Ellen I am sorry you and Laura are going through having your husbands sent a so far away. Many :hug: and God bless. When I was married my husband was called up to be deployed during Desert Storm but luckily that was when it was discovered he had hypertension and they couldn't find the right combo of drugs to control it. Needless the Navy doc weren't to nice about it.

Aimee You do what I do when I'm going to diet :rotfl2:I load up too.

All this talk about butchers made me dream about going to a local butcher for getting a job doing insurance claims for them :confused3 What a weird dream they had their aprons on and all this meat was all around I did end up getting the job plus a date :confused3

Tonight is leftovers I made rotisserie chicken on my grill and cheesy potatoes last night.

Alex gave me 10 hours of no arguing for Mothers day. I am still waiting to collect :lmao:
 
Well, color me embarrassed! After that long post, I totally forgot to tell y'all what we're having for dinner!

I was planning on dijon chicken and spinach, but was just informed that none of my kids like cooked spinach. Well, too bad for them! I like it, and that's what we're having. I'll steam some broccoli for those that want it. Dessert will be the leftover Kiwi Lime Cloud we had yesterday! It was so yummy! And quite low sugar/fat, too!

scotlass--Why sure we can be facebook friends! I'm "Stephanie Krause Thompson" and I'm friends with most the ladies on this thread--so I should be pretty easy to find.

Yeah, I'm really excited about this weekend. Scott's family (for the most part) are really cool and I love hanging out with them. We're going to a winery Friday night for a Meet and Greet (and some wine tasting ;)) And Scott's bro and fiance aren't having any attendants except the kids at the wedding. It's my two, my niece and the bride's niece.

Oh and I decided at the store to make spaghetti with meat sauce. Some garlic bread and caeser salad. None of it will be home made--but easy and quick is all that matters this week
 

I'm adding creamed spinach and carrots to dinner. Had a Lean Cuisine today for lunch and it had that so I decided to make it for dinner too.

Sure. It was so refreshingly yummy!

Kiwi Lime Cloud

12 C. angel food cake cubes
2 6 ounce containers of custard style vanilla yogurt
2 tsp. lime peel
1/2 C. lime juice
8 ounce container Cool Whip, thawed
6 kiwis, peeled and sliced

Arrange half the cake cubes in the bottom of a 9 X 13-inch baking dish. In a mixing bowl, combine the yogurt, lime peel and lime juice. Fold in the Cool Whip. Pour half the yogurt mixture over the cake cubes. Spread to coat evenly. Top with kiwi slices. Repeat cake and yogurt layers. Cover and refrigerate for 3 hours or until set.

I used sugar free angel food cake, and sugar free cool whip. This was yummy!!!!!
 
I wanted to share my latest cooking experience-

I made my first rue for mac and cheese tonight! Rachel Ray had it on her show yesterday so I thought I'd try it. DH and I loved it while DS tried it and that was it. It was really easy and soooo good!

Nancy & Disney Ron-It's ok it was a while ago. Just a slow recovery after a back fusion in Nov and a total hip replaced in Mar.

Spaghetti Bolognese Sauce...or Spag Bols in the Scotlass Hoose !! ;)



2 Rashers smoked streaky bacon.
2 medium onions.
2 cloves of garlic.
2 carrots
2 sticks of celery.
2 heaped teaspoons of dried Oregano
500g Minced Beef
2 x 400g tins of chopped tomatoes
small bunch of fresh basil
100g Parmesan cheese.
Olive oil
Sea salt and fresh ground pepper


Finely slice bacon

Peel and chop onions,garlic,carrots and celery.

Place in a large casserole type pan on med to high heat.

Add to lugs of olive oil,your oregano and sliced bacon and cook and stir until bacon is lightly golden.

Add the veg and cook for about 7 mins or till veg softened and lightly coloured.

Stir in the minced beef and the tinned tomatoes.

Fill both empty tins with water and add to the pan.

Add a good pinch of salt and pepper.

Finely chop the basil stalks and stir into the pan.

Bring to the boil.

Turn the heat down and simmer with a lid for about an hour,stirring every now and then to stop it catching.

Remove the sauce from the heat.

Finely grate the Parmesan and add half.

Tear and stir in basil leaves.

Mix and add more salt and pepper if needed.


Cook Spaghetti and spoon Bolognese sauce over with the remaining Parmesan cheese sprinkled on top..........:)

Well chicken went out the window, it's raining and I decided I wanted crab legs instead.

I have a baseball game tomorrow night so no cooking here until Wednesday.

Hey yj'all ,Sorry I can't comment on everything. Had a long wait in the dr's office. Only for them to say it's a virus & allergies. Also ran another check for UTI and that was clear too. She perked up some today, but started going down again this evening. We'll see how she does tonight. She shouldn't be missing school.
I'm bummed, both Chris & I are feeling very sick, very quickly. Since this morning we both have bad sore throats & lymph glands. :sad1:

I really missed my Mom yesterday. Mother's Day is really hard. My thoughts were with you all.

Jay leaves tomorrow. I "HATE" goodbyes and this one will be wicked hard. I know there isn't anything I can do to change it, but my heart just breaks for my DD Elizabeth and GB Ethan. I just hate to see them hurt and my own heart is breaking also. So I really need to get it together before tomorrow. I guess I am just having a bit of a pity party. Sorry :sad1:

Either one of those surgeries are though to recover from let alone both in such a short time. :hug:

I love homemade Mac and cheese! I made it for my DGD a few years ago and she would not eat it....it did not taste ta way her Mom's tasted. Of course not.....it was not from a box!

I told Buddy about you Po Boys and he sooooooo wanted one! Okay, maybe two! Hew is in Heaven when I tell him we are having grinders for supper, I get him a Roast Beef from a shop that make these gynormous grinders! He eats a whole one but I cannot see how, they are over 18 inches long and way high!

I roasted a couple of chicken and bakes some sweet potatoes. We will have that with a salad. I am starving but Buddy is jsut getting in, back to Spring hours...hye is out before the sun comes up and neve gets in til after sundown.

Mariah has strep throat, I think it's going around the westbank.:confused:
