Tonight the Rangers are playing - hopefully they'll win the World Series tonight! :cool1: I hope to get out of church in time to see most of the game. If I do, I plan to make pineapple fried rice (with shrimp). If I get out late, I'll pick up something.

Well it's hard to say if Fran is better or not. To me she seems to be doing better (dressing indepently, a little more cognizant, very task oriented) but she says she has more pain. The wound still looks horrible, but the area of redness has definitely gotten smaller.

I was awake at 8AM and on the phone to the testing facility and they got right on getting the proper approval for her to take the test. We've been back and forth with them a couple times, and in the last call we learned that because she took her daily meds this morning, one of them makes it so she can't take the test today. So it will have to be tomorrow even if they get the proper approval.

Today my cleaning lady is coming over. I can't seem to get motivated to do dishes and other mundane tasks, so with her here, I'll get something done! :rotfl:

But I did want to share with you all my take on Brandi's Turkey Blue Cheese meatballs. I thought they were great! They came out a little salty, but that's probably because I put salt in the hamburger patties when I made them and also added the soy sauce that the recipe called for. I just made enough for my dinner and it was perfect. The blue cheese gave them A LOT of flavor, so no problem with blandness here! Fran wouldn't like them though since they were so "in your face". These will probably have to be for a night where she isn't hungry. These are common ingredients that I often have in the house, so I can easily pull them together.

Ok, here's one more recipe, before I have to leave the computer to get ready to go with Katie tonight.

Derby Pie

1/2 C. flour
1 C. sugar
2 eggs, slightly beaten
1/2 C. butter, melted and cooled
1 C. chopped nuts (pecans are good here)
1 C. chocolate chips
1 tsp. vanilla

Mix all ingredients and pour into an unbaked pie shell. Bake 45-50 minutes at 350 degrees until set. Serve warm.

This tastes just like a chocolate chip cookie in a pie shell. It's delicious with vanilla ice cream melting over the top. Do yourselves a favor, and eat this one warm!

Good morning, from the frozen West! It's cold here!!! Still no freezer, so I'm huddling by the wood burning stove. Alan did tell me that he hopes to have a new furnace installed "soon". What that means is anyone's guess. Although, I did see him pouring over the estimates that we've already gotten. One more coming today!

Dinner tonight will be Cowboy Quesadillas. Jacob has Scouts and Katie has her church youth group, so this will be quick, easy, and warm!

I hope you get that furnace soon! We're turning on the heat for the first time tonight cause it's getting cold!

And what, pray tell, is a Cowboy quesadilla? popcorn::

we have 20 acres in Bandera... Right outside San Antonio, but no, house, no, bathrooms, no running water, except for the creek.... Lots of wildlife....

I dont camp either, but if there is a hotel, I'm in!! I dont camp, I dont rough it, I am just not that person. When I was 8 months pregnant, Jeffs family invited us camping with them. They all have RV's with bedrooms, tv, you know, the essentials. I asked what the sleeping arrangements were, and they told me we could use their pop up tent:scared1: Yeah...no thanks.

My DH and our neighbors, always sit on our porches and have adult Halloween and had out candy to the kids... Every year I try to come up something new to drink, I don't the gore drinks, give me something that taste good and I am happy!

Grown Up Pumpkin Pie Milkshakes

Dreamsicle cookies are like a bite of summertime! It's a basic drop cookie recipe, flavored with orange zest and some orange juice (if I remember correctly, it's been a whole year since I've made them), and with white chocolate chips. It tastes like biting into a dreamsicle!

Since it's getting so cold here, I'm hunkering down with my recipes today, and planning my holiday season out. I'll pull the recipe and post it along with any others I think you guys may want.

Hey all! Popping in to say hi! It has been a bit crazy here but I hope to try and be better at posting after Halloween. I just had a great long weekend in WDW with my sisters and saw Kat, Sheryl and Vickie. It was awesome to see them!

Dinner tonight is some kind of take out since we have our nieghborhood kids Halloween story time and parade. I did make a meatloaf Monday evening and sweet and sour chicken last night. Two family favorites!

Lindsay, thanks for taking over the thread! Maybe I will follow along and do some Xmas baking this year.

Ok, here's one more recipe, before I have to leave the computer to get ready to go with Katie tonight.

Tonight's dinner was creamy chicken baked taquitos. This is a household favorite, and I'll be back to post the recipe.

I didn't take a picture of dinner because we were so hungry we just ate it, and we've had it several times before. Please forgive me.

I'll paint you a picture with words:

Picture a rolled, crispy flour tortilla with yummy creamy chicken mix spilling out of the sides. On the side, you have some salsa verde for dipping.

*ahem*

Creamy Baked Chicken Taquitas

Ingredients:


1/3 c. (3 oz.) cream cheese
1/4 c. green salsa
1 T fresh lime juice
1/2 tsp. cumin
1 tsp. chili powder
1/2 tsp. onion powder
1/4 tsp. garlic powder
3 T fresh chopped cilantro
2 T chopped green onions
2 c. cooked, shredded chicken
1 c. grated pepperjack
small, flour tortillas (about 12-14)

Heat oven to 425. Heat cream cheese for 30 seconds in the microwave. Add green salsa, lime, cumin, chile powder, onion powder and garlic powder. Mix. Add cilantro, green onions, chicken and pepperjack.

Roll mix into tortillas. Place on baking sheet and bake for 15-20 minutes.

Yummyness in a tortilla. :dance3:

First of all, thanks for catching the typo. It is 1/2 cup of butter. Wow! 12 cups would be awful!!! I'll go back and edit my post!

Cowboy quesadillas are really easy. I make a bag of Knorr rice with a smoky rib taste, then I add 1/2 cup barbecue sauce, 1 cup frozen corn, and grilled chicken strips. I heat it all up, then place on flour tortillas and top with cheese. Then, grill like regular quesadillas. Very yummy, and a favorite with my kids.

I'll post the dreamsicle cookies tomorrow.

I forgot I have to go with Katie to her youth group meeting tonight. Jacob will babysit, so it's just going to be leftovers for us. We have tuna from last night, and lasagna from a couple of days ago.

I was pleasantly surprised by this recipe! I tried it with my kids, and even the pickiest ate a couple! Definitely a keeper in our house!

Well PIO has first dibs on renting my BCV points, I'll be staying there 2 years in a row since I've rescheduled this years trip to next year. However I have quite a few points there and by 2013 I might have quite a few banked up. I'm going to use mostly 2011 banked points for my 2012 trip so that means quite a few 2012 points to bank into 2013! :thumbsup2

Clean house? No she just helped me do the load of dishes that built up while I was being depressed and obsessing on the DIS. Then she helped me out with the hoarder nightmare that is my life, opening packages. We found a Mickey phone, a Goofy phone, a Jack Skellington Big Fig, a Mickey as a Mayan God big fig, several other WDCC collectible figurines, at least a dozen watches, probably 20 pins, a couple books on CD, and I don't rememer what else. I logged into her eBay account and she has spent more on eBay in the last two months than some people make in a month!

No wonder our savings account keeps shrinking! :scared1: I think we're better off with her down for a while!

Marilyn - Do you know what cut of bacon the Amish use? I believe that most of the bacon in the US is made from side bacon. We use middle bacon; which includes some of the side and the back. The Canadians use back bacon. When I've shown pictures of our bacon to other Dis-sers, they coin my pictures "kangaroo bacon". I'd be curious to know if the Amish use side or middle bacon...

Today I am making black bean soup and cornbread. I'm pretty sure the soup recipe is somewhere in the WFD archive, but I will post the recipe again later for the newbies. I also hope to get some biscuits made today, just for the heck of it.

Ok, odd thing. After updating the index, I noticed I made a boo boo. I went to edit it and low and behold there was no code!!! I was able to fix my mistakes so it looks much better now. I still haven't been able to get you guy's advice to work right (it's not you, I'm just not that savvy!), so I was thrilled it managed to work for me this morning. Looks better, eh?

Glynis- Derby Pie, lol! For years I thought that was my claim to fame! No one around here ever made it so I thought I was hot stuff, lol. It's always a winner ;) Also, I hope your heater problems are resolved soon.

Maria- I don't know if you will see this or not, but congratulations!

Lindsay - I got the Derby Pie recipe from my sister when I asked her for a pie that my (then) 9 year old Katie could make by herself. Ever since then, I've made it every year, and it's always the first pie to go!

Princess - Well, still no heater, but Alan assures me we're getting closer. I sure hope so! This morning is the coldest yet! I'm up early to get pancakes cooking for the kids in an attempt to help keep them warm!

Not much on tap for me today, except to finish up the Halloween costumes. Timothy wanted to be a bag of M&M's, so I got him some brown sweats, and now I need to apply the felt M&M's that I made last night to it. I also need to attach a Ravenclaw badge to Jacob's Hogwart's robe, make a name tag for Katie's nurse costume, and make sure Mary's Darth Vader costume fits. I think Leslie's Rapunzel after the haircut is ready, but again, a good rehearsal never hurts!

Dinner tonight will be some kind of pasta dish that I found on pinterest. Can't think of the name, so I'll come back with that and to let y'all know if it was any good.

Jen-Uncle R will have to beat Buddy off with a stick!:rotfl: I do nto make a good apple pie. I can make cobbler, crisp and cakes but that fruit pie thing ????? Not so much :sad2: Buddy loves fruit pies, all kinds but his favorites are al=pple and blueberry.

We had dinner out yesterday. Marisa and Kady came with me to pick Bud up at the garage, some brake thing on his beloved dump truck. Welby calls it the Blue Avenger but I think it is the Blue Abyss :dance3: anyway he took us out and I had salad with grilled chicken. Everyone else had good stuff!
