The What's For Dinner Thread - November '09(recipe index in OP)

I forgot to mention tomorrow I am making the Roast beef Po Boys. I am sure I'll have left over for sunday
 
Good evening ladies.

The little guy is teething and he was really :sick: He was on my lap until his Daddy came to pick him up. He was crying in his sleep:sad1:

Marilyn- i am amazed at teh size of that storm. Our weather guys say we are on teh northern fringe of that monster so we will just get a dusting, if that. You be careful!

Marisa is sucking down Nuvo tonight.:upsidedow SHe does not drink but her Sis Il, the worst mother was there for dinner. The twins are two, they do nto talk, they barely walk a bit, and are not eating "real" food. risa wanted to fix them plates of her boiled dinner but was informed they don't eat that. she then took out a can of beefaroni for them :mad:


Dinner was out at a small grinder place. I had a gyro plate! YUM!

Last night I did cook, panko breaded chicken breasts and pasta, sauced with a cross between an alfredo and a scampi sauce.
 
Laura - as soon as you started the story about Caili and the play I said to myself..."that's just what Laura needs".:rotfl2:

No kidding! I am glad you all found it amusing. I don't think Caili's teacher knows just how over-scheduled the girl is. Fortunately, Caili thought it was amusing as well and agreed that we aren't looking for any new activities.

But truthfully, I've reached a point in my life when I prefer the calm sameness of our routine.

I've found that wishing yourself out of the routine is sometimes a bad thing. Like tonight, I think I just volunteered to help out with the rink's skating competition. And a big box of fabric arrived today because a couple nights ago I was pretty optimistic that I could make Caili's skating outfits.

Ugh....Ross just came through the door to express that he signed me up to make 4dozen cookies for the dance tonight

You're a good mom. I hope Ross had fun at the dance.

I will try to check back in here tomorrow, but if I don't, have a great weekend everyone. I really hope you NOLA ladies have a lot to celebrate Sunday night.

Lots of you have great Super Bowl menus planned! I really haven't decided on what the football food will be. Probably something easy, like nachos or chips & dip. I'm going to fix the prime rib early in the day. I'll fix the au jus, horseradish sauce, some kind of potatoes & sauteed spinach. I'm addicted to cooked greens lately.

Prayers for all of you dealing with this terrible winter weather.

We're all snug a bugs here. Someone I know who lives about 7 miles from here posted a picture of the amount of snow she has already, 12 inches about an hour ago! It didn't really start sticking until about 4:00.

Have lots planned for tomorrow. Going to make PW's Sesame Noodles, plain without the chili oil for the youngest DN and regular with maybe chicken added for the older DN and I. I also have pot stickers and some chicken, cilantro dumplings that I'll probably make too.

Then we'll build a snow fort using sand toys on the back patio, it's pretty protected so they can run in and out and not track too much snow in.

I also have some craft projects planned for them.

I'm thinking in addition to making Buffalo Chicken casserole and nachos for the Super Bowl I may make some potatos skins. :cloud9:

Ladies- marisa would just curl your hair with those two poor babies. They go to the same pediatrician as kady and he is very proactive. He insisted on Birth to Three and told her that she better not mess up our he was reporting her to CPS. At that time they were not being taken out of their car seats. She will not cook for them, not even an egg. The BTT folks have determined that they need to be tested, they think they may be autistic. SIL said they are not, after all her DH "researched" and has decided they are fine, just have a texture thing going on. Marisa flipped! After asking her if she knew even one sign that a child was autistic with no response, Marisa told her that she better go along with Dr and allow the tests so that these kids could have the services available in our state. My SIL is disgusted, they have money for cigarettes but not for medicine; money for collectable toys but not for shoes or car seats. He and Marisa will buy what the children need but will not give them money.

You want to know how she decided that the kids just have a texture issue? They will not eat a piece of apple...it is wet. They will eat a cookie...it is dry. Problem solved....she feeds them cookies. :sad1: Thank God the state is involved now, these two selfish ignorant people need supervision to make sure the boys have a fighting chance.

This goes in to my theory that parenting is not a natural as some people think. There is a woman were I work that if she calls her child "Kid" one more time I am going to jump on her. She never shows any compassion.

The texture thing if real is much more than just food! Hopefully the State will keep up and not drop the ball. I hope the babies are not Autistic just under stimulated.

Tonight is my attempt at Roast beef po boys. I hope I don't embarass NOLA.

I found these little guys on PW's website

Super (Appetizer) Bowls

1 package (12 Oz. Package) Wonton Wrappers
1 pound Ground Turkey
2 stalks Green Onions, Minced
2 cloves Fresh Garlic, Minced
2 whole Inches Fresh Ginger, Minced
6 teaspoons Low Sodium Soy Sauce
Pepper
FOR THE WASABI MAYONNAISE:
Mayonnaise
Wasabi Powder

Make your wasabi mayo first. This will get stronger as it sets up, so be mindful of that. Amounts will depend on your personal taste. You only need a small dollop of wasabi mayo on each super bowl. ; ) Start by adding the powder, mixing it together and tasting. Adjust as necessary. Place the mayo in the fridge when you’re satisfied with the taste.

Preheat your oven to 350 degrees to make the wonton bowls. Spray a small muffin tin with cooking spray. Place one wonton wrapper into each hole. Making sure it is pressed down to the bottom. Bake at 350 degrees for 10-12 minutes or until golden.

In a large bowl, combine turkey, onion, garlic and ginger. Season with pepper. Add the soy sauce. Mix together well (careful not to over-mix or the meat will be tough). You want the mixture to be a nice light brown color.
Place a medium saute pan over medium heat. When your pan is hot, add the turkey mixture and cook until done (just a few minutes).
To assemble: place a small spoonful of the turkey mixture into each cooked wonton wrapper. Garnish with a small dollop of the wasabi mayo and a sprig of thinly sliced green onion (optional).

Nancy- Reading about these kids make me sad. Glad the state is getting involved. I don't understand people how can a mother do these things to a child? I'll never understand. You also got me curious so now I'm looking for Nuvo to try. I know I have gotten some really good wine with you girls around :worship:

Wendie- I hope the dance was fun. Your such a good Mom making 4 dozen cookies at the drop of a hat.

Kat - I loved your Sammie story! :love: I may have to do that with the taco meat. But the kids love them, even if their Dad doesn't. And belive it or not, my Mom loves them too, but she makes hers into taco salad.

Sheryl - That stinks about the insurance. I think all those insurance companies are like organized crime. Don't even get me started on our homeowners insurance although I'm sure you have similar stories being in the hurricane zone too.

Laura - A whole box of fabric? As is making more than one costume? I don't know how you have the time, but I'm sure the costumes will be beautiful.

Janice - You may be starting something with the roast beef po boys. Those are Kenny's absolute favorite and he thanks Sheryl every time I make them. :rotfl:

Nancy - I was thinking autism after your first post. I'd be happy to talk to you or to Risa about it if you have questions. The food issues may be sensory, especially since they aren't talking. I had that problem with Hailey and the OT kept telling me that she had severe oral motor sensitivity. She still has issues with food textures, although she started adding foods to her list with too much trouble around age ten. The one thing I want to point out is if the boys are diagnosed with autism, the therapies and treatments will not cost the parents anything. And at age three, their therapies will come from the school district. From what I understand from my former special ed lawyer (a CT native), CT has wonderful programs for special needs students. They just have to get tested. But MOST importantly, the earlier the interventions begin, the better the result for the child. Sorry this was so long.

Kenny's step mother is taking P & A with her to the movies today. She will also give them their Christmas presents since she didn't see them over Christmas. They will return with Hailey's Christmas present from her as well. It is ususally something from the dollar store, so while she doesn't mind doing that to Hailey, she doesn't have the guts to do it to my face. :headache: I would normally have no problem handling this, but Kenny has asked that I not cause "trouble". It gripes me to keep quiet, but I swear, if my child knew she was being slighted, I would not be able to do so. She, thank the Lord, has no idea, which is probably the only thing that enables me to hold my tongue.

Quiet here today, no one snow flake but frigid temps.
I fly tomorrow so no Super Bowl for my hubby so I'm feeling guilty.

That child must be in so much pain both physically & emotionally.

Exactly Maria,his cuts and bruises will heal but his heart and spirit have also taken a beatin.
That is what scares me,he is truly a wonderful young man and I am so happy he is a friend to my boy.
I hope his spark has not been dampened by these cowards.

I know its not just here and as a Country we have come far.
Scotland was one of the first countries to allow civil partnerships.
I guess I just thought we had come farther and in a strange way the boy's (and my nephews) reaction has given me hope for the future.
I am very proud of the young men my sister and i have raised.

Regarding your ticker - ya'll are gonna enjoy WL. We stayed there in 2006 and loved it. I have lots of pics of the resort, although I don't know if any are on facebook. But I can load some there if you're interested.

Okay - so who all is going for the F&W this year? I had to cancel our trip, but with so many of ya'll planning a get-together, I might have to find a way if only for the weekend.

Here is a photo of dinner last night. I made chicken picatta, toasted Israeli couscous, and roasted asparagus:

The mozzarella sandwich is really easy! Here is the recipe:

Bagna Cauda sauce

4 tbsp. butter
4 tbsp. olive oil
1 salt packed ancohovy filet, backbone removed and mashed to a paste
2 cloves garlic, mashed to a paste
1 tsp. lemon zest
2 tbsp. lemon juice
1/2 lemon peel in long strips
parsely
salt and pepper to taste

combine all ingredients except lemon peel and parsely and simmer for about 10 minutes to combine flavors. Keep warm.

For each sandwich, alternate slices of baguette and fresh mozarella cheese into a stack. Poke a skewer through the stack, then remove it and stick in a piece of rosemary (take off all of the leaves except for the piece that stick out of the end). Stick another piece of rosemary into the other end. Place each sandwich in an oven-proof dish.

Cook in a 400-degree oven until cheese just begins to melt, about 6 minutes.

Pour bagna cauda sauce over sandwiches (as much as you want), and garnish with parsely and lemon peel. That's it!


I am so excited because I finally broke down and bought myself a standing mixer! I have been wanting one for years. I was able to combine a gift certifcate from my inlaws with a free shipping code from Macys and a rebate to get the Kitchen Aid artisanal series mixer for just over $100. I used it with the dough hook to knead this morning and have two loaves of bread baking in the oven right now. Hopefully they will be good!

Not sure what is for dinner yet....John and I are heading over to Whole Foods in a bit to pick something out.
 
28 inches so far! Want to know how I know that, my crazy 14yo godson walked outside no shoes, pants legs pulled up and stuck an old broom handle in the snow. :scared1: :sad2:

The two youngest godsons walked down to play with the girls, the 14yo lasted about 15 minutes and he is sitting on the couch eating chips. :rolleyes: They are a few more minutes then it's time to come in for the day. Hopefully I can get the 14 yo dressed, he's down to the last pair of pj bottoms he was wearing under his snow pants. :rotfl:

Made them peanut butter and jelly sandwiches and hot chocolate for lunch, will do the sesame noodles with dinner.
 
Thank you all for your nice comments about Caili. It really was just a little classroom play, but she clearly did enjoy it.

Now, today, I hope you don't mind, I'm proud of Liam. I received a letter saying that he was selected as band student of the month for January for his effort, positive attitude and consistent contributions in class.

Nancy -- That is so sad about those little boys. I'm glad they have Marisa on their side.

Marilyn -- :eek: That is a lot of snow!! I'm glad you are staying warm and safe.

Vickie -- You are doing a great job raising your boy! I hope that young man is able to find a way to heal the emotional wounds as well.

Becky – Can’t tell you how much we appreciate y’all cheering for our Saints. We’re the underdog and need all the good thoughts and cheers we can get! Peyton scares me!

Marilyn – Gotta love those kids, too funny! They don’t feel the cold when it comes to having fun (or their version of having fun).

Laura – I’m sorry if you took my laughter about Caili and the play the wrong way, I wasn’t laughing at y’all , intended to be with y’all. You should be so proud of Liam…effort, attitude and positive contributions are compliments to be so very proud of!!!!:thumbsup2
 
Vickie- that story just breaks my heart

Nancy- those poor helpless kids, I hope the state can give them the help they need but its so sad to me that they're just not getting any nurturing at that age.

Gretchen- I can't stand when a child is slighted whether they are aware of it or not. I would have a very hard time holding my tongue but good for you for being the better person.

Becky- I love my Kitchen Aid mixer and have been happy with the dough hook as well.

Laura- congratulations to Liam! Those are great qualities to be recognized for and you deserve to be proud.

We were out shopping today for a mattress for Zachy and had lunch out. We were still pretty full tonight so I just made a pot of tuscan tomato soup and we have enough leftovers of that for lunch tomorrow.
