The What's For Dinner Thread - October'11 (recipe index in OP)

For our wedding both sets of parents put together a recipe book. This one in particular I think originated *I think* from Junior League.
Creamy Cheese Enchiladas
- Six flour tortillas(I used eight tonight because we love the leftovers)
- 3 cups of Shredded Monteray Jack Cheese (again, you can use more or less depending on how much cheese you like, and because i used eight tortillas i used closer to 4 cups)
- 6 Thsp of green onion chopped (feel free to sub anything you like, I've done black beans, chicken, spinach, ect -- whatever you have on hand is fine)

Sauce
- 1/4 C butter
- 1/4 C flour
- 2 Cups Chicken Broth (this gives it depth)
- 1 C Sour Cream
- 1 4oz can chopped green chiles (if you don't like any heat, you may omit)

Directions
- For each tortilla, add 1/2 C cheese and 1 Thsp green onion as filling. Roll the tortilla and place into 8in square pan (again if making more, using a 9X13 pan)

- In a medium sauce pan over medium heat, melt butter. Add flour and stir constantly. Whisk in chicken broth to make a thick sauce.

- Remove from heat and add sour cream and green chiles. Stir until completely combined.

- Pour sauce over tortillas and bake at 350 for 20min.

- When done, the sauce will bubble along the edges, and everything is heat through.

Tonight is dinner at church so I am off today. I hope everyone has a great day. It's still raining and junk here and I'm going to get drenched when I go out today. Hee hee, my mother always gives me a gift just from her for Christmas, usually it's a new pair of jeans. While shopping this year, I wanted to look at coats. I found a rain jacket I loved and she asked if I'd like that to be my jeans this year, lol. So I guess I get to try it out today :thumbsup2

Well...another busy day at work. Most days, I come home mentally tired. But after the bench, I'm as happy as a pig in ....that black stuff...:laughing:.

It's Wednesday here...dinner was at mum's.

Tonight's dinner is another pinterest recipe...chicken chalupa casserole. I had to prep it last night, so all I have to do is pop it in the oven when I get home. :cool1: Thank goodness for small favors!

Wow! Miss a day, and you fall really far behind!!! Just got done catching up.

Emily - Welcome!!! I'm Glynis a SAHM to 5 kids ages 14-3. They keep me on my toes. DH works full time, and is also a full time graduate student (after 20 years away from school), so lately, my cooking has been more to the taste of my children, and not for myself or my hubby.

Jen - Sorry about the sickies! I hate ear infections!!! Thanks for the corn chowder recipe. It looks amazing!

Aimee - I can't wait to try the chicken enchilada soup. I'll have to do it on a night when Alan is home, though, as the kids won't eat spicy. Boo!

Ellen - Glad that things are going well with Liam! I'm glad that everyone else is doing ok. Take care of yourself!!!

Brandi - I like the experience idea! A culinary trip to Vegas would be so much fun!!!

Today I think I'm going to stick pretty close to home! It's been so cold here, that I hate to take Timmy out in it! I will run to the store early this morning to pick up what I need to make Jen's Jambalaya for dinner tonight. I think my kids will eat it, and it sounds yummy!!!

PIO - You asked about Christmas. This year is kind of funny for us. On Christmas Eve we will take the kids to IHOP in the morning for our traditional breakfast. The kids love it, and it means I don't have to cook it. Dinner that night will be soup in bread bowls. Christmas day Alan has to work, so I'm letting the kids choose their favorite "appetizers" from the frozen foods section of the store. Stuff they never get to have, and I'll cook it all up Christmas afternoon, and they can piece all day long! Should be fun and pretty relaxing for me. On the 26th, we get up early, and drive to my dad's house for a second Christmas. It's there that we'll have Christmas dinner. Don't know what I'm in charge of yet, but it will be yummy, I'm sure!
 

It is a nasty day here today, I need to borrow Lindsay's raincoat, and I may need a boat! :boat:

Got lots of snowflakes done last night, need to run out and get more glitter glue, the one I have at home sprung a leak! The bottle cracked from squeezing it so much.

Dinner tonight will be I don't know what. I have some stuff I got at the market that I need to either cook or put in the freezer. I may just make a quick sausage soup.
 
Hi Ladies! I see that we have some new folks joining us and that is wonderful! What better time of year to have recipes shared than the Holiday Season!

Jen- the dump cake is so easy. Use a 9x13 in pan and dump in:

1 can crushed pineapple, next...........
1 can blueberry pie filling, next top with........
1 package dry yellow or white cake mix (lemon would be good here too!)
drizzle 1 stick melted butter on top

bake at 350 for about 45 minutes

you can use just about any combination. Apple and spice, cherry and anything. Buddy likes the blueberry the best so this is the one I make often.

Ellen- I am so happy that all is well on your baby front! God answered a lot of prayers thank goodness!

PIO- you amaze me! All ready for Christmas! I am so not there yet! I love the image your stamping gave! I am not even started on cards yet. I remember the year I had to take them with me to Disney! I am afraid to think how they went out.........I parked on the outdoor patio at the POFQ bar and after a few liquid libations ;) In my defense, I was so loving the Christmas Jazz that I lost track of what I was :woohoo:

Lindsay- sounds like so many kids birthday parties I have held and attended. Tired kids, excitement overload and cake!!!!!!!!!!!!!!!!! Looks like you had a great time with those precious babies :goodvibes

Robin- I don't envy the commotion in your home but it is going to be so worth it in the end!

Brandi- I am with the rest on a special event. I know you said that AKL did not need to be part of this but I want to share Buddy's birthday. He hates being the center of attention but we were in Disney for his day so we decided to go all out! Now you need to remember that Buddy is an old fashioned man and so everyone was his treat whenever we had cocktails or dinner so it is not easy to make his birthday special. Well we got him! Those CM's are craftyt people and even if we did not ask for something special they would hear us talking about his aging person and you know wherer that all went. He even had a diver at Coral Reef! Made his trip! The best part for us was when the Flight Attendant on SOuthwest Air asked if anyoen was celebrating and KAdy told her that her Pa was. He had to wear a crown :lmao: just liek teh attendant!

Marilyn- :sad1: sometimes I think it was easier when I did not "know" anyone here. It is always sad to lose a friend here on the DIS.

Brandi - somehow I missed that you were going to have surgery. I am so sorry that I did, but pray all goes well.


Janice- I love how you said we have a table!

Normally, I make a large Christmas dinner... it's one thing Alan requests. However, no one but Alan really wants it. The kids snack on cookies, chips and dips, etc., all day long, and are never really hungry by dinner time. So, I'm putting my foot down this year. Now, if Alan wants to cook Christmas dinner (and clean up, too), that's just fine, but I'm not going all out! I figure, I have to think up the presents, buy the presents, wrap the presents, stuff the stockings, make dinner on Christmas Eve, and get everyone ready for Church on Christmas morning, that I can afford to be a bit hard nosed about this! I've got too much on my plate this year!

How'd the jambalaya turn out?

Dinner was SOOOOOO flippin' good.

Chicken Chalupas Casserole

12 flour tortillas
1 qt cream or half and half
1 3 lb rotisserie chicken, pulled & chopped (I used 4 small-medium chicken breasts)
4 cups cheese, shredded (I used a Mexican blend)
1 can Mexican Rotel diced tomatoes, drained
1/2 tsp onion powder
1/2 tsp garlic powder
2 tsp Worcestershire sauce
1/2 tsp hot sauce
1/8 tsp pepper

Put chicken pieces and half of grated cheese in tortilla and roll up. Lightly spray a 9x13 pan. Lay rolled tortillas in pan. Top with remaining cheese and Rotel tomatoes.

Combine 1 qt cream, onion powder, garlic powder, worcestershire sauce, ½ tsp hot sauce and pepper. Pour mixture over casserole and let stand overnight in refrigerator.

Bake covered at 375 for 30 minutes.

***Not only was this nice because I prepped it last night and all I had to do today was pop it in the oven, but overall, it was just easy! But, the payoff was great. SOOOO much flavor. UncleR loved it! Yummy! Try this one. Trust Jen. :teeth:

ETA: Cooking time was longer than the recipe called for...about 50 minutes.

I hope to be eating something tomorrow night but it may be soup!

What a nice idea! my DDIL's Mom started a recipe box for her when she hosted her shower and sent the cards to me so that I could request favorites from our family and friends who attended the shower that I hosted. I think she got a lot of wonderful recipes!

I have to ask the kids if we enjoyed the ap thing. I generally farm out appetizers when we have Holiday meals here, I used to try to make everything but it is too much for me now.

I think I am caught up. I have been trying to get my Christmas decorating done and I think that I am finally there. Yesterday I cleaned and decorated Kady's room and put up the tree. All that is left is to take out my Christmas dishes. I will do that this morning and call it a day.

Welby has another craft fair today so I am caring for the girls this afternoon until after dinner. Nola is excited to sleep in the Christmas bedroom :yay: I have to think about Rylee. I still use the portacrib but she is getting way too big for it. She is in a toddler bed at home so I hope that at least for today she will sleep in the crib. If not :dance3:

Dinner was the chicken casserole posted earlier in the thread. It was good! I made my dinner, added noodles alfredo and gravy along with a half gallon of chocolate chip ice cream and took it to Welby's. She made a pot roast, corn and roasted veggies so we had a lot of food. Tonight will be left overs

Brandy Hopefully your flight home went well. I never threw in my 2 cents on the b day thing. For my dad's 50th we had everyone bring a favorite picture that included him or write a favorite memory. While my dad loved a party he was not comfortable being the "star" but he really liked all the pictures and the memories that came that day.

Jen I am glad you are feeling better. I am not sure what I like least back,ear or tooth pain.

I am down to just 1 person that is leaving me stumped for a gift for christmas. It is Mr A's step brother he is 9.
 
I never did introduce myself. I am Nancy, wife to Buddy the sandwich king. I have three adult children who are all married. Donny and Anna just married in September. Marisa, (kadysmom) my DD is married to Jeff and they have my only grandchild, Kady. Dan and Erica live close by. I also have two little girls who live down the street who are like my grandchildren, Nola and Rylee. Their Mom is Welby who helps me make wine. That's us :thumbsup2

I have been thinking about Christmas and am up in the air about dinner. I don't know if I shared that we are having a conflict about Christmas Eve. Well, we are not.............my SIS Il is. Every year we would go to Meme's for Christmas eve but this year will be going to my sister's. I used to always go there when she divorced because the kids were with her on CE and their Dad on Christmas Day. It got to be too much so after the kids were grown and she married Mike I just went to Meme's.

Anyway, I had promised Buddy that after meme was gone we would stay home, these are my first husbands family and he has gone there every year but really does not like to. They all would come to my home on Christmas Day so we were together both days. Well, Gail lost Mike in January and she wants to have the family together on CE and so Buddy and I are going. No question. My SIS IL is furious! She and her DH will still be here on Christmas Day and they are welcomed at Gails but they are not happy. No compassion for gail what so ever :headache: and I am not happy. Not only that but for the first time ever Jeff's father and all of his siblings will be together on a Holiday, Christmas Eve. Marisa has put her foot down and stated that they will be with Jeff's family but my SIS IL cannot even be happy for him. She thinks we all should go to her house to continue the Christmas Eve tradition that everyone all did for Meme.

She has decided to host a pre Christmas dinner DEC 17th and we will be there, (Buddy has not agreed yet, he is mad she is giving us all a hard time) but this Holiday promises to be strained more than it should be. I plan on drinking.
 
Today is chicken noodle soup again. I have to sing at a church Christmas party today at a hotel and I've been invited to eat so I will probably grab a bite there, too.

Frozen peas, ice packs, frozen peas, ice packs, frozen peas, ice packs!!!!!!!!!!!! Do I need to say more? ;) Freeze the heck out of your face and your recovery/pain will be a lot easier.

I don't blame Buddy for being mad.

I'm trying to think past my initial reaction, which I can only imagine was yours and Buddy's too, and thinking that I just wouldn't go on the 17th.

Wine would make it tolerable for me too, though. ;)

The jambalaya was really good! Katie, Mary, Alan and I all loved it! I made a mistake, though, and put in petite diced tomatoes, instead of a larger dice, so it was harder for Jacob and Leslie to pick the tomatoes out. They loved the meat, but wished they could have eaten the rice without the tomatoes. Yes... I have odd children!

The chalupa casserole looks wonderful! Yet another one for me to try!
 
Aimee - Sorry about the wisdom teeth! I really ought to have mine out, but I don't want to! They all came in straight, no crooked roots, or anything, but they are rubbing against my other teeth,and it's hard to get floss in there. Good luck with it all, and I'll send prayers your way!

Nancy - Your SIL is being a pill! My MIL gets that way sometimes, and I hate it! Sometimes you just have to do what is best/right for your own immediate family, and let everyone else go. Good luck with it all! I'll be praying for you and Buddy!

Dinner is up in the air tonight. My dad may be coming in to town to speak at a conference, and if he does, I'll be heading out to spend some time with him during the day, and then to hear him speak this evening. If that's the case, Katie will make dinner. If he ends up not coming, I'll have to rethink things. Hmmm. I'd better come up with a plan B, huh?

I got a lot of Christmas shopping done yesterday, via the Internet! All the Santa presents are now taken care of, and I'd say I'm about halfway done with all the rest. What I have purchased is now wrapped and under the tree. My kids were so excited to come home from school and see presents under the tree!
