:laughing: The funny part was that I only had 1 beer and was faaaaar from drunk but the two guys in the bar (hitting on us...) were three sheets to the wind and amusing as hell to converse with. Very entertaining.

I'm feeling a bit rough today (rotten winter colds!) so dinner will be simple - chicken breasts which i'll stuff with garlic and herb soft cheese and wrap in Parma ham with roasted new potatoes and brocolli.

WE HAVE A BABY!!! Liam Parker Mins was born yesterday morning, December 4 at 4:55 a.m. and weighed in at 5 lbs 12 oz.

Elizabeth's BP was critical all day Friday & Saturday. They couldn't get it to come down so for the health of her, they decided to induce. He was born 5 weeks early and because of him being early, he is in the NICU. He is just precious tho. Elizabeth was able to hold him for a quick bit before they rushed him off, but none of us have been able to touch except for his little foot. He was on a ventalator, but as of this morning he is off. The peditriction came in and told them that yesterday they were weaning him off, so this morning they took it out and and he just wailed. Good news!!! Let him cry to build those lungs up. He will probably stay in the NICU till the weekend, but maybe if things keep looking up it might be sooner. Elizabeth will get out of the hospital maybe tomorrow, but will stay in town to be close. Ethan is with us and thrilled to be a big brother. He is a bit overwhelmed but doing ok.

I headed out to Kearney Saturday afternoon in a blizzard - by golly I HAD to be there - the roads were awful!! But I got there around 5. Elizabeth needed to rest so we took off for dinner. Jay & Ethan took my car - I was DONE driving in this, and Marty, Stephanie & I took off in his truck. We got 1 block from the hospital and we were going through the intersection and a young girl ran the red light and T Boned us. It was terrifying!!!!!! Long story short all are ok - the young lady is in BIG trouble tho, as the witnesses said she was texting. Stephanie and I ended up in the ER. They thought I might have broken my hip and pelvis (but no I am ok, just REALLY sore and bruised) and they put Stephanie on the baby monitor. She is fine and baby is perfect. Praise the Lord!!! Both of my girls were on the Maternity floor in rooms next to each other. At least is was easy to keep an eye on both of them. We finally left the hospital around 11 that night as Elizabeth was comfortable and progressing very slow. I got the call around 5 am.

Ellen, you have had one crazy weekend!!! I'm so thrilled about your new addition who seems to be doing great! And the accident? That's the thing that only happens in the movies - truly! PLEASE be sure and take it easy this week. I've had my car totaled twice and both times, the third day was the worst. Make sure you have a good heating pad and pain meds for a few days. Don't push it!

Last night's soup was delicious so I'll get the recipe up ASAP. Tonight we're having another cold weather dish - tequila lime turkey chili. It's originally a crockpot recipe but I'm going to just doing it on the stove.

So constuction is going well here. Right now they are just working on our sunporch and we move out after Christmas and things really get going. We were supposed to be back IN our house for Christmas, but that didn't happen. They are doing a fantastic job and so worth the wait, and my dog likes them so I figure that's a good sign!

Last night we had copycat olive garden soup and Pioneer woman rosemary rolls, we hadn't had those in so long, yum! Tonight we'll have chicken of some sort. Have a great day all!

I'm home...and I've brought a double ear infection and possible strep throat with me. I wasn't feeling well this morning and my ear hurt so bad that I left work for the docs. I'm home now, with my wife and warm apple cider. :headache:

YUCK! Ear infections hurt so bad... I hope you get some meds in you, soon!


Oh and rosemary rolls? Not really homemade or anything but absolutely delicious.

Rosemary Rolls
Frozen unbaked dinner rolls
Melted butter
Fresh rosemary
Coarse sea salt

Spray iron skillet with cooking spray (or coat with EVOO). Place frozen rolls in the pan leaving plenty of room to rise. Cover with a dishtowel and set aside to rise a few hours.

After rising, gently brush each with butter. Sprinkle tops with rosemary and butter again. Then sprinkle sea salt over the top.

Bake according to package, usually 350 for 15-20 minutes or until browned.
 
Here's the Crockpot Chicken Enchilada Soup - SO GOOD.

Crockpot Chicken Enchilada Soup
3 tablespoons butter
3 tablespoons flour
½ cup chicken broth
2 cups milk
1 can (15 ounce) black beans, rinsed and drained
1 can (14.5 ounce) Rotel diced tomatoes and jalapenos
1 package (10 ounce) frozen corn
½ cup onion, chopped
½ cup bell pepper, diced
1 can (10 ounce) Enchilada sauce
2 whole chicken breasts
1 cup shredded Monterrey Jack cheese (for topping)

Melt butter in a saucepan over medium-low heat. Stir in flour; keep stirring until smooth and bubbly. Remove from heat and add the chicken broth and ½ cup milk, a little at a time, stirring to keep smooth. Return to heat. Bring sauce to a gentle boil; cook, stirring constantly, until it thickens. In a large bowl, whisk together the enchilada sauce and chicken broth mixture . Gradually whisk in remaining milk until smooth. Set aside.

In a crockpot, combine drained beans, tomatoes, corn, onion, and bell pepper. Place the chicken breasts on top of the mixture. Pour sauce mixture over ingredients in cooker. Cover; cook on low heat for 6 to 8 hours or on high for 3 to 4 hours. When you are ready to serve, remove chicken and cut or shred into bite-sized pieces. Add chicken back into the soup, mix together.

Top with cheese and serve.

Do you think this would be good with another type of bean? We're not the biggest fan of black beans in this house. What about pinto or kidney beans? :confused:

ok just to prove that I plan too far in advance, I need some ideas for David's B'day...

Granted his b'day is March, but it is the big 5-0 for him.

I wanted to get started on this since, I am having surgery in Jan, then we have a cruise in Feb and then his b'day is March 9th....

So I really don't have that much time...

I have some ideas for gifts but I was thinking of doing something silly, like celebrate it for 5 days? by giving 5 gifts a day or something like that....

Those of you who have meet David, know that he is crazy and will be cool with anything I do...
 
I am so far behind. Busy day today and I didn't get to get on here during lunch like I usually do.

Dinner tonight was ham loaf, like meatloaf but it has ham added to the mix, boiled potates and roasted brussel sprouts.

I have to make tons of snowflakes by Thursday. Was supposed to get them done this weekend but didn't feel like it so I will be scrambling the next two nights. :rolleyes1

As I said on the AKL thread.... :rolleyes1 I think experiences are better at our time of life than gifts... I suggested a biking trip (since I know you just got a hot new bike, and I don't mean the bicycle built for two type) where you stay at a romantic location, but maybe the ladies here might have some other ideas to throw into the mix since they are more in the cooking vein, could you do a culinary thing? I know that Napa has some awesome cooking schools, but obviously that isn't nearby, do you have any MD, WA or NYC things where you could do a romantic cooking class? :scratchin I know I would love a Napa cooking thing, hmmmmm maybe I should have a 49 years present and then the big 50 present! You're giving ME ideas! :teacher:

Thanks for sharing that chicken enchilada soup recipe. We don't have Rotel diced tomato and jalepeno in the supermarkets here. But I think it would work if I used a tin of diced tomato and added jalepenos? I might think about making a half serve. No one else in the house will have it with me. :sad2:

Brandi - Firstly, I wish you all the best for your surgery. I hope things go well and you have a speedy recovery. As to what to get David for his big 5-0....I'm with Alison. If you have enough stuff, then go with an experience. For me...what could be more 5-0 than Hawaii and Aulani? Otherwise, I would pick an experience that he's never done before e.g., hot air ballooning...a day at the day spa...zipline....or is there a television program he really likes? Is there anywhere that offers something along those lines?


Alison - When does the cat nazi visit? Will you know whether you have that cat or not?

Well....my cards...ALL of them....are in the mail. I just need to wrap the presents, plug the gaps and then think about food.

What are you all serving for Christmas?


We usually go to my parents on Christmas Eve; so I'll need to think about what curry to make for that meal.

But on Christmas Day, my parents come round to me. We will have 4 adults and 1 child on Christmas Day....possibly my brother and his GF might come for lunch as well.
For lunch, I'm contemplating the below...it might seem like too much food...and it is. But I like to know that I don't really have to cook for a couple of days after Christmas!

For proteins:
I've ordered a turkey breast roll (I think I've mentioned that before) and will cook the stuffing recipe in the muffin trays.
I'll also do some stuffed salmon cutlets for the pesky-vegetarian in my household.
I think I'll get some chicken tenderloins and crumb them as well. This one is optional. I really think I have enough proteins with the fish and the turkey.

Sides:
(the stuffing)
I'll grill some red bell peppers and marinate them in olive oil and balsamic vinegar.
If it is hot, I'll do a potato salad and a green salad. I'll also toss/stir fry some snow peas and cherry tomatoes in sweet chilli sauce.
If it is cold, I'll do a potato dauphinoise (I think we worked out this was scalloped potato in US speak), the snow peas and maybe a third vegetable side...which I've yet to work out.

Dessert:
I'm thinking of making a trifle. I did an English trifle last year...I'm probably gonna make Tira Misu this year.
Plum Pudding, which I buy rather than make. A local shop makes the most divine plum puddings and I don't even try to compete. I did the price comparison one year where I made my own. By the time I added up all the ingredients, there was probably about $10 in it. Admittedly, I end up with a smaller plum pudding than if I make my own...but my hips prefer it that way.
Fruit platter....almost mandatory to have in summer.


With Coffee:
Bourbon Fruit Cake. Already made.
I might get a selection of biscuits as well.
We have plenty of chocolate on the tree. I usually send people on a chocolate hunt and they can find and pick their own!

In the hopes I was going to get to make this, I stopped by the liquor store yesterday to pick up framboise and was told that TN law says they can't carry it. Can anyone explain this one to me?

ok just to prove that I plan too far in advance, I need some ideas for David's B'day...

Granted his b'day is March, but it is the big 5-0 for him.

I wanted to get started on this since, I am having surgery in Jan, then we have a cruise in Feb and then his b'day is March 9th....

So I really don't have that much time...

I have some ideas for gifts but I was thinking of doing something silly, like celebrate it for 5 days? by giving 5 gifts a day or something like that....

Those of you who have meet David, know that he is crazy and will be cool with anything I do...

I agree with Alison. I'd do an experience rather than a gift. Although since I'm not familiar with your hubby, I don't have any recommendations.

I am so far behind. Busy day today and I didn't get to get on here during lunch like I usually do.

Dinner tonight was ham loaf, like meatloaf but it has ham added to the mix, boiled potates and roasted brussel sprouts.

I have to make tons of snowflakes by Thursday. Was supposed to get them done this weekend but didn't feel like it so I will be scrambling the next two nights. :rolleyes1

What are you all serving for Christmas?


We usually go to my parents on Christmas Eve; so I'll need to think about what curry to make for that meal.

But on Christmas Day, my parents come round to me. We will have 4 adults and 1 child on Christmas Day....possibly my brother and his GF might come for lunch as well.
For lunch, I'm contemplating the below...it might seem like too much food...and it is. But I like to know that I don't really have to cook for a couple of days after Christmas!

For proteins:
I've ordered a turkey breast roll (I think I've mentioned that before) and will cook the stuffing recipe in the muffin trays.
I'll also do some stuffed salmon cutlets for the pesky-vegetarian in my household.
I think I'll get some chicken tenderloins and crumb them as well. This one is optional. I really think I have enough proteins with the fish and the turkey.

Sides:
(the stuffing)
I'll grill some red bell peppers and marinate them in olive oil and balsamic vinegar.
If it is hot, I'll do a potato salad and a green salad. I'll also toss/stir fry some snow peas and cherry tomatoes in sweet chilli sauce.
If it is cold, I'll do a potato dauphinoise (I think we worked out this was scalloped potato in US speak), the snow peas and maybe a third vegetable side...which I've yet to work out.

Dessert:
I'm thinking of making a trifle. I did an English trifle last year...I'm probably gonna make Tira Misu this year.
Plum Pudding, which I buy rather than make. A local shop makes the most divine plum puddings and I don't even try to compete. I did the price comparison one year where I made my own. By the time I added up all the ingredients, there was probably about $10 in it. Admittedly, I end up with a smaller plum pudding than if I make my own...but my hips prefer it that way.
Fruit platter....almost mandatory to have in summer.


With Coffee:
Bourbon Fruit Cake. Already made.
I might get a selection of biscuits as well.
We have plenty of chocolate on the tree. I usually send people on a chocolate hunt and they can find and pick their own!

We have decided to go nontraditional here. And we are having all snacks and appetizers. We're building our menu now, so nothing is finalized. But, I definitely don't want another redo of Thanksgiving. We'll see!

In the hopes I was going to get to make this, I stopped by the liquor store yesterday to pick up framboise and was told that TN law says they can't carry it. Can anyone explain this one to me?

Ok after all that, I didn't post WFD at our house, lol. It is raining canines and felines here so I am making chicken noodle soup. :thumbsup2

We can't get Framboise here in Texas either. I'm not sure of the exact reason, some sort of liquor/ATF law. :scared1: But it's a shame, because it's yummy. I love the raspberry framboise. :lovestruc

I'm up, but I don't want to be. UncleR got up to take care of household business so that I could sleep, but my ear and face were hurting too bad to continue laying there. :sad2: And I am NOT going to work today, Kathy Louise. :lmao:

It's still absolutely freezing here. So, today's dinner will be corn chowder...another new pinterest recipe. Hopefully it's good!
