The What's For Dinner Thread - October'11 (recipe index in OP)

Morning, all! It's another grey day, here. The twins are performing in the Hope of America program tonight, so I'm running around today to get everything they need. So, it's going to be leftovers for the family tonight. We have meatloaf and tomato soup to go around!

Here's the recipe for the soup:

Indian spiced cream of tomato soup with whole wheat couscous

3/4 C. whole wheat pearl couscous
1 Tbsp. olive oil
1 whole medium red pepper, stem and seeds removed and diced
1 whole medium onion, diced (I used dried, minced onion)
3 cloves garlic, minced
1 whole 1-inch piece ginger, peeled and grated on a microplane
1 14 ounce can petite diced tomatoes with juices
2 Tbsp. tomato paste
3 C. vegetable stock (I used chicken)
1 whole bay leaf
2 whole dried red chili peppers (optional, I didn't use these)
2 tsp. garam masala
1 1/2 tsp sugar
1/4 tsp salt
1/4 tsp pepper
1 can chickpeas, rinsed and drained
1 Tbsp lemon juice
3 Tbsp coconut milk or heavy cream (I used half and half)

Fill a medium sized pot 2/3 of the way full with water and bring to a boil. Add the couscous and a generous pinch of salt and cook until the couscous is al dente, about 7 to 9 minutes. Then drain and set aside.
Heat the oil in a medium pot over medium heat. Add the bell pepper and onion and cook until softened, about 7 minutes, stirring occasionally. Add the garlic and ginger and cook 2 minutes more, stirring constantly. Stir in the tomatoes, tomato paste, stock, bay leaf, dried red chili peppers, garam masala, sugar, salt and pepper. Turn heat up to high and bring to a boil. Then cover the pot, turn heat down to simmer, and cook 10 minutes, stirring occasionally. Turn heat off, cool slightly, and remove and discard the bay leaf and dried red chili peppers.
Transfer 2/3 of the soup to a blender and puree until smooth (or use an immersion blender). Pour the pureed soup back into the pot with the chickpeas and lemon juice. Bring up to a simmer over medium heat, then turn heat off and stir in the couscous and coconut milk or heavy cream. Taste and season with additional salt and pepper, sugar or lemon juice as desired.

We were scheduled to go to a winemaker dinner tonight, but I canceled it so Fran could rest. I'm thinking something easy with boneless chicken breasts. I'll let you know if I figure it out.

She has been very cranky all day. We see the wound Dr. again tomorrow, so we'll see how that goes.

Today is Wednesday and traditional dinner night at mum's. I'm going to take it easy and ask for a doggy bag. Don't want to infect the rest of the family just yet.

It is beautiful out today, no wind, blue skies and I am stuck in my office. At least I have a big window I can look out.

After work I am going over to play with my boys. I can't wait.

Doug doesn't have bells or choir tonight so we have a Wednesday off. I think we will go for a nice long walk after dinner.

Brandi ~ Are you having fun? I sure have been thinking of you. I kidnapped Doug on our 25th to Vegas. We had a ball - hope you are to.


It is raining cats and dogs today. The farmers are not happy (but actually they complain all the time - never happy). We are right in the middle of planting and this will put them back a week or more. We also have a funeral here at the church this morning. I hate to see it rain or snow on a day that is hard already.

When I left the house this morning I told Doug that I needed a "Lilly fix" and I would leave right after work and be home around 6. Oh my goodness you all should have seen his face - makes me laugh just thinking about it. He said, "No way, you come home after work (I get off at 4 - he gets off at 5) I need to go to!!" Well, ok then!!! I guess we are BOTH needing a "Lilly fix".


WFDT ~ Sirloins, Baked potatoes and a green salad. I have called and told the kids I was bringing dinner - they were thrilled!!

You are right! I hope our WDW trip works out that way. With Fran and Arline, we'll have to slow down and rest.

First things first: dinner tonight will be some kind of chicken dish. I found a recipe on allrecipes that looks good, and I have everything on hand to make it, so I think I'll go with that. I have a meeting to go to at 6:30, so I need something easy and fast.

Second: I need to ask you all to keep me and Alan in your thoughts right now. Things are happening that could impact our family greatly. I can't go into too much detail, now, but we could use some good thoughts coming our way. Don't panic, though, the stuff that's happening is good, we just don't know how to approach it. If y'all could send me prayers for peace and clarity, I'd appreciate it. I'll update you as I know anything concrete. Sorry to be so cryptic!

Ellen - Enjoy your Lilly fix! I think both you and Doug deserve it!

Brandi - Enjoy your time away. I know I'm counting down the days to August 5th and my London trip. I really need some time away! Although, I really don't want to wish the summer away, quite yet.

Alison - You and Fran are in my prayers as you plan your trip to WDW. I hope that all goes well for you!
