Janice - Do you add any liquid to the crockpot when doing the turkey breast?

I know it was directed towards Janice, but I do turkey breasts in the crock pot a lot and I just add a can of cream of chicken soup. That way it pretty much makes it's own gravy and turns out very moist! You can put the turkey breast in there frozen too, if necessary. I typically do that on days I work so it cooks all day.

Hi Delaney! I never used to use canned soups but since I made the chicken casserole posted earlier upthread I am a convert! I ended up with moist chicken and i imagine the turkey would benefit the same way.
 
Dinner is tacos. Marisa is going to come over and make them. I forgot that we had a wake to go to and it is going to take the afternoon so my turkey is out the window! Now it's okay because Marisa and Kady will come by and I don't need to worry!
I better get in the shower or I will never get us out of here :rotfl2:
 
Nancy - if someone had done something that underhanded, I'm not sure I could ever speak to them again much less attend "parties" at their home. It's not the money, but the principle that her kids are more deserving than yours or your BILs. I agree with Brandi, what comes around goes around.

Also I'm so glad your neice got her dog, if it doesn't work out with this woman and cat I'll go to the pound once we return from Las Vegas.

I'm taking it easy today. Yesterday I did the update to my PTR I wanted to complete, today I'll catch up on bills. I'm making Aimee's Sour Cream Chicken Enchiladas for dinner, but using an Anaheim Chile instead of the serrano because we're wimps! Maybe I'll put a salad together this afternoon so I don't wimp out tonight.

Allison, I did not put the cat adoption together with cat Nazi :rotfl2: My niece Debbie is the best pet owner that I know with the exception of her Mom. She had her Otto, spoiled beagle extraordinaire but after having been broken into several times decided she needed a big dog. She went to the pet adoption sites online and found a pit bull big dog mix but was turned down. Why you ask? Because she did not own her own home. What if she needed to move? So she got paperwork signed by Gail and Mike, who owned the home.that they would never have issues with the dog,. deb was there for as long as she wanted.....problem solved. Nope. SO her vet sent a letter stating that he would personally vouch for Deb and her ability to care for this pet. Still no. Deb said forget it, went to the pound and got Jaxon, the most pitiful abused abandoned pit mix you could imagine. I believe no one but Debbie would have invested the time and energy into rehabilitating this dog so it was good for him and her as well. By now the first pet people have realized the error of their ways and repeatedly contacted Debbie to take their dog but she had already committed to Jax.

I know these folks need to be careful but with so many animals who need homes I would think that unless they were going into a bad place they would place them with families who want them. :confused3

I'm a big supporter of local animal rescues, but some have gone completely overboard which drives (some) people back to irresponsible breeders. I understand some questioning, as these are often animals who have been through the ringer already, but some of it is ridiculous.

I have talked to him about it and will give him a bunch of different things to read and do... To keep his mind busy.

My last surgery was really long and unexpectedly, a friend came to sit with my ILs, dad, and DH. She was a total lifesaver! They were, evidently, all sorta on edge about it and she entertained them the entire time. She's my friend that often teeters on annoying but it was perfect for that situation. They were so busy listening to her that no one had a chance to get too worked up :laughing: Anyway you have a friend that would be willing to come entertain him?

Most surgery centers have wifi; you might want to check and see if yours does - that would help keep him entertained if you have a laptop or tablet.

Good Sunday, all! I'm home from Church with Timmy today. He had a hard night last night with a bit of throwing up. No fever, but it made for a long night. I just felt so badly for him. He'd snuggle up to me, telling me his tummy hurt, and to make it go away. I felt so helpless! Needless to say it was a sleepless night for the both of us. He's fine this morning, but I kept him home from church, just in case. I'm hoping we can both take a nap!

Poor Timmy! I hope you both get a nap!

Ina Garten has a great recipe for roasted butternut squash with pancetta and sage. Let me know if you want me to type it in.

I am having trouble figuring out menus for this week also! Here is what I have so far:

Monday: coconut shrimp stew with basil and lemongrass; thai sticky rice; blasted baby bok choy

Tuesday: Chicken milanese with arugula salad on top

Wednesday: some kind of soup

Thursday: ??? something with tomato sauce? Maybe pizza, or this Mario Batali mock tripe recipe I was looking at earlier (it's eggs not tripe).

Friday: ????

Glynis, breakfast for dinner is one of my favorite meals! We had it twice last week! That lasagna soup sounds really good.

PIO, shutterfly is fun! I ended up making two books, one for John and also one for Laura (I can write that here since she hasn't been able to get to WFD lately). Once they arrive I will let you know about the quality of the paper/inks, etc.

I am listening to Disneys Season of Song (and the kids war type video games and our lovebird tweeting like crazy) as I make pie dough for tonights dinner of Quiche. I will make 2,one cheese and ham and one broccoli (sp?). I wish I had some stewed tomatoes to serve with it.

I am also planning to make pumpkin muffins or pumpkin something for DH to bring to work tomorrow. I would like to attempt a pumpkin roll as I have never done anything like that but I really don't want to get in over my head. Hope everyone is well!

Jen - Last week before Christmas vacay? Lucky you. I have 2 more weeks to go!!! I'm taking 2 weeks off and will go back to work on the 8 Jan.

Janice - I miss the small baby period. I don't miss the nappy change but I miss the small baby smells.

Alison - Hope the enchiladas work out. You know, I've been reading all the recipes that Brandi, Jen, and the rest of you share about SW/Tex Mex style cooking. It's not something that I normally cook....its all about geography and heritage. I lean more towards the Asian style and will occassionally do the traditional mexican food etc. I thought of trying the recipes and then realised that getting some of the ingredients will be problematic. I'm gonna need to work out substitutes....something for me to research this christmas!

I woke up with a cold yesterday morning and today I'm barely making it thru! I had to help today with the church pageant, and I have never had my patience wear down as this as this was. These kids were out of control! I'm ready for this pageant to be done! They will perform it next week.

My tooth is a still somewhat of a bother. But I feel much better even on the antibiotics. Tomorrow is the day!

WFD: Leftovers/whatever you can find - I will be having applesauce and mac n cheese. Something easy to get down.
 
Becky - I've made myself a number of photo books on KodakGallery and they are excellent quality! In fact I still need to finish up the one for 2010 and get started on my 2011 book. I don't make photo albums any more (the kind with the sticky pages), I love these books from Kodak.

PIO - I think it's funny how you lump me in with Jen and the Tex Mex stuff. The only thing I make that is remotely Tex Mex is the Enchiladas Rancheras. I've been thinking though that Jen cooks A LOT with chilies. I know what you mean about the ingredients. When we moved to CA I learned about tacos, I wanted to share this newly found delicacy with all my friends and relatives back in Boston. This was the mid 70's granted and we couldn't find a Mexican ingredient ANYWHERE! :rotfl2: Now tacos are as American as a burger, but back then it was different.

It's driving me batty!

I woke up with a cold yesterday morning and today I'm barely making it thru! I had to help today with the church pageant, and I have never had my patience wear down as this as this was. These kids were out of control! I'm ready for this pageant to be done! They will perform it next week.

My cilantro and tomato pork loin is in the oven and this house smells sooooooooo good! I hope it turns out okay!

It's cloudy and dark outside, so it's a perfect day for yummy food and cozying down. We've been watching movies, cooking and cleaning some today.

Back to work tomorrow, but I have vacation to look forward to so I almost don't mind!

Well, I'm using the recipe my cousin gave me. She and her family lived in London for about 3 years, and got us all hooked on the stuff. I made toffee by boiling a can of sweetened condensed milk for about 2 1/2 hours. While it cooled down, I made a crust out of graham crackers and butter. It's much better made with English biscuits called Hob Nobs, but I don't have any on hand. I can get them at a local store, but they were out when I went yesterday.

After the crust cooled, I sliced 3 bananas into it, poured the toffee over them and covered the whole thing with sweetened whipped cream. Just before serving I'll shave some chocolate over the top.

Dinner was yummy!!!

Scalloped Corn

2 15 oz. cans corn, drained
1 15 oz. can creamed corn
1 Tbsp dried minced onion
2 eggs
1/4 cup butter, melted
1 cup light sour cream
1 box Jiffy cornbread mix
salt and pepper, to taste
1/8 tsp. cayenne pepper

Pre-heat oven to 350 degrees. In a large mixing bowl, combine all ingredients and stir together. Pour into an 8×8 or 9×9 dish and bake for 45-50 minutes or until the center is set and a knife instered in the middle comes out nearly clean.

Look PIO! Something we can use our leftover Creamed Canned Corn from the Old Fogies Clubhouse!

I made a coffee roll years ago and if I could make that you can make this. i found one on Allrecipes that looked good. The reviews suggest lining the pan with buttered foil and using that instead of powdered sugar towels to roll the cake. I think I used sugared tea towels and the cake was fine.

Pumpkin Roll I

"This is a great dessert, especially nice for holidays, but it can be served anytime of the year. The resulting pumpkin roll slices will impress your guests. The pumpkin roll is not as hard to make as it sounds. Be sure and use plain canned pumpkin, and not pumpkin pie mix."
INGREDIENTS:
3 eggs
1 cup white sugar
2/3 cup solid pack pumpkin puree
1 teaspoon lemon juice
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 cup chopped pecans
confectioners' sugar for dusting

1 (8 ounce) package cream cheese
4 tablespoons butter
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
confectioners' sugar for dusting
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan.
2. In a large bowl, beat eggs and sugar with an electric mixer on high speed for five minutes. Gradually mix in pumpkin and lemon juice. Combine the flour, baking powder, salt, cinnamon, and ginger; stir into the pumpkin mixture. Spread batter evenly into the prepared pan. Sprinkle pecans over the top of the batter.
3. Bake for 12 to 15 minutes, or until the center springs back when touched. Loosen edges with a knife. Turn out on two dishtowels that have been dusted with confectioners' sugar. Roll up cake using towels, and let cool for about 20 minutes.
4. In a medium bowl, combine cream cheese, butter, 1 cup confectioners' sugar, and vanilla. Beat until smooth. Unroll pumpkin cake when cool, spread with filling, and roll up. Place pumpkin roll on a long sheet of waxed paper, and dust with confectioners' sugar. Wrap cake in waxed paper, and twist ends of waxed paper like a candy wrapper. Refrigerate overnight. Serve chilled; before slicing, dust with additional confectioners' sugar.

Marisa made tacos and they were delicious. I made taco seasoning because I had no packages. I think I will never buy it again.

"A mixture of spices that approximates what you might buy in a package. Depending on how spicy you and your family like your dishes, use as little or as much as you want."
INGREDIENTS:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
DIRECTIONS:
1. In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container

I used cayenne pepper instead of pepper flames. I used less black pepper and omitted the onion powder as I had none. I just increased the garlic powder a little. Marisa added some chicken base to the taco meat and that boosted the flavor. If you use ground beef I would use beef base. There is no corn starch in teh mix and i don't think it needed any, it was fine.
