The What's For Dinner Thread - October'11 (recipe index in OP)

Just checking in. I'm horribly behind on all your updates.

Today is Wednesday and dinner was at Mum's. I'm still in-between contracts and am hoping to be placed soon. In the meantime, I'm doing the best I can to stay busy....or at least...pretend to be busy. *sigh*

Morning, everyone!

I have a busy day today. Since I cooked roast for yesterday and today's dinner, I don't have any cooking to do. But to make a long story short, I am going to work on our overnight bag*. A few years ago, I grouped together certain items in gallon freezer bags and labeled the outside. Example: a bag that had q-tips, cotton balls, face wash, shaving supplies, etc. Another had sunscreen, after-sun lotion, and aloe. One has all the laundry stuff in it: laundry and softener travel packets, dryer sheets, Tide-to-go pen, etc. It just makes life easier when looking for one particular item.

I am going to try and get that accomplished today. I also want to take a few minutes and do my nails. I now that sounds silly, but thanks to my disability, I have the most unfeminine hands in the world: rough, peeling, and calloused. To make up for it, I try to have nice nails. So I want to get that done sometime today for church tonight**.

**Ok, VERY long story. I go to a really big church and am part of the music ministry. Our new choir director has been there for a little over a year. We have praise teams that stand in front and lead during praise and worship. I am on such a team. There is 2 people per part. The catch is that our director is musically in love with the other soprano on my team. She was on a singing team at his alma mater, a two-time American Idol contestant, and your typical soprano diva. Like I said, he loves her and she sings every time our praise team is scheduled. (every 4 weeks) Her singing so often wouldn't be so bad if she wasn't such a snot about it. Anyway, I try to remind myself that she's young, "be the change I want to see in the world," etc.

Well, this week I have a solo in our choir. During rehearsal tonight (in the sanctuary), I will be mic-ed and have to sing it. I know, I know, this sounds soooooooo trivial, but the simple act of having my nails look nice will give me confidence. This girl has made me feel so bad about myself, it isn't funny. But I find joy in the little things and this is one of them. So I must get them done today. I am a self-admitted nutter butter :angel:

Lindsay, your trip is coming up soon.... talk about organization, that is awesome!!!

Get those nails done and be a proud confident woman and belt out that song! you will be great!

Tonight's dinner is supposed to be entomadas and spanish rice...which at this point sounds entirely unappetizing, but hopefully I'll be feeling better by then. Cooking is one of my happy places, after all. :lovestruc

I hope you get to feeling better soon, I know it is rough getting back into the swing of things and helping your body out.

Get that rest and take everything in stride.

OK Nanatize is when Nan makes something, usually for the first time, and decides that she could make it better if she just added.... Whatever pops into her mind at that exact moment.:eek:

Here's an example: She was making chicken with a lemon caper sauce. The recipe called for the juice of 1/2 lemon. Well, if 1/2 a lemon is good, 4 would be better :scared1: Buddy lives for gravy, and he thought that it was gravy and poured it over his plate. The look on his face was PRICELESS as he tried to figure out how to swallow it :rotfl:

Another example: Nan was making baby carrots and wanted a glaze. She decided to try to make something she saw on Iron Chef. Not something she saw made, just something she saw :rolleyes: A chef was making carrots and she SAW a can of sprite on the counter and thought they must have used it. So she cooked the carrots in the sprite, and then thought well Marmalade will make that EVEN BETTER:scared1: Needless to say even Nan couldnt pretend to eat them.

We joke that she opens her spice cabinet, closes her eyes and reaches in. Whatever she pulls out has to be used... Kind of like on Chopped:rotfl2:
 

Now Risa! There you go again, taking one or two little mishaps and stretching them beyond belief!

I figured out what is wrong with me lately when Marisa had a "Disney Moment" at work. I am having an "I Miss Disney Week" :sad1: I cannot get off of the boards lately!

My disney moment today was little, but still disney. I went for coffee in our cafeteria at work. I went over to the green mountain coffee and they were still making them. So they said I could go over to the other side and get coffee over there. I headed over and saw the same coffee machine Disney has. I know most people dont like it, but I love it :lovestruc I had to sit and drink it slowly while thinking of Disney

Lindsay- enjoy your nail pampering! Your solo is going to be awesome!!!!!!!!!!!

Jen- You need to rest! I think folks get sent home quickly after surgery, so different from the old days. My Mom was in the hospital for over a week for your surgery so she had no choice but to rest. I don't want to go back to those day but I believe that because people go home so fast sometimes they (YOU) forget that you still need to recuperate. Your body is telling you something so please listen :hug:

Nanatize- Hmmmmmmmmmmmmmmmmmmmmmm. I have a hard time sticking to a recipe so whenever I decided to embellish a dish my family called it "Nanatizing" it. They are ever a source of my continued :headache:, a mishap here or there and you would think I was a crazy person in the kitchen!

Dinner tonight was pork, it was the best pork marinade I have tried.

I will have to post the recipe.

ok here is the pork chops I made, David and I both agreed these were super moist and flavorful

Ingredients

3/4 cup vegetable oil
1/3 cup soy sauce
1/4 cup vinegar
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
1 tablespoon prepared mustard
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried parsley flakes
1 garlic clove, minced
6 (1 inch thick) pork chops

Combine the all but pork in a large resealable plastic bag or shallow glass container; add pork and turn to coat. Seal bag or cover container; refrigerate overnight. Drain and discard marinade. Grill, over medium heat, turning only once, for 20-25 minutes or until juices run clear.

last night was Tequila Chili (using Venison) over a baked potato...


Ingredients

2 tablespoons vegetable oil
3 pounds ground venison
2 stalks celery, diced
3 cups chopped white onion
1/2 teaspoon dried red pepper flakes
1 tablespoon garlic powder
1/4 cup chili powder
2 (28 ounce) cans diced tomatoes
1 (16 ounce) can tomato sauce
1/2 cup gold tequila
1/2 cup orange juice
2 (15 ounce) cans chili beans in sauce

Heat the oil in a large pot over medium-high heat. Add the ground venison and cook, stirring to crumble, until no longer pink.

Mix in the celery and onion; cook and stir until tender.

Season with red pepper flakes, garlic powder and chili powder. Cook and stir for a minute to intensify the flavors.

Pour in the tomatoes, tomato sauce, tequila and orange juice; simmer over low heat, uncovered, for 2 hours. After 2 hours, mix the beans into the chili and simmer for another 30 minutes.

I always let my chili set overnight before we eat it, something about it makes it taste better after all of the flavors meld together...

So i baked some potatoes, poured chili over them, covered them in cheese, added sour cream, onions and bacon.

David was very happy!

I found an Indian food friend - a mom of one of my kiddos. We had lunch at a local Indian restaurant she frequents. SO GOOD. It was a buffet so I sampled a bunch of everything. I did find their stuff to be much spicier than other restaurants I've been to, though... totally made my day.

Dinner tonight is an Italian meatball soup and if I can get my sad self out into the torrential rain I will pick up a crusty loaf of bread to go with it. Buddy will hate it but it will keep until tomorrow if the guys are working. I still don't know what the plan is, the tobacco was not ready a little earlier in the day but might be this afternoon. If that is the case I will be bringing dinner to the sheds, it is going to be raw and cold in there.
 
Ok dinner tonight is grilled chic:confused3ken or meatballs. Hmmm decisions decisons.
