Tomorrow it's back to work. And then tomorrow afternoon I get my permanent crown put on. YAY! A new tooth! :lmao:

I'm also stressin about gettin tickets to see the Saints.

There are still tickets available but you have to purchase thru Ticket master.
The game is on Sunday the 16th and as we leave Friday the 7th I'm stressin they will not get here in time !!!!!!

Doesn't ticket master let you print out the tickets online? Could you have them sent to your resort? Can they leave them at will call at the stadium?

Yes! Vickie, don't have them mail you the tickets. You can print them from your email account. Or, you can arrange to have them waiting at will call. I use ticketmaster all the time and never have them mail the actual tickets, to have them mailed is yet another service charge anyway!

I don't think I'm any better, really... matter of fact, I woke up this morning gasping for breath and burst into tears - which does not help matters! :

Does not sound right. Are you on antibiotics as well as the nebulizer treatments? You should be. Or if you have used up the antibiotics you were on you might need another round of something stronger. Last time I had pneumonia it took three rounds of antibiotics to clear it out. Feel better :hug:

I have not uploaded any photos from the weekend yet but will have some to share eventually of Caili's pizza party and Laura's blueberry pie :love: Today I went to my inlaws and cooked dinner for them: grilled tuna, caprese salad, asparagus, and smashed potatoes. No pictures!

Speaking of pictures, yesterday as I was plating up dinner Liam started walking around saying "I am Auntie Becky! Click, click, click!" while pretending to take pictures of all of the food. Wise guy....:laughing:

I was and now am again. Watched my Ravens kick some Steeler butts! :cheer2: Now I'm watching the NY/Dallas game.

Spent the rest of the day watching 9/11 coverage. :sad1:
 

One Pot Chicken Rice



This recipe is adapted from the Claypot Rice dishes you will find at some of the Asian eateries. Cooking in the claypot provides additional flavour and visual ambience to the meal; but in my home, time is of the essence. I’ve cooked this dish in my rice cooker and can have all the preparation work completed in the morning before the usual running around after school. When we come home, I press the button and 20 minutes later, we’re sitting down to this meal. You can serve this with some sliced cucumber on the side or stir fry veg. But for this day, I ran out of time and served it as is!


My starting ingredients:

  • Chicken tenderloins, about 1 lb (you can use chicken pieces or wings etc)
  • Chinese sausage, 2, sliced
  • Sweet Potato, 1 medium potato, peeled and cut into chunks (optional)
  • Ginger, 3 slices, julienned
  • Kecap Manis or Sweet Soya Sauce, 2 tablespoon
  • (Light) Soya Sauce, 1 tablespoon
  • Thick Soya Sauce, 1 teaspoon (optional)
  • Pepper to taste


Mix all the above ingredients together and marinade for at least 4 hours (or overnight).

  • Chinese mushroom, 3 – soaked in hot water for at least 30 minutes to reconstitute. I used about 1 cup of hot water to soak the mushrooms.


After 30 minutes, slice or cut the mushroom into slivers and leave in the water until ready to use.

  • Rice, about 1.5 cups, washed.

  • Salted Fish, about 20-50 g. I get this from my Asian grocer. When I was a child, we used to go on driving holidays. There was one particular town we drove past that specialised in salting and sun-drying the fish. I still remember the smell!
    NOTE: The Asians are not the only ones that salt fish….the Scandinavians do as well.

When I get my salted fish and bring it home, I cut it into chunks and freeze it for longer storage. This way, I can use the chunks when I want it without having to defrost a whole piece. When cooked in this dish, the fish will almost dissolve into the rice (much like anchovies), but it adds aroma and depth of flavour to the dish.

Place the salted fish in the rice pot with the washed rice. Add about ½ - 1 cup water to the pot.

Place the sliced mushroom and all the soaking liquid into the pot.

Add the chicken, Chinese sausage, sweet potato and all the marinade to the pot. There should be enough liquid to not quite cover the ingredients. Place the pot back into the rice cooker.

(This is the stage you can leave things at for cooking later).


Turn the rice cooker on and cook until the cooker automatically turns off. Leave for at least 5 – 10 minutes before serving.

Dinner was spaghetti and meat sauce, sweet sausage, soft rolls and butter and a green salad. Leftovers from Friday night for dessert. Tonight will be grilled steak, cole slaw and salad.

Brian was working last night so Welby brought the girls down for dinner. Nola said "You sure have good cookin' Nana!!!!!!!!!!!!!!!' " :goodvibes Love that little Peanut!!!!!!!!!!!!!!!
 
Happy Monday, everyone! It's kind of a grey day, here. Looks like we might be in for a storm. It won't be anything like what some of you have experienced, and for that I'm grateful!

Today is a long day for Alan. He left the house at 4:00 this morning, and will probably drag himself in around 11:00 tonight. He's got a double shift today, plus a class. Poor guy. I need to call him and see if he wants me to bring him dinner.

Speaking of dinner... because Alan's gone, I won't be doing any fancy cooking. The kids just don't like it. So, tonight's dinner will be cowboy quesadillas, steamed broccoli and ice cream. Simple and satisfying.

Robin ~ I so agree with you. Ethan is VERY smart - actually gifted smart - so that is why they went ahead and sent him early. His preschool teacher said it would be "criminal" to hold him back. WHATEVER!!!!! They did (not listening to me, of course, you know, I know NOTHING!) but now they are really regretting it as he is a little guy. I know it will all work out in the end.

Laura ~ those coconut crips sound very good. Never heard of them.

Well......we had a great weekend. And it didn't hurt that Nebraska won. Again it wasn't pretty but a win is a win and I will take it. Stephanie & Elizabeth did real good with all of the walking and the steps to our seats (row 95 - and with Preg. mommas they were up and down A LOT!!). We really had a good time and had some great conversations. They make me laugh - and I love that.

Matthew followed us home last night as Doug, Matthew, Marty and Jay are all in a Golf Tournamant today. Doug is in the height of his glory. He loves that he has his own foursome. This torurnament is at Matthew's first College he graduated from. He got his Associates degree at UN at Curtis, was Captain of the golf team, graduated in 2010 and then transferred to UNL for his last 2 years to get his Bachor's Degree. But they have always played in this tournament and really look forward to it every year. They will have a GREAT time.

I have Zumba after work, then home to either a quiet house or a houseful of guys. I have no idea when they will be home.

WFDT ~ The guys will eat at the Country Club and depending who is there later I will probably just eat my leftover lunch from yesterday.

Hi Everyone,

Catching up a little during halftime. We are in full throttle here, and things are only going to get busier. Liam is playing fall baseball. He moves up to Babe Ruth in the spring, so this is an adjustment league. It really seems to take forever for the kids to run to first base. It seems like the infield could throw it around the bases and then throw to first and still get the out. Caili is skating three days a week and has ballet two days. Next week, Nutcracker rehearsals start and she wants to add a yoga class. We won't even get into my work or the kids' schoolwork.

Anyway, tonight's dinner was pasta fresca.

Laura – Last night’s dinner was just ok with me. I let Johnny decide where we were going and he chose Texas Roadhouse.

Photos from Caili's pizza party on Saturday. All pizzas are grilled, because I STILL have not replaced my broken oven. For those of you keeping track, that means I have been without an oven for 10 months. It's been just fine. The range still works, and the rest of the cooking has been via grill, toaster oven, etc. But, I have heard serious grumblings from family that I need to replace the oven for roasting a turkey before Thanksgiving, so I have started to poke around.

Okay, I have to be honest about the PW... I think some of her food is good - far from healthy - but good. I think her writing is funny and clever. I HATE her bajillion cooking pictures and scroll through them as fast as possible. I think she's a brillant marketer who hit the blog world early on, used the financial resources she had at her disposal, and created an empire. Obviously a saavy businesswoman.

However, there is a lot of buzz on the interwebz about the reality of her life. She married into one the wealthiest families in the South, for one... and probably doesn't "do" half the stuff she claims to on her blog. Sorta like Jon and Kate plus 8. Simply due to lack of time, but of course not lack of money. Her life isn't about a small town ranch... which she uses as an angle a lot, I think.

I watched her show anyways and was completely underwhelmed. I enjoyed seeing the kids, and life on the ranch, but I found her completely unengaging on camera and boring. Her writing can be so witty and clever and it didn't come across that way at all on TV. 3 of us watched it this weekend and gave it big thumbs down. The recipes weren't worth noting.

I'll probably give it a few more episodes; she may warm up. Or, she may just have already found her niche and this isn't it. I'm trying to give her the benefit of the doubt!

So, there you go... my brutally honest opinion for what it's worth :laughing:

Congrats on the tooth. Here I thought the thrill was loosing one so the tooth fairy can come ;) I guess we have morphed into the time of life where the thought of keeping teeth is thrilling. :rotfl2:

Aimee I haven't seen or heard any of that talk about PW. I sometimes feel that way about her pictures.

Aimee- I haven't seen the show, but I think Pioneer woman is meant to be a writer, not a show. And her kids make me feel really lazy.

OH. MY. GOODNESS how very true. I never though of that but you are so right. But sweetie I just about ruined my monitor spitting my coffee all over it. Thanks for the chuckle this early.

Aimee ~ I so totally agree with you on PW. But was so afraid to say anything. I have watched her a few times and each time I think - that is not the way it is on a ranch - at least not any I know of. And I know a LOT of them and some that are very profitable. She is just not believeable. The "Lodge" is so not like most kitchens. But I will stop there as I do like some of her recipes - but agree they are NOT healthy.
I am so glad you might be turning a corner and feeling better. Take it easy!!

The boys won yesterday. :banana: :cool1: They got home around 8:00 last night and they were on top of the world. Marty even won a new golf bag, and Jay won a shirt and visor. They had a great time.

Tonight is Bunko at Stephanies so I am really looking forward to that. We always have so much fun. We don't play in the summertime so it will be fun to see all of the girls again. Such a good time we have.

I am beyond excited, and Im really happy with the tickets I finally picked.
After much deliberation I went for ones close ( but not too close ) to the pirate ship. :eek:
