The What's For Dinner Thread - May '09(recipe index in OP)

That settles it, I need a smoker. Those ribs looked so good. Guess what?-its gray and rainy here, what a suprise. Oh well, good excuse not to cut the grass.

EJ4disney (ellen?) It sounds like you are having the same weather we are, we saw the sun for about 5 minutes today and then it was gone.

Vickie-I'm glad your boy is better. I just wanted to let you know I had a very dear friend that sounded a lot like that little girl. He was one of my best friends and introduced me to my husband. Everything he did, he did on his own. I know it bothered him, he was in the hospital when he was about 21 and his mom came to visit- that was the first time he knew she cared. He has grown into a very strong, independent person and I couldn't be more proud of the man he has become. We lived in different states, but he came to my house for my highschool graduation party. He also graduated that year and my parents had his name added to the cake. I'll never forget his face, he had never had a cake with his name on it. (Hope you do that in Scotland, or that won't make any sense!) I'm sorry that little girl is missing out on her childhood, but one day she'll be a strong young lady.

Bethany- I hope you survive the rest of the school year, we'll see you when you get home!

I think we are going to eat well, I think we are budgeting more for eating out than the week @ Pop, and the one day @ the Magic Kingdom cost us. :thumbsup2

The Cinderellas Castle lunch was the first I reserved, mostly for our daughter, but I am interested in being inside the castle.
 

Kingcrab - Sounds like a wonderful vacation. I'm sure your daughter will love the castle. We did the breakfast when my youngest was about the age of yours and she was in heaven. Made it completely worth the bank loan. ;)

I'm sorry I've missed more of you, but I'm kind of out of it right now. The news wasn't very good. Not horrible, just not good. The tumor in the lungs has shrunk a small amount, but the spots on his liver are larger. Which means that the chemo isn't working like it is supposed to. The dr has enrolled Dad in a clinical trial where he gets one really strong chemo drug and may or may not be receiving the trial drug. But honestly, the one drug he will be getting sounds bad enough. When the nurse finished telling us the probable side effects, I honestly thought my Dad would say thanks but no thanks. I may have. But he's going to give it a try. Bless his heart.
 
kingcrab - Sounds like a great line-up. We're going to Universal for a few days this trip and are considering "The Palm". I look forward to hearing your thoughts on it when you return!

thanks, its our first trip back since 2005. First with our daughter.

As for the restaurants I studied menus, and reviews for months, and think I came up with a good list.

The Palm was a late addition, we had a lunch reservation for Emeril's @ Universal, but we have a good cajun/creole spot near where I live( a good ol' boy from Louisiana runs a small mom & pop place), and we have been to Emeril's in Vegas, and thought it was just ok. When I read up about the Palm, I decided a blow out steak/lobster/crab dinner was the way to go, and my wife(the CFO) signed off on it. :)

Ill post pics, and thoughts on all of these spots for sure.

Thanks Maria, I could probably use one, but what I really, really, really want you to do for me is to have a GREAT, FANTABULOUS, AMAZING time on that cruise and take tons of pictures to share. That is one of my dream trips and one I don't think I'll ever be able to take. I want to see what your cabin looks like, what the ship looks like and anything else you want to take pictures of. Also, I want to know if the food was wonderful and what you ate and drank, etc.

And I don't think I told you, but Hailey really liked the card you included in the box of books. I realized as soon as I saw it that it must be one of your photographs and was sure when I looked inside. I don't know if I have ever mentioned it, but butterfly is one of the few words Hailey has spoken. She has carried the card around and has it wrinkled and creased. In other words, like the postcards from Disney that Lauren and Wendie sent her, she has loved it well. :love:

We had Aimee's orange beef last night and it was so wonderful! It will definitely go into permanent rotation!!!

Bacon-Wrapped Pork Kabobs
The smoky flavor of the bacon makes this dish a killer.
Serves six.

For the rub:
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon freshly ground pepper

2 pork tenderloins, about 1 pound each, cut into 1-inch pieces

12 slices smoked bacon, thickly cut then halved

12 12-inch skewers soaked in water for one hour, for serving.

For the marinade:
½ cup Dijon-style mustard
2 tablespoons honey
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon hot sauce

In a large bowl, mix together the ingredients for the rub. Add the pork pieces and toss gently to coat. Wrap a half-slice bacon around a piece of the pork and thread onto a skewer. Leaving a bit of room between each piece, continue until all the pieces of pork are skewered. Arrange the skewers on a large platter and set aside. In a medium bowl, mix together the ingredients for the marinade and pour it over the kabobs. Cover and marinate in the refrigerator for one hour or up to four hours. Prepare enough coals for a medium fire or set a gas grill to medium. Grill the kabobs over medium heat until they are cooked through, about 12 minutes. Remove from heat and serve immediately.

I dislocated my knee cap playing the Wii. I now have a Wii Knee. ( also pronounced a weenie :rotfl2:) I was able to pop it back in and was better a few days later. But then i did something to it and it is killing me. I havent heard from the doctor yet. I will call after lunch if I dont hear anything by then. I dont want surgery, and whatever treatments cant come in the way of our mini meet on Sunday!

I'm back.

I heard from the doctor and I have a torn meniscus. It is actually torn in a few spots as well as cartilage damage. They want to repair the tears and see what they can do with the cartilage because there are some broken pieces. They are going to do an arthroscopic surgery. So now I am freaking out! I just want this to feel better :sad1:

We didn't return until last night! We were able to get another night at BCV on points!!! I've realized that I need to do less vacation planning and more praying! This vacation was wonderful!!!
We did have a few heavy showers but they were great for cooling things off & thinning out crowds. Since our only priority was doing the attractions Alexis wanted it worked out fine for us. The only park that had really long lines was MK, so we were able to get her rides in during extra magic evenings. We had some really wonderful meals!!! We weren't able to get anymore character meals, but Cinderella showed up at the Princess breakfast so Alexis was thrilled with that. We didn't make it to FF decided to hang in the parks a little longer & then hang at the pool. We did get lunch at Chefs de France! I had forgotten that Ratatouille now made an appearance there!!! Just that was worth it, we were totally surprised & y'all should have seen Alexis! The food was delicious too! We also had a fabulous meal at CG! Really good! Yachtsman was very good too & we also ate at the new Kidani Village rest. Sanaa. It is ground floor level with windows opening onto the Savannah. We saw zebras & giraffe actually running & playing, it was too cool. The food was a blend of Indian & African really yummy!

I haven't loaded in pictures yet. I'll try to do it soon. oh, Alexis was so good!! The child kept herself entertained in the car by singing. I don't think she whined once the whole trip. It was all just great!

I did rent a scooter after our 1st full day, should have done that right away! That did help a lot, but I have a whole new appreciation for DH & other's in a WC or scooter. People act like you're invisible!

I missed all of you! I haven't had a chance to read back yet, so I'll bbl.

Hey Guys, I am laying in bed now totally drugged up and po'ed at myself. I hurt my back today on my way to field day. I had to take steps so I took Thomas' carrier out of the stroller to carry him in one hand and the stroller in the other and bending down my back went out. :headache:

I got some help down the hill (met another nice Mom who's husband actually works with Tom) and saw the kids but was in pain so I did not take pics or anything. The kids loved Thomas.

I did also go out with my friend. I really wanted to go out so she helped me with T Tom and off we went.

Tom is home today working on the bath but really no help...that is all I will say. Can any man do two things at once?

DM just got her test results from the biopsy. Thank you all for your prayers.There was no malignancy :thumbsup2 found, they did say there were some abnormal cells but nothing to be concerned with now. She will talk with Dr. at next appointment about the abnormal cells and how often they will recheck going forward.

Lauren, please give into your back and take it easy.

Well, everyone, we found out today that Patrick passed the 7th grade!!!!!! :banana::banana: His grades weren't anything to write home about (unlike his sister who got straight A's this marking period and A's and B's for the year), but he's headed for 8th grade. Only 5 more grades to go and then it's off to the marines for sniper training. ;)

I'm so glad he made it until the end - I'm sure it was a relief :hug:

We are back from our trip - had a great time, though we had to fly in during some major storms so we were really delayed (got back around midnight). The kids were wiped out by then but otherwise did well.

I am utterly and completely swamped at work but will check in later. I expect to be in the office until late tonight, 8-9pm or so, and have no idea what I'll eat. I just can't get through the piles on my desk. Have to run to another meeting - bbl!

Glad to see you back. I've been meaning to tell you - I tried one of those Mickey bars on my trip last month. Fab-u-lous. At least I thought so. Kenny said it was too much chocolate. :scared1: Have you heard of such a thing?!?

Baby update from Dr. today. All is well. I am 1cm dialated and 50% efaced. :cool1:Happy to hear I am making some progress, but like Dr. said that could mean a baby tonight or in two weeks from now it depends on the person. Emma's heartbeat was 143. My BP was 110/64, and I did not gain any weight.

WFD- Sausage and pasta, garlic bread.

I'm nervous because I have nothing done. Greg is getting excited, the other night on the travel channel & he saw how the QM2 was built & that's what did it for him...typical boy:confused3
We sail from NYC into Southhampton England directly & then a 2 hour car trip to London. We'll be in London for 4 nights.
While we're on the ship I have a hot stone massage planned & I will be going to some of the lectures & art auctions. I'm really excited for the planetarium, champagne bar, wine tasting & cooking classes.
In the evening I will see James Taylor as much as he performs, I love him!
We will be at sea for 6 nights & the last night which is our actual anniversary we will have dinner at the Todd English restaurant....

Of course I have the books I'm taking planned.

Aimee~ sorry about Ace. What was your question about the Ireland/England, I didn't see it.

Ann~ I'm so excited about the baby!!!!!!
