The What's For Dinner Thread - May '09(recipe index in OP)

Ann - Your last few weeks are going to fly by! Enjoy the time you have with your son, because it's all about to change!

I need to ask for some prayers, if you guys don't mind. My dear friend called last night. Her DIL went into labor the night before Mother's Day. She was 28 weeks pregnant. They tried to stop the labor but couldn't, and little Claire was born in the early hours of Mother's Day. She weighs almost 2 pounds and is breathing on her own, so far. However, many things could go wrong, and they are all worried. Any prayers or good thoughts you could spare would be welcome!

Make it a great day, everyone!

Glynis, :sad2: it makes me sad to think about less time with my little guy. I get teary thinking about it. He is a Momma's boy and I am worried about him adjusting to sharing me. I am going to have to make extra snuggle time for him when Emma is napping.

Prayers coming to the little Claire and her family. I know someone who's neice was born at 28 weeks too. That was 4 months ago, the baby is now up to 8lbs but still in the NICU. They have a long road ahead of them, but miracles do happen.

Robin, pressure cookers remind me so much of my Nana. She loved to cook in that thing and everything she made tasted great... now my mind is smelling and wanting some of her lamb stew she use to make.
And yes, I have wanted a soft serve cone of coffee with the crunchy sprinkles since last night!

Glynis--sending out prayers to baby Claire and her family. DH is a twin and he and his bro were born around 3 lbs, 2 months early. MIL didn't even know she was having twins until the delivery! But now they are almost 34 and happy healthy guys!

My wee nephew was born very early and he was touch and go for a while.
Had to have surgeries and was it was not very promising......

Fast forward 14 months and my SIL sent me video sunday morning off him taking his first steps.

Wee ones are stronger than we think, sendin love and good vibes ower the water !!

I have footie tonight so the boys are on there own for dinner....me...I'll pack a PB&J for half time.

Have a good one lassies...x

Robin- I want a softee serve right now! Actually I want to eat anything that is not nailed down and that is not a good thing.

Glynis- prayers for little Claire. My cousin has had several early births and the babies are fine. Medicine has come a long way so please keep positive!

Ann- 24 weeks already? Getting closer.:goodvibes

You ladies have been chatty!

Glynis -- One of Caili's friends was born very early and spent several months in the NICU. She is now a healthy, almost 7 year-old. Like Vickie said, wee ones are stronger than they look. Thoughts and prayers for Claire.

Ellen -- I am thinking of you and your family today. I know it is a tough day.

Marisa -- Thanks for the fruit pizza recipe.

Boston was nice. It was so clean I felt like I was in Disney. Lol. I am planning to spend about an hour or so tonight on catching up with this thread and also uploading pictures. I can put a mini trip report. Oh and those people in Boston like to drink! Omg!

I think you are the first person I have ever heard call Boston clean. And yes, there is a lot of Irish blood in Boston. I am glad you had a good time.

Sheryl -- I hope you, Chris and Alexis are feeling better today. Take it easy. Those viruses come back if you try to do too much too quickly.

I get tired just reading about your schedule.

It will get better after we get through this weekend. I hope Mariah feels better and doesn't share the strep with the rest of you.

Robin -- You are not the only one craving soft serve. All I've been thinking about since reading Maria's post is the soft serve black raspberry ice cream I've had on the Cape.

Stephanie -- It sounds like you are going to have a great time this weekend. Enjoy it! And I will definitely think of you when I watch the show tonight...I will also head over to FB to check out your pictures.

So, in honor of my potential weight loss journey, I gorged at a chinese buffet for lunch and will have mongolian BBQ for dinner
 I would gorge too! Good luck with WW.

How is Greg?

First, I am glad you got your nap in. You are getting so close...lucky you that little Emma will arrive before the summer gets too hot.

Greg is doing well...he is in a Florida swamp right now completing the last phase of Ranger School. If all goes well, he graduates next week.

Lauren -- I was wondering how your sister was managing now that your mom is living with her. Sometimes those situations are harder on the caregiver. I am sure she is happy to do it, but still I wish her strength and patience.

Alex gave me 10 hours of no arguing for Mothers day.

Do you get to pick the day? That has so much promise!

I'm trying to be strong but I must be feeling better cause boy
I'm having a lot harder time dealing with recovering lately. Sorry for
being sobby.:guilty:

Don't feel sorry. You have been through a lot, and long recoveries are frustrating at times. Hopefully, you'll feel so much better on the other end that you'll forget the long road it took to get there.

My sandwich shop would not give me a sandwich yesterday. I was
 I would have been too!

Glynis/Ann- I think if I had a little boy I'd be in lot's of trouble at the children's place. Fortunatly, I don't usually care for the girls clothing

Caili doesn't like their clothes most of the time either, but it is not because of the colorfulness. As Becky can attest, Caili sometimes wears outfits that would be better viewed through shades. I think the styles are too trendy. Caili thinks they look weird. She does like their pajamas though.

Today, Caili has gymnastics after school, but I will have time to cook something when we get back in. If I ever get off the computer, I am planning to head to the fish market to see what looks good.

MAN, I went back and read everything, and I had all these multi-quotes set up, and then I got booted out and lost everything! So, apologies in advance for forgetting some of the stuff I wanted to say.

Sheryl, I am sorry to hear that you are not feeling well, along with everybody else! Why would Alexis have a fever from allergies? That seems weird.

Glynis, I hope all turns out well for little Claire.

Lauri, good luck with your continuing recovery.

Bethany, when you said that you could not get a sandwich, I thought of Seinfeld too!

Speaking of Seinfeld--Kathy, what is Seinfeld chicken?

AAAH, I can't remember anything else that I wanted to say! I have a mind like a sieve.

Here is the salmon and orzo from last night. It was really good!

Tonight we are having vietnamese summer rolls and a coconut shrimp and sugar snap pea curry.

Greg is almost there! Will he be coming home for a bit after graduation? (I know all will go well :thumbsup2)

Caili is one colorful girl :thumbsup2

Glynis, Prayers for Claire and her family. My friend's neighbor had a baby girl not too long ago that was born around 27 weeks and now she is doing so well...I hope the same for your friends.

Laura, My sister is doing OK with Mom. Lots of funny stories to tell...like my Mom switching the vase my sister had flowers in, fighting with my sister on how much to eat and pushing plates away so fast they fly across the table, insisting she ate lunch when she didn't (yesterday she said I brought her a sammie...). She is also addicted to crossword lottery tickets...no coffee or cigarette (yes, she still smokes but cut down lots) first thing in the AM...she needs her lottery fix! I am going there on Friday since my sister has to work that day. (My sister rents space in an antique center and works several days a month so it works out well...my BIL is a retired Port Authority cop who works PT too).

Yay for Greg graduating!!!

Thank you everyone for keeping them in your thoughts and prayers...

OK, I am babbling...waiting for the baby to wake up so we can go. BBL to catch up more...

Becky, that orzo looks great. Recipe please, if you don't mind. TIA Your coconut shrimp and snap peas sounds good too...loking forward to those photos! Can you tell I am getting hungry?!?!?!

I was going to ask about the Seinfeld chicken too? Please share Kat.

Morning Y'all,

Hey friends tough morning here. Feeling under the weather but better than last night. I had to try to get my poor girl to school. The dr said if she didn't run anymore fever she could go. She missed so much school. Well she woke up crying that she couldn't breath at all. After much sinus flushing & a little of the hard stuff (afrin) I got her breathing. I had to give her time to flush it out & cough it up. She had an appetite & no fever, but was still coughing some. But she wanted to go & didn't complain at all. I got her there about 15 minutes late, I hope she makes it the whole day.

...hey,Ive found out myself recently just how much support these fine lassies can give, plenty love and hugs to go round !!

Oh I like the sound of that. Who knew our WFD girls were "fine lassies"! :goodvibes

You all take care! There is so much going around and if you are run down you will wind up very sick!

I told Buddy about you Po Boys and he sooooooo wanted one! Okay, maybe two! Hew is in Heaven when I tell him we are having grinders for supper, I get him a Roast Beef from a shop that make these gynormous grinders! He eats a whole one but I cannot see how, they are over 18 inches long and way high!

Thanks Nan! I found some old antib. last night & started taking it. I'm feeling a little better but itching. Guess that's why I still had those pills, uh?:rolleyes1 I found another one I'll bring in today. I want to make my injection appt tomorrow!

An 18" long sandwich!!! Buddy must be a big guy & I know he works very hard! He must to eat like that & still be in such good shape. We get two 12" poboys & always have leftovers for lunch the next day.

Mariah has strep throat, I think it's going around the westbank.

I asked the dr, if Alexis shoud be tested & she said she didn't see any signs of strep. Her throat wasn't her biggest complaint. But Chris & I might be getting it. I have to think so, because the rx I started taking last night was for strep! And I do feel a little better today. Hope Mariah gets well quick! That is one good thing about strep, it usually clears up quickly with antibiotics.

Thanks everyone I've always loved reading this thread and know how great the women are on here THE BEST! Thanks Lauri

I've know you have been through more than your share of hard times! But I can attest that these women are THE BEST!!! If you need friends you've found them here!! Please hang around (when you feel up to it)! I sometimes get too down & overwhelmed to even manage to post here, but then I'm missing my support system & need to jack myself up & get back here! Having friends that really care ( like these girls do) makes such a difference for me!

:grouphug:

He's a regular around here.;)

Really! I'm not the biggest Segal fan, but when you find a mega-star just down the street, it kind of blows your mind. One of the workers always carries our stuff out to the car for Bob. He told Bob he was glad that he didn't say anything to Segal, that he likes his anonimity. But then he went on to tell him, he comes in all the time for Red beans on Mondays or hamburger steaks & his favorite is the Roast beef poboy! :lmao: So don't talk to him but we will tell you everything he eats!

My sandwich shop would not give me a sandwich yesterday. I was

:confused3 What!?

Thank you for thinking of my Mom. I think my sister needs prayers more than anything!!! ;):lmao:
Have a great night!

I'm praying for all of you!

Sheryl, I can't believe everything that's going on! Please feel better & know I'm praying for all of you:hug:
I'm using my new MACBook, loving it!
Dinner tonight was parmesan crusted pork cutlet & salad.

If I keep up like this, I'm going to have to change my name to Maria! Are you feeling all better from the sinus surgery? Has Greg had any more pain, especially with the added stress y'all are having?!

You should! Here's where we'll be
http://www.sweetwaterfarmbb.com/
And Chaddsford Winery for drinks Friday afternoon

Y'all have fun the place looks beautiful!

Good Morning! So far so Sunny this morning!

Kat- my Aunt loved Steven Segal! She would watch his movies any time that they were on.

I am 34 weeks. It is going so quick, and I feel like I still have so much to do!:scared1:

Gosh I didn't realize you were that far along already! I hope you get everything ready for her.

Your parents do sound like very good people! How is your Mom feeling from the fall?

I need to ask for some prayers, if you guys don't mind. My dear friend called last night. Her DIL went into labor the night before Mother's Day. She was 28 weeks pregnant. They tried to stop the labor but couldn't, and little Claire was born in the early hours of Mother's Day. She weighs almost 2 pounds and is breathing on her own, so far. Oh many prayers for little Claire & her family! :flower3:

Ellen, :hug::grouphug:

Marisa, A keilbasa burger? One of your stores, makes the sausage into patties? Coke rewards! & thanks! ;)

Dinner tonight WILL be caprese salad & something! I need to use the fresh mozzarella Angelina brought me from NYC.

While I'm posting I missed more stuff!!

Aimee, I forgot to say earlier, that I hope that you have good luck with WW! It's worked well for me. :wizard:

You ladies have been chatty!

Now we are going to have to get Bethany to rate our cities cleanliness! ;)

I'm so glad that Greg is in his last weeks of school! :cool1: Many prayers & wishes that he beats the swamps!

Alexis loves the clothes there! Blingy & trendy is soo her. But I agree with Caili! Chris bought her a bunch of clothes from there in the fall. But it's all so trendy & outfit specific nothing mixes & matches. You have to have the shirt that matches the pants or it doesn't work.

Sheryl, I am sorry to hear that you are not feeling well, along with everybody else! Why would Alexis have a fever from allergies? That seems weird.

The dr said she had allergies & a virus. But she thought the virus was on it's way out. We'll see. :confused3 Thanks for the sympathy! ;)

If you're mind is like a sieve, mine must be a colander!

Becky that looks delicious! What is that with the peas & how did you fix that?

Laura, My sister is doing OK with Mom. Sorry to hear you are having a tough morning. I hope you and your sweet girl are feeling better.

Thanks for asking my DM is still sore, but on the mend. She was very lucky, I think she was just trying to make me a nervous wreck!;)

Prayers for Miss Claire

I have to hit the grocery store on my way home (and I forgot extra shoes so I'll be in pumps, grrrr). We'll fix something that is on the list... I hope.

I am leaving for my first WW meeting in about 10 minutes and I'm nervous! :confused3

No need to be nervous! I know you'll find a group of supporters & who knows maybe even a new group of friends!

Ann,

(multiquoting didn't work) I'm glad your Mom is improving! :wizard:

I doing all right, and the school hasn't called so that's a good sign.

Sheryl- I thought I would have gotten a call from the school too, her allergies are so bad she looks awful. The nurse usually sends them home with the first sneeze.

Aimee- Have fun at weight watchers, I don't think you need to be nervous. I think about joining, I have about 20-30 pounds to lose, but I'm sure I'd find a way to cheat. Sorry about your shoes, I don't even own pumps. Sneakers, flipflops, and a pair of winter boots. I do have shoes that go with my work uniform, but they are pretty ugly- they look like brown nurses shoes.

Ann- Glad your moms feeling better.

Laura- Clean isn't the first word I would use to describe boston, but when you compare it to other cities I guess it is. Paris and NY are not the cleanest cities I've been too, but when I was in Germany and Switzerland- they know how to keep a city clean. Emma's a big fan of children's place pj's too, she has 3 pair. I don't even bother buying any other kind, they won't get worn.

I'm doing really good at putting off cleaning my closet, I better get back to work.

Glynis- Do your kids get out of school soon? You must be counting down the days. Thinking of little Claire and her family.

Our school is out at 10:15 a.m. on may 29. We are leaving for California at 10:20 that morning. Basically, we are picking the kids up, and away we go! We are all so very excited! I've been doing shopping and packing for the trip as I can. Everything is purchased, and I made 25 T-shirts for the extended family to wear the first day in the park. I also made a special "Baby's First Trip" shirt for Timothy, and 12 shirts for all the grandkids to wear one day. We'll take a picture of all the kids somewhere in Disneyland, and that will be my dad's big Christmas present from them. It's something we do every year, and he (and my mom) look forward to it all year.

I did find out that Katie's church camp leaves for the high mountains the day after we get back from our trip, so I'm also having to pack all her gear for that trip so I can get it to the leader's house before we leave. So much to do, so little time left! Ack! I need to get in gear!!!

The orzo recipe is very easy. Here it is:

Confetti Orzo

1.5 cups orzo
2 tbsp. olive oil
1 onion, minced
1 carrot, peeled and diced
1 red bell pepper, diced
1 zucchini, diced
2 cloves garlic, minced
¼ cup dry white wine, or use chicken stock
¼ cup minced parsely
¼ cup romano cheese
Salt and pepper to taste

Cook orzo according to package directions. Rinse under cold water, then return to pot and toss with 1 tbsp. olive oil. Set aside.

Heat the remaining tbsp. olive oil in a large skillet and sauté the carrot and onion over medium heat until softened but not browned, about 8 minutes.

Add in the garlic, pepper, and zucchini, and cook, stirring, until softened, about 5 minutes longer.

Pour in the wine and stir until absorbed.

Turn the heat up to medium high, and add the orzo to the skillet. Cook, stirring, until orzo heats through.

Remove pan from heat and add cheese and parsely. Toss to combine, and season with salt and pepper to taste.

Serve warm or at room temperature.

Sheryl, the vegetables are scallions, mint, peas, and butter lettuce. All I did was heat up a little olive oil, and toss everything around a bit. Then I added some chicken stock, covered and cooked until the peas were tender and the lettuce was wilted. It took less than 5 minutes total.
