The What's For Dinner Thread - October'11 (recipe index in OP)

Morning, all! It's looking kind of cloudy here, but it's not supposed to do much in the way of moisture today. Good! Dad is driving up with his 2 Yorkies this morning, and I'd hate for him to get caught in bad weather with 2 nervous doggies!

Our house is almost ready for him. Jacob is going to mop the bathroom floor when he wakes up, Katie will tidy the guest room, Mary is washing down the dining room chairs, and Leslie will be washing all the Thanksgiving dishes this morning. I'm making pies! We are having another pie night tonight. The one we were supposed to have on Monday got changed due to a lot of unavoidable things. It's been rescheduled for Friday night.

Lindsay - My cousin's wife was exactly like Amanda in the days before I had kids. She knew I wanted kids and had tried for 5 years with no luck. We were together with another cousin at a baby shower, and I was holding the new baby. He was doing just fine with me, sleeping and not fussing. When he made the smallest sound, Karleen swooped in, took him from me, and when I complained, she said, "He needs a REAL mother to hold him, now." I was so angry I left the baby shower right then! No one has the right to say anything like that to anyone. Your choice to have children or not has no bearing on how much you "understand" or anything else. I'm angry on your behalf, now! Good luck to Chloe!

Jen - My Home Ec teacher taught us how to make that "crack" at Christmas my sophomore year in HS. Then, she had us take it all to the teacher's lounge. We didn't get any of it. I thought that was cruel and unusual punishment. Luckily, my mom let me make some at home, and we enjoyed it as a Christmas treat for many years after that!

Nancy - Here's the pecan pie recipe.

Glynis's Pecan Pie

Pastry for single-crust pie
1 stick butter
3 eggs, beaten lightly
1 C. sugar
1 C. white corn syrup
Dash salt
1 t. vanilla
1/2 t. lemon juice
1 C. chopped pecans, plus some whole pecan halves for garnish

Brown the butter over low heat until nut brown and very yummy smelling. This takes quite a while, but is the key to the whole pie!

Preheat the oven to 425 degrees. Line a pie pan with pastry and put it into the fridge while mixing the filling.

Mix all the above ingredients except the pastry and the pecans for garnish. Pour into unbaked pie pastry. Add the pecan halves to the bowl in which you made the filling and stir so that they are glazed with any leftover filling. Arrange whole pecans around edge of pie, to make a wheel-like decoration. Crimp pie crust. Bake at 425 degrees for 15 minutes and 325 degrees for 40-50 minutes. You may cover this pie with a foil tent if it is getting too brown.

Just as a side note: this is the pie my BIL requested as his last meal before his gastric bypass surgery. He ate the entire thing in one sitting!

Oh NO! She di'int do that to you! :mad:

And yea, that Home Ec teacher was cruel! :eek:

Enjoy your dad!

I'm seriously drooling. Y'all must have had a fab trip! How long were you gone? Did you go for business or pleasure?

John flew in on Saturday for business and then I flew in on Thursday night to join up with him for a brief vacation. We came home on Tuesday, so just four full days, but we packed a lot in! I put some pics of the city up on facebook.

VERY tasty risotto!

This looks really good! I am going to make this next week. I have a HUGE butternut squash to use up.

Becky - Welcome back! You ATE at Joel Rubochon's?? I'm envious but very satisfied after licking the screen! :thumbsup2
Great porn sharing! :love:

Yes, it was really awesome! John had actually eaten there earlier in the week with the other folks he was in Paris to meet with. They ate at the bar and he sat next to Joel Rubochon! I was SOOOO jealous! He had one of his colleagues take his picture with him and sent it to me to make me mad :laughing: So of course he had to take me there once I arrived. No Joel R. in the house when I went though, at least not that I saw.

Happy Birthday to John!!!!!!!!!!!!!!!!!!!!!QUOTE]

Thank you!

That is ridiculous!! I would be furious!

OK so I lied about not getting back on here until after Thanksgiving :laughing:
but I had to tell a Thanksgiving related story.

My phone rang at 8 PM last night--it was my Mom calling to tell me that the grocery store had called and said that the organic free range turkeys she had special ordered for us to cook were subject to a recall, and to please bring them back to the store for an exchange :eek: So my brother bought them back, and all the store had left was FROZEN store brand turkeys!! No good.

So, he drove over to Whole Foods, pulled in to the parking lot, just in time to witness a transformer explode and the store lose power! :eek::eek:

So he drove to ANOTHER Whole Foods, and finally found some other kind of not-frozen turkey. It's a brand I have never heard of and they are bigger than I am used to cooking. My new oven is going to be put to the test for sure!

Wish me luck and Happy Thanksgiving!! :laughing:

Wow! That is quite a tale! I'm glad you got the recalled turkey taken care of! Nothing worse than botulism after turkey day! Good luck with the bigger turkey! I'm sure your oven is up to the challenge!

Becky I would be afraid. Be careful that might be a sign or something :scared1:

-We call this crack. :rolleyes1

I have made that with graham crackers too, so good. One lady I gave it to thought it was fudge.

Took the day off and am cleaning. Did get out of the house briefly to get some bloodwork done. First time in a long time that I've had that done and didn't have a bruise where they put the needle.

I'll have to try it with graham crackers!

Chocolate chip pecan pie is made. So are the sweet potatoes. UncleR also made some fruit salad.

All that's left is dinner later. :cool1:

:eek: That's quite a story just to get a turkey! I hope it turns out tasty and perfect for your meal!

My plans were to make bang bang shrimp tacos tonight, but now I'm thinking we probably don't want to mess up the clean kitchen right before we go out of town :laughing: So, we'll probably eat out.

Good morning everyone. It's Thursday over here, which would make it Thanksgiving Day if we celebrated Thanksgiving.

Happy Thanksgiving to you and yours....may your turkeys all 'roost' well in the oven and may you butternut pumpkins all 'squash' well with the trimmings. As always, I'm looking forward to the food porn. popcorn::

DS is still not 100%. He still has a headache, sore tummy and the runs. So, we're keeping him from school for another day...and quite possibly for the week. Really, I don't think anyone will thank us if the whole class comes down with this and clogs up the school restrooms.

Hope he feels better soon. I know there is sickness going around here too.

Taking a break from cleaning. Trying to get my "storage" area in the family room cleaned out. I've gotten lots done, things thrown out, sorted, boxed up to take to people at work to use with the kids. I am going to be so sore and congested tomorrow. It is sooooooo DUSTY in there.

I had to move two of the sets of shelves, which are hooked together. I have a total of three and they sit in an L shape. I needed to move the two further along the wall so I can put the laundry cart at the end, it currently sits in front of the shelves, to make more room in the storage area itself. Eventually once I can really get all of the stuff sorted and pared down I am going to make the area into my craft space.

Not sure what's for dinner tonight.

How were the carnitas?

Ugh. Cleaning!!! It never ends!

~~~~~~~~~~~~~~
Well, dinner is done and it was wonderful! We had roasted sausages and german potato salad.
We've been hanging out with dad, watching TV, and being lazy. J and dad went on a walk around our property today. :goodvibes
Tomorrow we have to get up and get on with the cooking right away. We'll make the kugel and stuffing first thing then get the bird in the oven.
Hope everyone has a great Thanksgiving!
Ladies, I need to ask for prayers once again. My DDIL called to tell me that Donny had another seizure at work and was in the ER. This time the care was 100% better than the last time but I had to tell Anna that at the risk of stepping on their toes, this was not going to happen again. I sicced Marisa on the Dr's and she was able to get him a referral to a new neurologist and he will be seen on Monday. He had not been able to get into the group where he had been seen before until Dec 30th! The Dr in the ER scheduled an MRI along with a multitude of blood tests, all which came back clean. Good news I guess but what do you treat? he said that he would nto start any anti seizure meds under these circumstances because tehy would probably be changed once he got into the specialist
I will be back later to chat but I am going to have a glass of wine for now.
Glynis – I hope Dad made it safely to your house.
Becky – Thank God the recall was timely! Good luck with the bird and the new oven, though I don’t think you’ll need it. You can cook anything!!
Aimee – Have a safe trip and enjoy your Thanksgiving!
PIO – I will keep your DS in my prayers.
Nan – I am so sad to hear that Donny had another seizure. Glad you sicced Marisa on them and got something scheduled. I will keep Donny and all of you in my prayers. hug
