Evening, all!

Sorry I didn't get online before now. It's been a busy day! My birthday is next Sunday, but Alan will be out of town (South Carolina, for the Caucus), so he suggested that we make today my birthday "party." Sure, no problem!!! We spent some time getting the house in order (read, all the Christmas boxes put away, and the lights taken down... finally!), and then we headed north to Salt Lake City. I had some free bowling game coupons, so that's where we headed first. What fun!!! The kids had a great time, and we made some good memories! The only bad thing was that the ball return chewed up my own personal bowling ball. Not good! However, their repair guy was there, and we left my ball for him to work on. I'll pick it up on Friday, and see if it's ok.

After bowling, we went out to lunch. Nothing big, just McDonald's, but it was fun being all together. After that, we had to drop Alan off at a freelance client's office for a small meeting about some money they owe him, and I took the kids to the mall. We just wandered around until Alan called and told us to pick him up. Looks like we'll be getting about 2700.00 from this client in the very near future. Good thing, too, since Alan's second semester tuition is due in a week!

Next stop was the ice cream parlor for ice cream cones. Very fun, and tasty!

Now we're home and chilling! It's been a great day!

Jen - that spaghetti looks pretty good, but I think I'd add some Rotel to it! Glad you liked the oysters! I just don't think I could ever force myself to gag them down!

Brandy - Congrats on the increased movement. However, don't overdo it! Sorry you were all alone today, but it sounds like you used the alone time quite well!

Nancy - Sorry Kady didn't get her date night! I'm pretty sure that that will be fixed soon!

Well, the only cooking I did today was a breakfast recipe from Pinterest. Cinnamon streusel pancakes! They were so good!!! The kids put syrup on them, but honestly, they were sweet enough without it!

We just got some awful news! Please, if you can, spare a prayer or 2 for our friends, Doug and Shawna Meredith and their daughter Megan. Megan's 5 year old son, Peyton, died about an hour ago from heart problems. Peyton was born at 24 weeks gestation, and was not supposed to live, at all. However, he has had 5 years, plagued with heart problems, hearing problems, and sight problems. Megan and her husband were told that if he lived to 7 years, his odds of heart failure would decrease exponentially.

The worst part of this whole thing, is that Megan and her husband were not with Peyton when he died. They are on a cruise to celebrate their anniversary. Peyton was staying with our friends Doug and Shawna.

My heart is just breaking for all of them.

What sad and awful news. I'm sorry about Peyton. Prayers for you, his parents and his family and friends. Condolences and long life. :hug:
 

I'll be back later with some photos for the chicken spaghetti. That way, Alison can tell me if this is what she makes.

Nothing like what I make. I'll share the recipe here. I learned this from my first financee, and it's probably the best thing I retained from the relationship! :lmao:

Now his mother used to boil the chicken to cook it, but I just use leftover chicken or turkey when I make this recipe.

1 cup cooked poultry
1 cup pasta (cook it, I like egg noodles, but originally the recipe called for spaghetti)
1 can Cream of Chicken soup
1/4 cup milk (or just enough to make it sauce like)
1/4 to 1/2 tsp poultry seasoning
1 cup shredded cheddar cheese
1/2 cup crumbled crackers


Now these measurements are my guesses about what I do. I totally eyeball this recipe.

I shred up the poultry and cook up the pasta. Then I pour the can of Cream of Chicken soup into the baking pan. I add the milk until is resembles a thick sauce, then I put in some poultry seasoning. Next I add the chicken, pasta and half the cheese. Stir is up good so everything is coated. Then I top it with the rest of the cheese and crackers. Bake at 350 for about 25 minutes.

That's MY Chicken spaghetti!

I don't know how you do it! But I'm glad that you figured out the Amanda thing and you two are good. I hope she gets the help she needs. I know if Fran doesn't take her meds regularly my life can be a living He!!. I have to try and keep up on it, so I hope she gets things regulated.

It is a whopping 14 with the wind chill it brings in down to 6.

As I said to Lindsay, how you folks deal with this I have no idea!

Cute story about Kady. There is a new Chinese buffet that opened up and she liked it., Buddy is not a fan of Chinese food but will eat it. I stopped in to see Kady last night and she wanted to go out, but I told her Pa probably would not want to go. "Oh I can talk him into it in about 10 seconds!" so I told her to call him. She called him and was telling him who was going, got to "and your wife" when the call dropped. You should have seen her face!!!!!!!!!!!!:lmao: "He hung up on me!!!!!!!!!!!!!!!" She thought it was because she told him I would be joining them and they go out alone a lot! Her expression was hysterical!

He had just started a fire in the fireplace so he had to decline but I imagine he will be inviting her disappointed little self out pretty darn soon!

Poor Kady! But I can kind of understand the "once you have started something in the fireplace". I so wish I had one. We just paid an amazing amount of money to make the fireplace in our rental property a "faux gas logs" only fireplace. They will deliver and set it up next week, but we think it's better for a rental to not allow wood burning in the fireplace.

I think I told you all that I bought David a Shotgun and a pistol for our anniversary well today is his Conceal and Carry class and I set it for him when I bought the guns... But I forgot that I would NEED him since I cant do anything. Not a smart thing on my part, so I am again home alone...

I am feeling much better today, but I do not have the movement that the Dr wanted, so I am not sure what he wants but I have got to start moving it with my finger, and it just plain hurts...

well we are having Baja Fresh for dinner...

I'm sorry you were left on your own, but it sounds like you made it through like a trooper. Baja Fresh is tasty, but I can't eat there because my limit on sodium is about 2000mg a day not per meal! :scared1: No wonder it tastes so good!

I am making shredded beef tacos. I got the recipe from Pinterest....of course.

It smells really good in here, so I think it will be a hit!

Oh and Goofy...My best friend and her family SWEAR by the chicken spaghetti. I hate Velveeta, but they LOVE it!

And in other news...we went to a great seafood place and had our first fresh oysters. Bestill my heart. :lovestruc

Did they tell you what kind of oysters they were? I'm guessing gulf oysters. I LOVE :love: oysters, but I'm a snob and I prefer the ones from the northern climates (Nova Scotia, or Vancouver). Aren't they yummy! :woohoo:

Alison - Next time I'm in SoCal and if you haven't done Pho yet, let's go for lunch at a Vietnamese place!
I'll have to remember to take a picture of the Fish and Chips we have next week to share.

I have a feeling that it will be the next time you are in SoCal that I finally get to try Pho! There are tons of them around my house. We have one of the largest Thai, Cambodian and Vietnamese popluations outside of the native countries in Long Beach. Everytime I turn around I see another Pho place and I just know that even though I constantly mention it, Fran doesn't want to go, so she doesn't.

I was so upset about the lack of mobility that today I was determined to do better, it hurt alot today but when DH got home from his class he was really impressed with the new changes... So I am keeping it up, I have until Monday to make great strides.

However, he has had 5 years, plagued with heart problems, hearing problems, and sight problems. Megan and her husband were told that if he lived to 7 years, his odds of heart failure would decrease exponentially.

The worst part of this whole thing, is that Megan and her husband were not with Peyton when he died. They are on a cruise to celebrate their anniversary. Peyton was staying with our friends Doug and Shawna.

My heart is just breaking for all of them.

This is awful, I'm so sorry for your friends and what an awful thing to taint their anniversary. Unfortunately it will probably taint the future anniversaries as they will be bittersweet. I can't even imagine the pain. How awful.

Tonight, I had a dinner planned, but Fran had purchased a Cast Member Only Exclusive Tangled Beer Stein back in October. She had paid the guy, but he wouldn't ship the thing because of it's delicate nature. Well with all the Cellulitis and stuff we never picked it up. He was honest enough to keep texting her even though she delayed so long. We finally went to pick it up tonight because it was in the Valley which is about an hour away in good traffic. I told her if we were driving all the way out there (after working all day on the rental property) that she was taking me out to dinner.

We ended up going to a place in the Entertainment Book, Octopus Japanese restaurant. We ordered tuna sushi for me (she can't eat raw fish because of her arthritis drugs). We also ordered Cucumber sunomno and a cucumber roll for Fran. Each of us ordered entrees as that is what the coupon covered. She got the Beef Teriyaki, Sesame Chicken, Shrimp & Veggie Tempura with a California Roll ($13.95), I got the Combo of Beef Teriyaki, S&V Tempura and Gyoza ($14.95). We had no idea that each of our Bento boxes would come with sunomono, edamame, spring rolls and orange sashimi. Not to mention that the portions were HUGE! My Gyoza were six, and I must have had 1/2 a lb of beef, plus two shrimp tempura, two green beans, onion, zucchini and something orange.

We have an entire meal leftover, not to mention an entire meal from last night. I guess we are set for the next two nights. I am so tired. We put out the For Rent sign today and while we were there working on the place we put out "Open House" signs. We showed the place to about five parties, one slightly promising! Until I have their Deposit in the bank that's when I get excited because I have been bailed upon at every process, even the submission of an application does not mean a tenant. However I will feel upbeat that this property may rent quickly as it is in a desireable neighborhood.

The oysters aren't at all what you'd expect. They're tender, not rubbery at all, and so delicate that you can chew right through them (they were big). More tender than any meat...and also not slimy. I'm a texture freak too sometimes and UncleR said she didn't expect me to like them. We shared a half dozen, but honestly, I could have eaten a dozen all by myself. :lmao:

Well, your chicken spaghetti sounds good too! And I had high hopes for this one. It wasn't horrible or anything, but I think I've turned into a bit of a food snob. If it's not full of flavor and whimsy, I don't like it. :lmao:

The oysters were gulf oysters on the half shell. And they were HUUUUGE. I had to cut a few of them up to get them in my mouth. I've decided I like them with a bit of cocktail sauce and horseradish. OMG...I'm drooling now. :rotfl:

Good morning! Today should be busy. We need to shave and bathe the dogs, clean bathrooms, vacuum/mop and cook. :laughing: We'll see if we get everything done.

I also have a goal to make homemade bagels today. I found a great and easy recipe on Pinterest and when we were out yesterday at Sam's I got some smoked salmon. I purposefully didn't buy bagels so I would be forced to make these to eat my salmon. :rotfl:

Tonight's dinner is salsbury steaks (Pinterest recipe) and mashed potatoes. Y'all have a good Sunday.

Thank goodness I have tomorrow off too cause I have a feeling today is going to wear me out. :lmao:
 
Morning, all! We have a storm brewing! It is windy, cloudy and very cold!!!

After church, we are going to have my birthday meal: a pinterest recipe, the big avocado ranch chicken enchilada! Sounded wonderful to me, and Alan promised he would do all the hard work so I get a day off!!! Katie is making a peanut butter sheet cake for dessert, and so we'll get cake and ice cream, too.

I'm not sure if I'll be going to church, or not. Alan wants to take some food to our friends, who will have tons of family for the next week or so, as funeral arrangements are made. So, I'll probably stay home and make some soup, cinnamon rolls and bread.

Thanks for your sweet thoughts. It helps to share my grief with my "family." You all are the best!!! Please hug your loved ones long and hard today!
 
Glynis- I cannot even begin to imagine the heartbreak your friends are experiencing. :sad1: Thank God they are surrounded by friends.

Dinner last night was good although it really was pathetic. I had cleaned all day and then went to see Welby while she tried to integrate a dwarf bunny and a pair of miniature ducks into her household before she broke the news to Brian :upsidedow Nola :cutie: figured out the best way...........take Dad's hand and introduce him to Bonnie and Clyde. Problem solved. :thumbsup2 And then off to the nursing home to visit Bud's Mom. That was an ordeal so we ended up with frozen chicken, (which i confess to liking) french fries and a creamy cucumber and onion salad. I think Buddy only liked the salad.

Today Marisa and Kady are coming by so I need to make something they like and that is quick. BBL after I figure it out. I really have to start meal planning!

DH has decided he's doing some cooking this year and has been in the kitchen this weekend. I don't know if I'm :woohoo: or :headache: :sick:.

Seems like we have a lot of pots and pans that need to be all used whenever DH is in the kitchen. I walked in there this morning and there are still a lot of wet surfaces. :sad2:

On the plus side, we had tacos for dinner last night. DH made a vegetable filling and I made the beef. DS loved dinner. :thumbsup2
We also have a zucchini carrot cake in the fridge with some sort of white frosting. I'd love to say it was cream cheese but I know DH bought 'something' at the health food shop. I should investigate exactly what it is.....I'm still looking at it suspiciously; but it takes....bland. :rotfl:

So I haven't taken any pictures; nor is there any recipes. I escaped the kitchen for the 3 hours.

Tonight I made PW's Meatball Sliders...Only...We ate them on regular sub rolls.

I am currently on a timeline to lose a certain amount of weight so I only had a few meatballs and a salad.

I don't generally like meatballs. I have an aversion to super tender(ie. squishy) meat, but theses were good! They were tender, but not too much so.

We liked them.

Oh my gawd. I made bagels.

Ingredients:

2 1/4 teaspoons dry active yeast
2 teaspoons granulated sugar
1 1/3 cups warm water
3 1/2 cups bread flour, plus extra for kneading
1 3/4 teaspoons kosher salt
Poppy seeds (optional)
Onion flakes (optional)


In the bowl of a stand mixer, add the flour, sugar, yeast and salt. With the mixer on low, slowly add the water. Continue to mix until the dough comes together in a mass, about 3-5 minutes. Increase speed to medium-high and knead for another 8-10 minutes until soft and smooth. Put the dough in a bowl sprayed lightly with non-stick baking spray. Cover with a towel or lightly oiled plastic wrap and let rise for 1 hour or until doubled in size.

Gently de-gas the dough and let the dough rest for 10 minutes.

Meanwhile, preheat the oven to 425º F and bring a large pot of water to a boil; then reduce to a simmer.

Divide the dough into 8 pieces. Press each piece down to get rid of air bubbles. Form into balls and roll the balls between your palm and the work surface, rotating to form a smooth ball. Coat a finger in flour and press it through each ball to form a ring. Twirl the ring around the index of one hand and the thumb of the other, stretching the dough and widening the hole to about 1/3 of the bagel’s diameter. Place the bagels on a baking sheet lined with parchment paper or a silpat and cover with a towel. Let rest for another 10 minutes.

Gently lower the bagels into the water in batches, 2-3 bagels at a time. Boil uncovered for about 1 minute. Turn them over once and boil for another minute. Using a perforated skimmer, remove the bagels from the pot, letting the water drain; return to the baking sheet. (Optional: sprinkle the top of the bagel with poppy seeds or onion flakes). Bake for 20-25 minutes or until golden. Transfer to a wire rack to cool completely.


They were SOOOO good! Here's lunch:

We just got some awful news! Please, if you can, spare a prayer or 2 for our friends, Doug and Shawna Meredith and their daughter Megan. Megan's 5 year old son, Peyton, died about an hour ago from heart problems. Peyton was born at 24 weeks gestation, and was not supposed to live, at all. However, he has had 5 years, plagued with heart problems, hearing problems, and sight problems. Megan and her husband were told that if he lived to 7 years, his odds of heart failure would decrease exponentially.

The worst part of this whole thing, is that Megan and her husband were not with Peyton when he died. They are on a cruise to celebrate their anniversary. Peyton was staying with our friends Doug and Shawna.

My heart is just breaking for all of them.

Dinner last night was good although it really was pathetic. I had cleaned all day and then went to see Welby while she tried to integrate a dwarf bunny and a pair of miniature ducks into her household before she broke the news to Brian :upsidedow Nola :cutie: figured out the best way...........take Dad's hand and introduce him to Bonnie and Clyde. Problem solved. :thumbsup2 And then off to the nursing home to visit Bud's Mom. That was an ordeal so we ended up with frozen chicken, (which i confess to liking) french fries and a creamy cucumber and onion salad. I think Buddy only liked the salad.

It's been a pretty carefree weekend around here - woohoo! We did our grocery shopping last night at 10pm (yep, we're big Saturday night people!) so I have stuff to cook!

Tonight I made veal parmesan - I used Emeril's recipe and took most of the cajun out of it bc we really wanted a basic parmesan dish. SO delicious!
 
Morning, all! Sorry I've been MIA. It's been a busy weekend and I was under the weather last night (as you might have seen on Facebook) and I clean forgot to stop by!

Today Scott has the day off and we are meeting his dad for lunch at Cracker Barrel, so no cooking for me! We are going to do some shopping while we are out.

Glynis- I was so sorry to hear of your friends. :sad1:

Mr A won a years worth of frozen custard at the raffle yesterday.:woohoo: He gets a quart a month.

I think I am eating a salad tonight so I can get ready for the frozen custard :rolleyes1

I freeze bagels. Luckily, this recipe only makes 8 so those will disappear within a day or two. :lmao:

Since we got the cleaning done yesterday, today should be a more relaxing day.

I will be cooking. Tonight's dinner is crockpot angel chicken, plus a loaf of homemade bread. I'm also going to try for some homemade banana donuts to try my new donut pans out. :teeth:

Morning, all! Winter has finally decided to make an appearance here. It is freezing cold, snowing, and windy. Yuck, yuck, yuck! Anyway, I think we'll just plan on hunkering down here and spend the day with hot chocolate and movies!

First of all, thanks so much for your good thoughts for our friends. We were able to talk to Doug and Shawna yesterday (the grandparents), and it is their feeling that Peyton has been ready to go for quite some time, but couldn't do it with his mom around. He held on until she was away, so he could pass peacefully. They are all still horribly sad, but feel that it is a blessing, as well.

Now, on to more happy things. Dinner last night was INCREDIBLE!!! I'll post the recipes for the enchiladas and the sheet cake. You will definitely want to try both recipes!
