Now I'm thinking about you!

I wish we were closer. We'd be bringing you some fabulous Texas food and a few DVD's and we could all watch some movies together. Who cares if Fran was snoozing in the chair? ;) Don't neglect yourself during this time. Whether that means venting here or sending a PM to whomever you need. OR heck, take some time and begin to plan your next trip. After all, you've got a great time to look forward to. :cloud9:

I don't do warm fruit pies. :scared1: I just don't think fruit should be warm. If God had wanted fruit to be warmed, he would give it to us off the vine like that. ;) :lmao:

But, lemony pies, or pecan pies, or chess pies...I'll eat 'em all day long!

I am with you on the Lemon, or lime, I like them sweet and tart... Kind of like my DH...:rotfl:

We also think we need a food thread DIS meet. We have ten acres. Y'all could pitch tents or something and we can go down that dern spankin' new fancy schmancy McDonald's they put up in the town. :lmao:

we have 20 acres in Bandera... Right outside San Antonio, but no, house, no, bathrooms, no running water, except for the creek.... Lots of wildlife....

I so miss Texas, can't wait to get back.
 
Well I spoke too soon. The doctor sent an email to her only this morning asking if we wanted her to come by. I didn't know that I was supposed to check her email and we didn't find it until 6PM, by then it was too late.

She's taken three morphines since 3PM because the pain is worse than before. The doctor emailed me prescriptions for a scan and blood work, so tomorrow I have to try and figure out how to get her to the imaging center. The hard part will be getting her into the car. I have a scooter for her, but getting her into the SUV.

She wants to find out if the infection has gone deeper than the surface.

Oh Fran.... :hug: Good luck with everything and please let us know how everything goes...
 

The cookie thing is really easy. You can do it with any drop cookies, like chocolate chip or oatmeal, etc. Simply make your recipe like you normally would. Line a cookie sheet with parchment or foil. Shape your dough into balls and cover the sheet. Don't worry about leaving room for them to spread... you're not going to cook them yet. Place the tray in the freezer for about 1 hour, until they are frozen and not sticky to the touch. Place the dough balls into a big Zip-loc baggie on which you've labeled the baking instructions. Then you can put the baggie back in the freezer, and just pull it out when you need cookies.

I've frozen the Mystery cookies, molasses cookies, cranberry chip cookies, regular chocolate chip cookies, dreamsicle cookies, and other drop cookies this way, with no problem. Good luck, and happy baking!

Today was one of those days, where you wake up and everything goes wrong.

Tonight's dinner was a new recipe. Penne with sundried tomato cream sauce. Very easy and tasty. I'll post the recipe and a pic in a bit.

I know I'm speaking for both of us when I say that you ladies have truly become such an important part of our lives. I don't know what we'd do without you. (besides not eat as well ;) )

It was a big decision to make our announcement to the DIS. But, it was important to us to let people know that we just want what everyone has...love, family, a marriage, and everything that accompanies that.

For the newbies - My aunt started inviting all the family (extended, as well as immediate) to her house the night before Thanksgiving for pie. Her reasoning was that after a huge meal, no one can do justice to and enjoy the pies. So, the night before, we gather together, and everyone brings pies. Some bring one, some bring multiple. We lay them all out and cut them into tiny slivers. Then people load up plates and we gorge on pie! It's a wonderful tradition, and when she passed away several years ago, her daughter continued the tradition. I've introduced it to Alan's side of the family, and we hold a Pie Night with them the Monday before Thanksgiving, and then have another Pie Night with my side of the family on the night before Thanksgiving. It's also become a fun time to try new pie recipes. Each of my kids makes at least one pie, and they like to try new recipes (except Jacob, who is a pumpkin pie purist.). We've already started going through my recipe books to find this years pies. I know we'll make a pecan, a Derby pie, and a pumpkin, but who knows what other kinds we'll make. The trying is the fun part!

Glynis: How far are you from CT?? I might need to make a road trip... I used chocolate covered raisins in my bread pudding one time, and LOVED it!

I make a chicken recipe with cranberry sauce and onion soup. I do use whole berry and I also will use apricot jam instead. I sometimes toss in Catalina French dressing ...............you know ..................

If the hurricane/tropical storm that is heading towards Florida comes up the coast we could see snow for Saturday. I will be in full snow mode tonight. If being prepared makes it blow out to sea, then we should have no worries!!:cool1:



This sounds like a wonderful tradition. We are sort of alone here, my parents live in Cupertino, my sister and her family are in Seattle. Fran doesn't have any family, so our holiday gatherings are usually four people max. When we don't have family for the holidays we travel. Last year was our first holiday season with her parents both gone. I'm not looking for sympathy, just commenting on what a wonderful holiday family tradtion you have!

I dont camp either, but if there is a hotel, I'm in!! I dont camp, I dont rough it, I am just not that person. When I was 8 months pregnant, Jeffs family invited us camping with them. They all have RV's with bedrooms, tv, you know, the essentials. I asked what the sleeping arrangements were, and they told me we could use their pop up tent:scared1: Yeah...no thanks.

Can you believe this town is so small we don't have a hotel? :rolleyes1

But, there's a lake, a Chicken Express, and a new McDonald's. And we have wine and lots of it. :flower3:

And honey, I don't camp either. My idea of camping is a hotel without room service.

Thats hilarious!! I live within 5 miles of the airport, so we have lots of hotels and more than 1 McDonalds!:rotfl2:

Glynis: I am intrigued with making the cookie dough and freezing it to use later. Could you post the recipe, or show me where I can find it? I am really wanting to do a lot of baking this December and would like to get a head start on it.

Thumbprint (just the dough, then before I baked them I rolled in the egg and nuts)

I cant remember which others I did, but this made my baking so much easier!



Last night was so hectic! Kady wanted a new costume for halloween because last years crayola crayon didnt fit right. The costume still fit, but the hat didnt, and that was not something I could leave out. So she was going to be a box of shame from Despicable Me. But she thought it might be too hard to walk around in. SO..... last night we drove all over the place looking for something she actually liked. We found a perfect costume for her and she will be:

Yup thats my kid....

No clue WFD tonight. I want to finish the outside winterizing tonight. There is not much left, but I need to finish. I have to buy a cover for my patio set. I have it under the deck, but I dont want it to get rusty. Then I have some planters I need to empty and put into the deck box. Just stuff like that.

I am my mothers daughter. I over prepare. When the hurricane hit, I was ready. Everyone laughed at me for doing normal stuff. Filling the grill propane tank, buying batteries, making sure I had popcorn chicken and buffalo wings. Well alot of our state lost power for days... some people more than a week. So after the hurricane we went to Nan's and my brothers both had no power, so they called me to bring the snacks. How do you not stock up on snacks???:confused3

My DH and our neighbors, always sit on our porches and have adult Halloween and had out candy to the kids... Every year I try to come up something new to drink, I don't the gore drinks, give me something that taste good and I am happy!

So I found this years concoction...

It’s not that I think you’re too inept to know how to put ice cream scoops and milk in a blender and push “start”… it’s just that I’m not sure you know how to add a few hefty slugs of bourbon.

See? I knew we were in this relationship for a reason.

Ooooh and I also really enjoyed this (some would say too much) and didn’t want you to go a day without it. That’s the real reason.

Okay… and the third (real) reason is that my last-minute planned cookies were a big fat fail on Tuesday and my teeth are sweet today. Sue me.

And I’ve already done all the other boring-yet-delicious, typical, !OMGit’spumpkinseason! recipes so what better way to ring in Fall with a refreshing beverage that tastes like pie with a side of liquor?



This is my kind of thing. I hope it’s yours too.

Bourbon Pumpkin Pie Milkshakes

makes 2 shakes

2 cups vanilla ice cream

1/2 cup milk

1/4 cup cream or half and half

1 tablespoon vanilla extract

2/3 cup pureed pumpkin

1/2 tablespoon pumpkin pie spice

1/3 cup graham cracker crumbs

2-3 ounces of bourbon

frosting + sprinkles (or cinnamon sugar) for glasses

Add all ingredients to a blender and mix until combined. Rim glasses with a light coating of frosting then dip in sprinkles. Pour in shake and sprinkle cinnamon on top. Top with whipped cream if desired. Serve!

I have a recipe for a pecan pie that calls for browned butter. I swear, it's the most sinful pie you'll ever taste. My niece's husband swears he married into the family just because of that pie. :laughing:

I think I need this recipe! Pecan pie is one of the only pies I like. I am not much of a sweet tooth. I do like key lime pie also.

WFD is bread pudding pancakes and bacon

Bread pudding pancakes? Another recipe I would like to have, please! I know I just said I don't have a sweet tooth, but I do love bread pudding!

Good morning, from the frozen West! It's cold here!!! Still no freezer, so I'm huddling by the wood burning stove. Alan did tell me that he hopes to have a new furnace installed "soon". What that means is anyone's guess. Although, I did see him pouring over the estimates that we've already gotten. One more coming today!

I hope you get a new furnace soon!! Being cold inside is so uncomfortable!

I hope Fran is feeling better today, and that the tests come back OK. Please update us when you have a chance.

Here are a couple of dinner pictures. Monday I made spaetzle, knockwurst, and roasted beets. The texture of the spaetzle was good, but the flavor was a little bland, which was surprising. They were tossed with emmenthaler cheese, carmelized onions, and beet greens, so I thought they would have a lot of flavor, but nope. The best thing was the beets. I roasted them and then boiled them for a few minutes in a mix of cider vinegar, maple syrup, cracked pepper, and butter. Here is a pic:

Then last night it was a tossup between meatball subs or the stuffed roasted pumpkin. So, I made...lobster and corn chowder! :laughing: I had some corn and potatoes from last week's CSA to use up and a couple of lobster tails in the freezer. John really loved this soup. Here is a picture:

I don't like lobster so when I had the stock finished, I divided it into two pots, and heated the lobster in one. In the other I added a shot of worcestershire sauce and some sharp cheddar cheese. Here is my soup:

Both soups had bacon and chives as garnishes.

WFD: not sure. It is kind of damp and cold here today. I heard on the radio that it might snow on Saturday! YUCK!!!

Since it's getting so cold here, I'm hunkering down with my recipes today, and planning my holiday season out. I'll pull the recipe and post it along with any others I think you guys may want.

Very much! :thumbsup2 Especially with the bacon I used. I got bacon pieces from the Amish Market which was thicker and had more actual meat to it. I also find it to be a less salty than some of the packaged bacon.

Dinner tonight will be pork chops with apples, and scalloped potatoes.
 
Here's my first holiday recipe. I haven't posted it in a while, so it's time for it to make a comeback!

Gingerbread Cake and trifle

1/2 C. butter flavored shortening
1/3 C. sugar
1 C. molasses
3/4 C. water
1 egg
2 1/3 C. flour
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
3/4 tsp. salt

In a large mixing bowl, cream shortening and sugar. Add molasses, water and egg. Combine flour, baking soda, ginger, cinnamon and salt; add to creamed mixture and beat until combined. Pour into a greased 15 X 10 X 1-" baking sheet. Bake at 350 degrees for 18-22 minutes or until a toothpick inserted near the center comes out clean.

For the trifle you will need:

2 C. cold milk
1 pkg. (instant) French vanilla pudding mix
7 C. cubed gingerbread cake
3/4 C. English toffee bits
1 carton Cool Whip, thawed (if you can find the French vanilla, it's amazing)

In a mixing bowl, beat milk and pudding mix on low speed for 2 minutes. In a 2-quart trifle bowl, layer half the cake cubes and pudding. Sprinkle with 1/2 cup toffee bits. Top with remaining cake and pudding. Spread Cool hip over the top; sprinkle with remaining toffee bits. Garnish with a maraschino cherry, if desired.

Dinner tonight is some kind of take out since we have our nieghborhood kids Halloween story time and parade. I did make a meatloaf Monday evening and sweet and sour chicken last night. Two family favorites!

Dinner tonight is some kind of take out since we have our nieghborhood kids Halloween story time and parade. I did make a meatloaf Monday evening and sweet and sour chicken last night. Two family favorites!
