Well our weekend was totally an "organized mess". We completely tore our bedroom up. We have been going to do this for 6 months - new windows, new doors and flooring have been ordered and are in, so I guess this was the weekend. We moved up to Matthew's bedroom, so we have someplace to at least rest our heads. Oh my what a mess :eek:. But we knew this going in - and it is going to get much worse before it gets better. We are taking all of the plaster and lathe down (remember our house is over 100 years old) and replacing it with sheetrock. It will be so nice when it is finished but right now - what were we thinking??!! :sad2:


What a big job you have! It will be worth it but I agree that you have your hands full for now.

After DM got home from work I went downstairs and went back to sleep and slept for 11 hours. :thumbsup2

Yesterday we went to the farm, came home, made yummy turnovers and then to the swim meet. My oldest DN did really well.

You needed the rest. YOur tooth may not be broken but the pain is exhausting. I am so glad your Dn did so well!


Today was looooong. I had another new speech therapist observing me all day long. It just made for a stressful day. Plus it being Monday and all. :lmao:

Tonight's dinner is penne with tomato butter sauce.

LOng day!!!!!!!!!!!!!!! When I was a kid my Aunt made what we called French Spaghetti. She sauteed a lot of onions in butter, and my Mom used oleo so this alone made it special :goodvibes. Then she added tomato soup and cooked spaghettti. It was simple but ssooooooooooooooooooooooooo goooooooooooooood! I used to make it once in a while and my kids all love it. I have been craving it lately. Spaghetti with butter, tomato soup and onions! Sounds :scared1: but I bet yours is that comforting yummy deliciousness.

Dinner is my version of chicken scampi. I am not doing a very good job of sticking to my diet, am I? ;)

That sounds like something we love. It's called fideos. It's a mexican spaghetti, but you "fry" the vermicelli in butter and add tomato sauce. I toss in some sauteed onions and garlic. :lovestruc Sooooo good, sooooo cheap and sooooo simple!

Diet is a 4 letter word in this house. :rolleyes1

So far I've used 2 pieces of foccacia to sop up some of the "extra" sauce that no one will miss. ;)

I've toyed with the idea of starting a cooking blog. I have a blog that I horribly neglect and I think I'd probably enjoy a food blog better. I have to be honest about something though. I am a little protective of some of my recipes (except with you guys, of course!) and want to keep some of them to myself. LOL, it's a family thing. I'd have to be choosy about what I put on it.

You are killing me!!!!!!!!!!!!!!!!!!!!!! My family planed our gatherings around the food, not the other way around so most of my memories are sparked by some dish or another.vI can see my Auntie Rose making this easy dish, she was little and round, had blue hair with her pretty little hair nets. Prim, proper and a little prissey, except when she was naughty :rotfl::rotfl: She spent months at a time at our house adn I loved her so much.

I was going to make a salad but opted to skip it so I can eat more pasta:upsidedow

He likes, ground beef and chicken both- not so much a "steak" kind of kid (not sure who he belongs to!)- he likes pastas- not much into soups- loves cheese- he's allergic to shellfish.

Tonight I made ChefBoyArdee pizza. DH and I had leftover chili... Jack won't eat chili.

I will go through my recipes tomorrow morning. Chicken and ground beef both cook fast so no worries! I remember when I went back to work after the kids were in school and I was overwhelmed. I honestly think that once you get your routine down you will be fine. I know that now that I am home more than out at work I get less done around the house. cook less and eat more.

EASY FETTUCCINE ALFREDO

1 (8 oz.) pkg. cream cheese
3/4 c. Parmesan cheese
1/2 c. butter
1/2 c. milk
8 oz. fettuccine

Prepare the fettuccine according to package directions. Meanwhile, combine cream cheese, Parmesan cheese, butter and milk in a saucepan. Stir over low heat until smooth. Combine with hot cooked noodles.

**This is the recipe as written. I back off some of the cream cheese and parmesan just a tad, as I find this to be too thick.

I am so sorry for your loss. I lost both of my in laws to cancer. It was so hard to watch them suffer. It is good to know that no matter how much I miss them they are in a better place free from pain waiting for me
 
Dinner tonight was pork, it was the best pork marinade I have tried.

I will have to post the recipe.

The lentil stew I posted a photo of was good though I needed to add hot sauce and salt at lunch today.

Just popping in a picture, will catch up tomorrow, it is bedtime! Mushroom sandwich. John hates this, I love it, and he is in Germany this week so all my pictures for the next few days will be foods I like and he hates! :laughing:

I made a ½ recipe tonight

Enchiladas Rancheras

Preparation Time: 45 Minutes (25 Active Prep)
6 servings

1 lb leftover poultry
½ tsp chili powder
½ tsp cayenne pepper
½ tsp black pepper
½ tsp garlic powder
------------------------------
4 tbl vegetable / canola oil
4 tbl flour
2 4 oz can diced green chilies
4 cups chicken broth
6 cloves garlic
1 tsp cumin
1/2 tsp salt
-------------------------------
1 medium onion chopped
2 cups Monterey Jack Cheese, grated.
12 corn tortillas

Heat 2 tbl oil in a saucepan, add flour and stir for a minute or two, do not brown. Add chilies, stir for 30 seconds, using a wire whisk, then stir in the chicken broth, garlic, cumin and salt. Bring to a boil, reduce heat and simmer for 10 minutes.

Meanwhile, preheat oven to 375, and chop poultry and sprinkle with chili powder, cayenne, black pepper, and garlic powder. Toss until well coated, and chop onion. Dip each tortilla in the sauce, place in pan and fill with about 3 tbl of the poultry, 1 tbl of onion and 1-2 tbl cheese. Roll tortilla and place face down in a greased 13x9x2 baking pan. Sprinkle with remaining cheese (if there isn’t any use more) and pour sauce over tortillas. Bake uncovered for 15 minute or until the top browns and sauce bubbles. Serve with Sour Cream or Guacamole if desired.

I’ll tell you ladies, it feels really good to not have tons of meat to cook, and actually start to get back to cooking small meals without the pressure of giant roasts spoiling! However I’ve got probably a hundred days of using up precooked turkey and ham!

This is an awsome recipe. I know you haven't been following my PTR, but I've been fretting over what to do Sunday night the 30th. We could either go to the F&W fest, but it might be too crowded, otherwise we would go back to the room to eat or go to Beaches and Cream. This is an awsome recipe since we could make a half recipe and maybe add some bacon. I showed it to Fran and she liked it, so we'll make sure to buy cream cheese. We have pasta in our OL so between the ingredients mentioned here and what we plan to buy we can play it by eiar for the Sunday night of our trip and eat from the kiosks if the lines are short or make us some pasta in the room if we're still hungry. I will also make sure we have makings for grilled cheese sandwiches to satisfy hunger if necessary!

I save those foods for when Buddy is home and I am mad at him :surfweb: Last night I was merely annoyed with him so dinner was one I loved but he tolerated. Lemon and pasta :scared1: in his opinion :lmao:

I made today and tomorrow's dinner yesterday (wow, that's a weird sentence) so I don't have any meals to make today. But I did give myself a challenge. I had some delicious fried apples at Famous Dave's over the weekend. They were made with amaretto and bourbon. Oh my word, they were soooo good so I decided I would try to make them. I don't have any amaretto but I do have bourbon. I'm going to try my hand at that today.

If they turn out good I will post a recipe for you :)

Merle – Sorry you were having tooth pain but glad it turned out well. I hope you don't have any further problems.:hug: I was having flashbacks to my ordeal a few years ago when you were describing the pain :eek: (for all the new posters, our first day at F&W in ’09 I spent at a dentist getting a root canal), only ME!!!!!

Ellen – I am about 75% packed! Looks like the weather is going to be beautiful but a little on the chilly side which means short & long sleeves, open toe/closed toe shoes……kwim?

Renovations can be a mess but oh so worth it when all is said and done.

Only two work days for me this week and then we're off!:yay: WFD - Chicken pasta parm with peppers, green beans and garlic bread.
