!) so it is up to me to play hostess. They are joining us for dinner tonight and then services. A few prayers sent my way would be greatly appreciated.
