The What's For Dinner Thread - May '09(recipe index in OP)

Sheryl - I'm so sorry about Alexis! Allergies are no fun! Jacob and Mary both have seasonal allergies in the Spring. It's horrible! Mary's eyes and nose run and she sneezes a ton! Jacob gets all plugged up and can't breathe. He uses Breath Right strips at night, and we flush him out each morning. Both kids take Claritin or Zyrtec in the morning. They have to do it every day from March through June, at least! I'm also hoping that you feel better soon! Sore throats are the absolute worst! It seems like I can handle anything over a sore throat!
 
Chicken Seinfeld

4 boneless skinless breasts
1/2 c. flour
1/4 c. chopped basil
1/2 c. feta cheese
2 Tbsp. butter
1/4 c. white wine
A dash of cream or half & half
1/8 c. fresh chopped dill
2 Tbsp. olive oil
2 plum tomatoes, sliced
4 cloves chopped garlic
1/2 c. shredded mozzarella
1/8 c. lemon juice
salt & pepper

Dredge chicken in flour seasoned with salt & pepper. Saute in olive oil until just under done. Top breasts with sliced tomato, basil and feta. Cover with mozzarella and bake in a 350 oven until cheese is melted and chicken is done but not dry.

Melt butter in a saucepan, add garlic and cook until browned. Add lemon juice, wine and a dash of cream. Simmer until moderately thickened. Add fresh dill to the sauce and spoon over chicken breasts.
 
Laura, My sister is doing OK with Mom. Lots of funny stories to tell...like my Mom switching the vase my sister had flowers in, fighting with my sister on how much to eat and pushing plates away so fast they fly across the table, insisting she ate lunch when she didn't (yesterday she said I brought her a sammie...).

This brings back many memories of how my Mom was, call me anytime.:hug:

Going to an Orioles game tonight and we're having boxed lunches for dinner, tuna salad for me.

The keilbasa burger is like a big patty of kielbasa. SHHHHH dont tell anyone! I get it at costco! :rotfl2: I just grilled them and ate them like that. Jeff had his on a bun. We are not that creative.

I have more coke rewards to send to you tomorrow!

I took kady to the doctor today and they said her ears hurt because of the pressure from her allergies. Other than that she is fine. I did talk to him because she has put on 5 pounds since the beginning of January. Her pants dont fit and I am afraid that since she can eat anything, she will:rolleyes: They told me that she is fine, but try to limit the snacks and she doesnt have to make up for the last two years in a few days. She is 54 pounds, but she is a short little thing. Her belly is poking out! BIG TIME! I took her to Children's Place for jeans because nothing fits her. She insists on wearing her size 5 super slims, but as she rips the knees, I dont replace them with that size.

I just worry that she will end up like my brothers and I did. She was so skinny for so long, that it is strange to see her with the weight on her. Since her doctor said this in front of her, she came home and asked for sliced strawberries for her afternoon snack. I hope I can keep her eating the healthy snacks.

We are off to dance, then we will have our tacos when we get home. I cant believe that i am eating the same thing Glynis' family is!!! YEAH!!!
 
Kathy That Steinfield chicken sounds so good. I wish I had some feta here but I am not going back out.

I took the day off from work to get my garden ready for planting. I have to get out to the nursery to find some more veggies. I have my peppers and tomatoes planted.

Marissa Kady will settle down keep her active. Alex went through a chubby stage now the kid is 5'10" and thin.

Aimee Good luck with WW. I picked up a WW 15 minute recipe magazine. Lots of good things in there.

I was going to tell this to Aimee since I thought it might be helpful to her, but maybe it would be good for all of us. I came across a show on lifetime called "Cook Yourself Thin." There recipes look really good and flavorful, pretty easy to for someone as busy as Aimee.

Marisa- My daughter's pretty skinny, I was to as a kid, and my inlaws are all pretty trim, but I constantly have to remind my husband she has BOTH families genetics. Just because she wants a second bowl of cereal doesn't make it neccasarry. I also try to stress no matter your size, you need to take care of your insides, even if you don't gain weight a bag of chips might not be the best for your heart. Of course I'm preaching all this to the person whose surgeon told him to gain 30 pounds, it's been over a year and he's gained 10, so I think my sermon might be falling on deaf ears. I hope none of that came across as insulting, it's hard to type your thoughts. I think all little kids bellies stick out a little.

Chicken burgers for dinner, I'm not sure how they will turn out because the mixture looks pretty soft, we'll see. I'm done rambling for now, see you all later.

This looks so good! I do not usually like an orzo salad type thing, the ones I have were mainly Italian dressing :confused3. This is something I would love!

This morning she had a banana and toast with a little jelly. She did not snack or graze at all after that. I think she forgot how much she likes bananas.

Marisa, she likes apples int eh afternoon too. I don't offer sweet snacks so she is used to having fruit.

Funny thing, she has not had the treat for a birthday before so yesterday she was raving about the "thick thick brownies that Cameron's mom made for his Birthday!" "Nana, they were so thick! And they were shewey! And they were crispy! How did she do that all at once, Nana?" :rotfl2:

Dinner is leftovers. I have eaten everything that is not nailed down here and it is scary! I am afraid to WI tomorrow night. So I might as well have a glass of wine to make ;)

Welby told me that her wine store has the juice to make Ice Wine if she wants. I want whatever kind she made for her wedding but she cannot remember what it was....it is like a vino verde/Riesling cross. So good! She is making a batch of merlot and gave me some Blackberry merlot to try. This girl is spoiling me!

Greg is doing well & actually had a follow-up with the doctor today & being all his tests were ok the are just chalking it up to an "event". Wish we had more of an answer than that.

Today I went for a cut & color...Amen!

Glynis was 2lbs 7 ozs so please pass on to your friend there are so many success. I'll keep them all in my thoughts & prayers.

Sheryl- I thought I would have gotten a call from the school too, her allergies are so bad she looks awful. The nurse usually sends them home with the first sneeze.

Our school is out at 10:15 a.m. on may 29. We are leaving for California at 10:20 that morning. Basically, we are picking the kids up, and away we go! We are all so very excited!
I did find out that Katie's church camp leaves for the high mountains the day after we get back from our trip,

Sheryl, the vegetables are scallions, mint, peas, and butter lettuce. All I did was heat up a little olive oil, and toss everything around a bit. Then I added some chicken stock, covered and cooked until the peas were tender and the lettuce was wilted. It took less than 5 minutes total.

Glynis, She is always back & forth between the zyrtec & claritin, most of year. Chris takes her off as often as she can but then it's right back on again.

Don't freak out too much about Kady's weight gain. It's to be expected after her not being able to have anything for so long! My normally skinny child gained about 10lbs one summer! We kept an eye on it and the weight came right back off.

Meeting went well, though my unplanned lunch nearly ate through all my points for the day :rolleyes1 They don't have a core plan anymore; they combined both plans into the momentum plan :confused3

Tonight we're having lemon herb pasta, it has arugula in it but I'm throwing in asparagus and smoked salmon, too. Rachael Ray mag has no nutritional info for anything so I'm just going to guess :confused3

We leave June 19th.......I was going to go with Greg to the concert but he just informed me he may be back in Boston...ugh timing!
