The What's For Dinner Thread - November '09(recipe index in OP)

Ron starts his new job Monday. :woohoo: So excited medical coverage kicks in after 90 days. Benefits are so much better than his current employer. He planned on giving a notice to his current job but the new company really needed him Monday. Oh well.

WFD- Portuguese Cacciola sandwiches (I did not make my own, I cheated and bought it made)

Here is an explaination of what it is with a recipe.

Caçoila from Pico Island
(Portuguese Stewed Beef)

Note from the source: I hesitate to post this recipe because there are countless versions of caçoila using different types of meat, such as pork butt, and different ways of serving it (in a bowl or on a sandwich) that I'm sure someone will take umbrage. But this particular recipe comes from a friend from the island of São Miguel, a neighbor of Pico in the Azorean archipelago.

A caçoila is a large clay pot (cazuela in Spanish) in which this dish is often made. Traditionally, the pot is soaked overnight. The next morning the ingredients are added, then the pot is covered and placed in a very slow oven—250F (120C)—for 7 to 8 hours, or until the meat is tender. This is a stovetop version that my recipe testers quite literally devoured.

For pork lovers, you can use the same amount of pork butt cooked in the same same manner.

1 (4 1/2 pound) rump roast, cut into 2- to 3-inch chunks
1/2 cup crushed red peppers See NOTE, or 1/2 teaspoon crushed red-pepper flakes
1 large onion, cut into slices
1 bunch parsley, coarsely chopped
3 cloves garlic, crushed
1 bay leaf
2 tablespoons unsalted butter or lard
2 cups hearty red Portuguese table wine
2 tablespoons tomato paste

The day before cooking, coat the meat pieces with the crushed red pepper and place in a covered bowl in the refrigerator overnight. Scatter the onion slices, parsley, garlic, and bay leaf in the bottom of a Dutch oven. Place the meat on top and dot with the butter or lard. Mix together the wine and tomato paste and pour over the meat. Bring to a boil, reduce the heat to a simmer, and cook covered until the meat is very tender, about 3 to 3 1/2 hours, turning the pieces occasionally to keep moist. Serve with boiled white potatoes and roasted red peppers.

NOTE: Crushed red peppers are exactly that: red peppers that have been ground. Once processed, some Portuguese families, like mine, brine them, others prefer to add olive oil and salt to preserve them. If you can't find bottled crushed red peppers, you can make your own: Remove the stems, but not the seeds, from 2 or 3 large medium-hot red peppers. Place them in the bowl of a food processor fitted with a metal blade. Add 2 tablespoons of olive oil and 1 tablespoon of salt. Whir until blended.
 
Hey all...sneaking back in....:tiptoe:

After tomorrow, things should finally slow down, a bit at least. I'm good, but exhausted! Thanksgiving was fun, but travelling always makes me feel super behind when I get back. And now with only 2 weeks until Christmas break for the kids, I wonder just where all the time went. Little to no cooking has gone on around here for a while. I made some spaghetti tonight, but it was jarred sauce (gasp) and frozen garlic bread (double gasp!)

NOLA gals--hope your weather turns out pretty and not nasty. We had some winter precipitation on Wednesday. But it was just gross! And now it's SUPER cold! Like in the lower 20s tonight! BRRRRR!

I have managed to get up most of my Christmas stuff. I still need to put the rest of the ornaments on one tree and put some lighted trees outside--but other than that we're good.

I hope everyone else is well and is getting into the Christmas vibe. Little man is fussing so I should go see what's up.

Cameron was supposed to contact us yesterday & email the 3D sonogram photos, neither happened.
Tomorrow I'm going to get my hair cut & colored.....can't be gray for Mickey. I know I need to go out.

Off to make some more holiday cards for Iraq, tomorrow is our last mailing.

Its a wee bit less money :scared: and only a 6 month contract so he is not sure about it but the boast it has given him is priceless.

He had not had an interview since leaving school and was stressin it big time but he is feelin a wee bit better aboot the situation.

He gets paid till January so we'er no oot on the streets yet.:)

I thought I was going to my parents for pizza last night, but we ended up having lobsters and oysters instead

I don't think there is a drooling smilie. I so wish I had lobster and oysters for dinner tonight instead of pizza!! :)

And yes, we are very excited about the trip!

Janice, We actually ALWAYS hope for snow!! It's so rare, it's a really big deal even if it's just seeing a few little flurries!

I guess that is just the difference between the geographical areas. I like snow well enough, but I certainly never hope for it. It would probably come at inconvenient times or in vast quantities.

DH came home with a job offer for the interview he had yesterday.

That sounds pretty good to me! Even if it isn't permanent, it gives him a few more months to look.

We just had takeout pizza tonight.

I'm sorry it's not the perfect job, but glad it gave him a boost. DH said that as soon as we get back from our trip he's hitting the pavement for anything job related. He really wants that firefighter gig but we just can't wait much longer for an answer - esp if the answer is no! :eek:

Sheryl once I had the antibiotics I started to feel better. Thats the worst part I'm starting to feel better and feel so guilty being lazy. I feel I need to get back to life and being productive instead of laying on the couch. Actually I think I need some chains not ropes to tie me down. The girl who covers for me at work said you put that guilt on 1 shoulder and going to Dis on the other and see who wins out. We all know that answer so I'm trying HARD to rest.

Morning all,

Looking forward to our first flurries of snow here. As long as it is lite I love it.
I am going bed shopping today for DS. We need to get him a big boy bed and mattress set to get his room finally finished. He is one spoiled little guy. My wonderful parents are buying it for him.

After shopping we are having them over to see the decorations and dinner.

Not sure what is for dinner. I am thinking of stopping at the fish market.

Maria- I just deleted my thoughts about Cameron, I am so conflicted about her behavior. I think that this si another reason why she is simply not ready to care for a baby. I cannot imagine dealing with her like you and Gregg have been doing. WIshing Gregg to feel better!

I don't think you are nuts! There is a part of this Northern gal who looks forward to a little snow. Enjoy your pretty flakes, those fat fluffy ones are usually only around towards Late winter/early Spring for us and they are gorgeous!

Ann- it is too bad that DH cannot offer a notice but he needs to do what he needs to do. I'm glad that he has found one that works well for all of you!

Dinner was good last night. Gail had a nice meal but the company was awesome. She made a toast to celebrate that this is the first time in 8 years she had all of her children home for a meal at the same time. :sad1::goodvibes She also had Kim's boyfriend family to celebrate, their son is getting ready to deploy to Afghanistan. It was nice to meet them, we like Alex a lot. Buddy said he was "raised right" and has felt that way since we all went to dinner after seeing TSO and even as a young man in HS he took his wallet out to pay his share of the meal. My old fashioned man insists that my sons are ready to pay for dinner so he has been drawn to Alex for a long time. Gail and I are just impressed that he can put up with my high maintenance niece:lmao:

Maria -- My comment about Cameron was a bit abrupt, and I hope you didn't misconstrue it. Being a teenager certainly does not excuse her behavior (like Nancy said, it only demonstrates more why she is not ready to be a parent) but for your own peace of mind, I would take her immaturity into account before getting overly hurt or upset if she doesn't always come through when you expect. I know that is really hard, given how much is at stake for you. You and Greg remain in my thoughts and prayers.

I feel sorta the same... I can't remember her age, but know she is just a teen. It's sorta cruel that teens are fantastic at getting pregnant but don't have the maturity (and less face it - brain development) to raise a child. You're in such a bad position and I'm so sorry :hug:



This morning was our gingerbread house making party and I had some irate mommas. This doesn't come from my area but from another committee; they always make X amt and there is always leftover. They made X amt today and all the houses were gone in 30 minutes. We had to turn away lots of children :sad2: I am sorry for them, but there was nothing I could do about it - even if I was in charge I couldn't magically produce houses :confused3 We've never done reservations but will have to next year to ensure everyone gets one.

I will say that I was disappointed in the behavior of one particular mother, who happens to be chair of one of my committees. For an event that brings in LOTS of visitors and prospect members, she put on quite a scene. I understand being disappointed but yelling at me in front of other people doesn't help anything :confused3

We have a Christmas party tonight. I'm making a new pasta salad that I found on Allrecipes.com. Has bacon in it so it must be good :laughing:
 
Hi, everyone. This is a quick pop in between packing, laundry, and decorating.

Things here are good, but hectic. I'm trying to get everything done before I leave my family for a few days! It's so cold here, though, all I want to do is snuggle in front of the fire!

I have no idea what's for dinner. My brother and father will be in town, so we may do something with them before we all head for the airport, but who knows. We always have mac and cheese in the house, as well as chili, etc., so we can do stuff like that, in a pinch.

I won't be back until Thursday night, so I won't be posting until Friday. I hope you all have a great week, and have lots of yummy food! I'll be looking for pictures and recipes when I get back.
 
I am back from visiting with my friend. Unfortunately they ran out of cookie tins so we couldn't do the walk. We had a nice visit though.


Not sure yet what dinner is but I am tired and I am not moving from this house. :upsidedow
