The What's For Dinner Thread - May '09(recipe index in OP)

My son is at the Dr's office right now, he didn't want mom tagging along. he got stung by a wasp yesterday and part of the stinger is still in his foot. He was pretty swollen and red this morning so hopefully he's getting it taken care of right now...:guilty:

Kathy-- I hope everything turns out good:hug:

Sheryl--Glad to see your coming along I know you will have more improvement on some days. One step at a time my girl your going in the right direction.

Thanks for your concerns about Kyle. He got a shot, antibiotics and steroids and should be improving by tomorrow!

Hey y'all, don't be worried if I'm not around much this entire week. My employee has been off since last Thursday and was to return on Wednesday of this week. She just called and circumstances beyond her control may cause her to be out all this week, which means I'll be working all week alone which will carry through the weekend and early next week.:scared1:

Bethany, we may have to re-schedule our bean cooking, I'll know more by the weekend.;)

Kat, sorry about Kyle. Glad he made it to the doctor. You have one long week ahead of you.

Marisa they did change me to Levaquin & I made the appointment but they can't take me until August 27th!

Lauren, hope Tom is better. You love them to death but it's trying when they're home sick.

I made chicken stew tonight because someone I love to death came home feeling under the weather:scared1:

Here I am again appologizing for being a tad absent the past few days. You would think that with all the extra help from mil that I would have plenty of time to post. Not so much. When I'm not at home I have to leavey phone at home with mil as she gets no service in our house. So no posting on the go. And then the weather has been so fantastic that we've been outside almost allthe time.

No worries, we are still eating. ;) thanks for ADR making for oct! Very exciting!

Kat, It's a good thing Kyle went to the dr! Whew! Sorry you're going to be working so hard this week.

Maria, I'm glad you're on levaquin. It was working very well for me, but then made me itch. I didn't want to stop using it because the sinus thing was clearing up so quickly.

Lauri, Thanks for the encouragment! I think I'm doing really well, although I didn't take anything today but tylenol and now I'm feeling it. But now it's bedtime so I take the meds, so hopefully I'll sleep well & feel better tomorrow.

Bethany, Did you try the quickie redbeans & sausage?

Dinner last night was good. The corn was not as sweet as I was hoping it would be, but it's early. Here's a pic:

Good morning!

Quick fly by and then will bbl to catch up.

Ann, Prayers for your SIL...please update us when you can.

Dinner tonight will be chicken stir fry over rice.

Have a great day all...BBL!

Quick post ... Emma is fussing.

Please continue prayers for my DSIL. They kept her over night again, still do not have answers. They are doing more test today. When I called last night my DB said they were trying to get pain under control with IVs but she was really uncomfortable. :sad1:

Good Morning! Well, good morning so far. It is going to rain again....heavy at times.....:headache: I am so tired of rain!

Maria- I hope that the antibiotic kicks it up a notch! Get well soon! Thanks for letting us know Gretchen is okay. Of course her Dad is in my prayers.

Sheryl- only 1/3????? I have zero self control, that baby would have been long gone and I would have been eying a brownie ;) Keep letting your family pamper you and you will be back on your feet sooner rather thatn later!

Kat- what a week in front of you! I'm glad that Kyle is okay. Those stings can be pretty awful!

Steph- don't apologize! If you can be outdoors than enjoy that, the nice days are few and far between. How long will your IL's be staying with you?

Laura- Greg tried to reason with kids about moving away from their friends :rotfl:Yup, it is easy to tell he has been working with adults for a long time, there is no way a kids would agree that there is any place better than home. Once they visit they will love the travel, and learn something about the country as a bonus.

Becky- I think the corn may have been waterlogged. I bought some from the store and it was good but not as good as last years early corn.

I did not cook last night. I forgot that Buddy had a dentist appointment so he dashed out when the office called. I was helping Welby bottle wine so we would have been late before even starting. Buddy got back in time to cork the bottles. This was a merlot, I liked it but was alone in that, it was robust in comparison to the others she has made. We are heading to the wine store today, she is going to show me how to make my own, I want to make a reisling and a pinot noir.

We had first season corn last night from our local farm...and the same as all of you I was disappointed. Looking forward to the yellow beans I bought!
I love fresh farm beans.

Maria, we are only about 45 minutes from Newport.

Marisa, I can not help with hotel suggestions in Westerly either sorry.

Maria & Nan, I would love for you girls to come visit us on a road trip...but, you have to give me some time to get my house back in order ;) or I will be mortified!! We are definitely going to make a plan.

Kat, glad Kyle is ok. Stings are nasty. Ron got attacked by a swarm of hornets last summer. He was trimming a tree and did not see the hive. We had to get an exterminator, I never saw anything like it...they covered the ladder like something you see in a movie. He got stung over a dozen times.
He never went to a doctor but swears he has not felt well since.

Morning all!

Nan--you must've sent some rain our way. I don't remember another July with weather like this. It's been in the 70s in the afternoons (which in unheard of in Arkansas) and then we're getting lots of rain too. Oh well! Better than the 100s we were having. My MIL will be here until Friday. We drop her off at the airport and then head out for vacation.

Kathy--glad to hear that Kyle got all "fixed up" at the dr. Stings can be brutal!

Sheryl--glad you're feeling a bit better. Take it slow!

ann--Prayers for your SIL!

WFD tonight I think is Taco Night. I'll be at work eating my sandwich and chips. Blech.

Just waiting for the furnace man to arrive to do a cleaning.

I had bananas starting to turn so I just made a batch of banana bread! The house smells so darn good, reminds me of childhood. Well I did not have any walnuts :headache: so I put in chocolate chips. I will probably send one over to my DB's house, I am sure the kids will appreciate the chocolate chips more anyway.

Hugs, and prayers to all...Gretchen thinking of you and your Dad.

Kathy, I hope Kyle is feeling better today. That sounds painful!

Keeping Gretchen and her Dad in my thoughts.

Here is the sausage recipe

4 links sausage, any kind (I used al fresco roasted garlic chicken sausage with the casings removed)

3 zucchini and/or summer squash, cut into 1 inch chunks (about 1 lb. squash)

1/2 cup pitted kalamata olives, halved
1 tbsp. capers, rinsed
handful of mixed herbs, such as cilantro, parsely, basil, or mint, chopped
2 tbsp. olive oil

Place sausages and squash in a grilling tray and cook for about 12 minutes, until sausage is cooked through and squash is browned in spots. Cut sausage into chunks and toss with all remaining ingredients. Season with salt and pepper to taste.

Serves 4

It is pouring rain and I have a lot of corn to use up, so I am thinking corn chowder with corn fritters on the side.

FYI.... I HATE insurance companies!!!!!

So they added Emma and changed all of our coverage effective dates to her birth day now, so I have claims rejecting all over the place from my maternity. Just a headache and a pain to deal with. :headache:

Just wanted to say I'm keeping Gretchen and her Dad in my thoughts and prayers.

Becky - What should I title that recipe in the index?

.

Ann, that is my all time favorite!! I'm allergic to nuts.
Of course prayers continued for your SIL. How is your DB holding up?

Nan's Private Label! I can see it now! Being Ann is only 45 minutes from Newport I can see an overnight in Newport with a mansion tour?
Marisa you in??????

Steph~ the kids are going to have Grandma detox:sad2:
Where are you headed to on vacation?

Tonight looks like chicken stew...it's always better the 2nd day. I was very happy how it turned out, haven't made it since the winter.

Chicken stew...winter meal according to DH :lmao:!!!

DB is not one to show alot of emotion. I told DM this morning I was worried about him with them still having no answers. I called DSIL in the hospital last night but she was not up to talking so I just spoke briefly with DB and told him I was here for whatever they needed. Hoping for good news today.

Thank you everyone for keeping my family in your prayers.

Kathy -- I hope Kyle is feeling better today.

Lauren and Maria -- I hope your husbands are feeling better...both for their comfort and your sanity!

Nancy -- You'll have to let us know how the winemaking works out. That sounds like fun to me.

Sheryl -- Continue to rest and recover.

Ann -- More thoughts and prayers for your SIL. I hope she hears some good news soon.

My thoughts and prayers are also with Gretchen and her dad.

Liam's team lost again last night...an ugly 11-3 affair. The good news in all this, however, is that Liam is getting more playing time. Liam played four innings at first base last night, and he had a really good hit to right field that scored a run and kept a rally alive. They play again Wednesday.

It is dreary and rainy, and like Becky, I have a lot of corn to use. I think I'm making corn chowder. I guess all the rain wasn't good for the corn or the strawberries, which were disappointing as well. The blueberries though...YUM!
