Alison - Hope that Fran is better and that the leg is almost back to normal. How was the parent's visit?

Fine, they're still here. We're watching Cars 2 and dinner should be ready in about an hour.

Here it is:

Cajun Pork Tenderloin with Garlic Butter Sauce (I usually double the sauce)

Dry rub:
1 tsp. salt
1/2 tsp. cayenne pepper
4 tsp. paprika
1 tsp. black pepper
1 tsp. garlic powder

2 pork tenderloins
2 Tbsp. butter
1/2 tsp. garlic powder


In a small bowl combine dry rub. Rub this mixture into pork. Grill over med-high heat or roast in a 425 degree oven until internal temp is 160 degrees. Remove and let rest at least 10 minutes.

Melt butter in a small saucepan and add garlic powder. Slice pork on the bias and serve with garlic butter brushed on top.

Unfortunately it’s been downhill since yesterday morning. I’ve been dealing with a nasty tummy virus and haven’t done anything.:sick:

I'm so sorry, Kathy! If it's the same virus that went through my girls, it was nasty! Feel better soon!
 

My turn to talk Turkey! :laughing: I went to the Vic Market yesterday and ordered a turkey breast roll from the chicken shop for Christmas. They usually sell turkeys and also make the breast rolls....deboned, rolled and netted up. There are only 4 adults partaking in Christmas lunch at my place so there really isn't any point in getting a whole turkey.

So, I normally order the turkey breast roll stuffed. The chicken shop makes a decent stuffing; with breadcrumbs, mince, pinenuts, herbs. I decided to go with just a plain breast this year; but now I'm on the hunt for a decent stuffing recipe that I can prepare and cook in a baking dish. Do any of you have a recipe?

We do have a great time together! I am a confirmed Daddy's girl, and proud of it!!! He left at noon today, and I've been a bit blue. Oh well. Christmas is coming soon, and I'll see him again then!

I have a really good stuffing recipe.

I saute 1 or 2 chopped onions, and 3 chopped McIntosh apples in 2 tablespoons olive oil, and 2 tablespoons butter. When they've cooked for a couple of minutes, add a bay leaf, 1 tablespoon poultry seasoning (or more if you feel it needs it), and salt and pepper to taste. Let it cook for about 6 minutes, until the onions and apples are tender.

At this point, pour the vegetable mixture over about 4 cups dry bread cubes in a large bowl. Stir to combine, and add up to 3 or 4 cups chicken stock to help keep it moist. Taste, and adjust the seasonings/broth as needed.

Place in a greased 9 X 13" baking dish, and bake at 350 for 20 minutes or until the top is browned and crispy.

I sometimes do this in muffin tins, since my whole family likes the crunch top. That way everyone gets some, and the portion control is really good!

This is one of my favorite recipes to come across this thread!!! My step-FIL requests it at every family gathering!

PIO - These look so good, so I have to ask... Why two different bourbons? Wild Turkey is very sweet compared to Makers Mark.

I normally use Maker's Mark for this cake (and also because I think I prefer the taste of Maker's Mark....it just depends on my mood). But the last time we needed bourbon, I sent DH out to buy the bourbon. He came home with Wild Turkey. I used it to soak the fruit because I wanted to finish it up. I then went out to buy bourbon and came home with MM. Really, there is sooo much sugar in this cake that it doesn't need the extra sweetness from Wild Turkey. :thumbsup2

Thursday was good but lots of family in our tiny living room. :crowded: Watched lots of football, checked out the BF ads, talked and of course ate, lots.

Went out for midnight shopping with my sis, oldest DN and my godson, my BFF was sick. We hit Target and Old Navy first. I took the kids into Target and my sis went to ON. Got most of what we wanted at both stores even though we were WAY back in the Target line.

We went to Toys R Us so I could get stuff for an Angel Tree child, got all I needed. Then to another Target which was not as well organized, line wise, as the one near my house. :headache: I was in line all of 5 minutes at the 1st one and stood in line for 15 minutes and only moved twice at the other. We were trying to get a Shark for my sis. At the first store we couldn't find it, for some reason they had it in a strange place, and she went to get it while we were in line. She found it after we had checked out and didn't want to stand in line. :sad2: We ended up leaving without it at the second store. We were in line near the back of the store.

After that we stopped at McD's for a late dinner of chicken nuggets, chicken sandwiches, McDoubles, fries and hot peppermint drinks. On the way home we decided to stop at Kohl's to see if they had basketball shoes for my DN, they didn't. Got home about 3.

I have to say, the kids were bored. Why, because they didn't get anything they wanted. :rotfl:

We decided to skip outdoors BF shopping this year and came up with a new motto. If it can't be purchased from the living room recliner, no one's getting it. :lmao:

A quick stop for now.

WFD is pork tenderloin rice and green beens.

Thanksgiving was great lots of great food and great evening with my Aunt and Uncle.

I will be back to catch up. I need to shower and clean up a bit before I get distracted. Lately I have been here there and nothing is getting done. I feel so blond lately oh shiney! :upsidedow I hope no one is offended.

WFD - Turkey day leftovers. Today will be spent putting up the tree and decorating since I got nothing done yesterday and the Saints don't play until tomorrow.
 
Happy Sunday, all! It's a beautiful, but very cold day here! We are snuggled down, trying to stay warm!

Some of Alan's family are coming over in a little while to help celebrate Timmy's birthday today. We are going to pool leftovers and see what we can come up with. I also have a head of cauliflower, and a couple of yellow squash that need to be used up! Don't know what Alan will do with them, but today is his cooking day! I'm taking some time off after Thanksgiving.

Kathy - Yes, my stuffing is a lot like Rachel Ray's. It was because of her that I started adding apples to my stuffing. I really like the bit of sweet with the savory. It's a good thing I only make it twice a year, because I could eat the entire dish by myself! Hope you are feeling better!

Tonight we're having Beef Ribs, Baked Beans, Cole Slaw and Corn Pudding for dinner. We didn't eat any of the leftover pies last night, so we probably need to finish those up.
 
I hope everyone had a wonderful Thanksgiving! I haven't had a spare minute to get online before now (and I really should be using this time to wrap Christmas presents to send home with Dad, but I can't find the tape!). We had a really nice Thanksgiving! Of course, I forgot to pull out the camera!

We are back home after our great trip - I put pics on FB if you want to see where we were.

We stopped at the first Starbucks we passed on the way home so I was a happy camper :thumbsup2
