Hi Everyone!

I'm just checking in quick from Disney. :) We are having a great time. The weather has been beautiful; we've been able to do almost everything we've wanted except so far no TSM (we plan to correct that tomorrow) and we've had some good meals. We got back from a nice lunch at Kona recently. Beck and I will give a more detailed report once we are back, but I just wanted to say hi and to let you know we are thinking of you. Your names all come up frequently.

I hope everyone is having a good week, and I'll see you again soon. I should be getting a call from Greg any minute to say he is in Orlando! :goodvibes

Hi all - busy shopping day for me here. Finally got my cards so I'm gonna get them done and in the mail tomorrow. Bob's cooking dinner - chinese, while I work on cards. The weather was so bad this morning they sent him home (he works for a construction company). We've had a record amount of rain in the last few days.

Dinner is whatever I pull out of the freezer. I have not decided if I am going to stay irritated with Buddy. He survived the meatloaf yesterday ;). If I decide to like him today dinner will not be beef stew or chicken pot pie. If I decide to be more angry he is getting Shepard's pie. If I decide to be nice he will get some kind of meat and potatoes not in one pot. He needs to be glad I am not furious, he would get bean burrito bake or Mexican lasagna.

I am having my Mom stay for 2 days starting tomorrow. I am praying for patience and trying to get ready mentally. I hate that I get so stressed when she is here.

I don't have any idea what I'm doing for dinner tonight. Kenny may be feeding the kids and himself the best way he can. I'm meeting with my mother and brother tonight so prayers for me please.

See - I just wouldn't cook at all. I'd make me a pb&j or cheese sandwich and leave them to fend for themselves.

I calmed down so Buddy is off the hook. I made a veggie and quinoa soup but then I felt badly becasue he would just choke eating that and I am not that mad at him so I made him tuna. He took Marisa and Kady to gymnastics class and will bring them back her so that she and I can go shopping for an outfit for Kady's winter concert tomorrow. Poor Marisa is getting sick of depending on someone to drive her around and for someone to take Kady to her activities and to the bus but it cannot be helped. I think Buddy is going to take Kady Christmas shopping this weekend. Jeff only has one day off before Christmas day and he usually takes her. I don't think Pa minds stepping in but Kady does love shopping with her Dad.

We've had a front sitting on us since Friday, dropping buckets of rain. The ground is a squishy mess and the water just isn't draining anymore. So we've had lots of street flooding all over the area.

I so feel for Marisa - its hard to be dependent on others when you are so used to doing things for yourself. Hang in there, girl, it'll get better!

15 Minute Meal: Chicken with BLT Gravy
15 Minute Meal: Chicken with BLT Gravy
Ingredients

* 2 tablespoons EVOO - Extra Virgin Olive Oil
* 2 pieces boneless, skinless chicken breast, halved across
* 4 pieces boneless, skinless chicken thighs, trimmed up
* Salt and pepper
* 4 slices smoky bacon
* 2 leeks
* 2 tablespoons flour
* 1 cup chicken stock
* 2 small plum tomatoes
* 1/2 cup dry white wine

* 1/2 cup cream
* 1 tablespoon Dijon mustard
* Crusty bread, to pass at table

Yields: Serves 4
Preparation

Heat 2 skillets each with 1 tablespoon EVOO over medium-high heat. Season chicken with salt and pepper and add to first skillet, cook chicken 12 minutes, turning once.

Meanwhile, add bacon to second skillet. While bacon cooks, halve trimmed leeks lengthwise then slice 1/2 inch thick and vigorously wash in a colander then dry on kitchen towel. Add leeks to bacon and saute to soften 5-7 minutes. Sprinkle flour over the leeks 1 minute. Stir in stock and tomatoes and reduce heat to a simmer.

When chicken is done remove to platter and deglaze the pan drippings with wine, scraping up the bits and color 30 seconds, pour drippings into the gravy pan, stir to combine.

Finish gravy with cream, stir to combine and when sauce comes back up to a bubble, turn off heat and stir in Dijon mustard.

Spoon BLT gravy over chicken and serve with crusty bread torn into pieces for mopping.

i haven't said anything but my brother in VT has been in the hospital...not doing very well...he is in since sat and has had a seizure andhigh fever. i think he will be ok, hopefully, time will tell. he may be in for a couple weeks. i do not want to post details here but will share if you pm...

I took The Boy along tonight and between my instructor and the other adults I was beat down to submission.

Ive really missed it but with missing so much being ill my fitness and technique is waaaaay down so Ive been putting it off.

Got most of my cards done, just need to drop them in the mail tomorrow. Missed being able to go to the post office, they are closed from 1 to 2 and I couldn't get back before 5:00, I have to get the proper postage for Vickie's card.

Got my cards done today! They were dropped in the mail box this afternoon, so they are on their way! You should all be impressed! I did yours before addressing any for my "blood" family! You guys are more important!

Just waiting for Alan to get home to eat dinner. I'm starving, so I hope the elk steaks are good. They smell good, but time alone will tell!

The staff dinner was nice tonight but it was longer than I had hoped. If I didn't have this dang job I sure would get a lot more done ;) Tomorrow is a busy day. We have to leave by 4am on Thurs morning to catch our 530 flight (:eek:) and have to get the rest of the house clean, laundry done, dogs stuff squared away, and PACKED - this is after working all day and the church wide dinner and program tomorrow night. *sigh* I can sleep on vacation, right?

I didn't get any results yet but I talked to the nurse and she promised he'd call as soon as he read them all. If I don't hear anything by lunch I'll call again.

My Vera Bradley order arrived today and I must admit it was worth the $$ to get them here. She will LOVE them!
 
I made this for the dinner tonight and it was really really tasty. Great reviews on All Recipes, too! I skipped the cheese and the onions.

Sally's Spinach Mashed Potatoes

Prep Time: 15 Minutes
Cook Time: 35 Minutes
Ready In: 50 Minutes
Servings: 8

Ingredients:
1 (10 ounce) package frozen chopped
spinach
6 potatoes, peeled and chopped
1/2 cup butter
1 cup sour cream
1 tablespoon chopped onion
1 teaspoon salt
1/4 teaspoon dried dill weed
1 cup shredded Cheddar cheese

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
2. Cook spinach according to package directions. Place potatoes in a pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender but firm. Drain, cool slightly, and mash.
3. In a bowl, mix the spinach, mashed potatoes, butter, sour cream, onion, salt, and dill. Transfer to the prepared casserole dish. Top with Cheddar cheese.
4. Bake 20 minutes in the preheated oven, until bubbly and lightly brown

PB&J is nowhere as much fun as torturing through food. Someday I'll share my entire "Make Buddy Suffer at Dinnertime Food Scale" For a man who says he eats anything he is one of the fussiest eaters I have ever encountered. The kids used to ask when I was going to get mad so that they could have some of the meals he hated they liked :rotfl2:. I have not been very annoyed with him lately but he is really grouchy this time of year and is totally getting on my nerves. I am tryong to temper my temper so that is why I gave him tuna, kind of like you having PB&J. After the ride to Gymnastics last night Marisa would have given him Liver :lmao:

Is it the Holiday Season? I am not feeling it this year and wish I did. Even all the decorating has not made me really festive.

We decided to cut back on our shopping this year and that is a good thing because I don't even feel like doing that this year. Usually I love to get out there and at least buy for the little ones but it feels like a chore this year. Whatever it is, I have to snap out of it because I am not done shopping, have no menu planned for the Holiday meals, have not thought about what cookies to make for the swap on Sunday and am almost out of clothes, my ironing is piled that high. Buddy always gets testy this time of year, he is estranged from his family so there is always something missing for him and without Kady here this Christmas he is more down than usual. His mood is catchy though so I am afraid that we will all just avoid him if he keeps this up.

Dinner last night was Ruby Tuesday. I had the tilapia and brown rice pilaf, which was excellent! Kady had the mac and cheese and told Marisa is reminded her of Chef Mickey's mac and cheese :goodvibes She is having Disney withdrawal

Good Morning. Quick check in. Thank you all for your kind thoughts on having my Mom over and for my brother. I am sad and mad at the same time because he is having liver issues due to drinking. I am not sure of the extent...I was told inflamation but it has been a big secret so really don't know what to think.

Dinner will be meatloaf, buttered noodles and corn and peas. Andrew has his concert tonight. I asked him what he is playing (he takes percussion) and he told me some stuff and then the only thing I remember is....the triangle! ;) He told me that it was very difficult to play and that there is only one so he is the "triangler"! :lmao:
