Laura & Ellen - Texas Roadhouse is a great place, especially for families. You get a ton of food for low prices. I’m just a seafoodaholic and tend to want it every time we go out.;)

Good afternoon! Well, it's almost afternoon, here. I've been kind of lazy this morning, and spent some time reading before doing anything productive. Oh well. Sometimes, you jut have to!

Becky - You amaze me! If I didn't have an oven, we'd be eating out each meal!

Ellen - Thanks for asking me about Alan. Yup, he came home dragging, dropped into bed and was asleep before I could even turn out the lights. Poor guy! Unfortunately, he's been working a lot of over time lately, which is good for our bank account, but not for his mental health! Hopefully, things will calm down, and he can get into a routine.

Today is my Scouts day, so I'm throwing dinner in the crock pot before I go and let it do all the work for me. We are having balsamic chicken over angel hair pasta. I'll steam some broccoli and cauliflower and call it good.
 
Just jumping in.

It's Wednesday night and right on hump day and time for me. DH comes home on Sunday. DS and I have been enjoying our time together; but there just seems to be double the amount of chores to get done. We really miss him not being here.
He's doing well in San Francisco and working hard. And he's also shopping! I think I've got myself a new leather briefcase/satchel! :woohoo:

Dinner was at mum's. Nice to not have to think about cooking for tonight.

Princess - Glad to hear your DH is doing well and shopping, woohoo lucky lady!

WFD - Becky's lemony balsamic mustard roast chicken with rosemary and garlic, pasta and a salad.

My laptop is having some minor issues and will be with my computer guy so if I'm MIA don't worry. I hate using my phone for DISing because it's too small for these old eyes to see.:laughing:
 

Morning, all! It's "Walk to School Wednesday" here, so I'm up trying to gear up for the 3.5 mile walk to and from the kids school. They love doing it, so I'm trying to be a good sport about it!

Dinner last night was really good! Very healthy, too! If anyone wants me to post the balsamic chicken recipe, let me know and I'll do it!

Today is Alan's crazy long day, so not too much cooking here. Katie and Jacob have meetings tonight, so I think I'll cave and cook the hot dogs they've been wanting. I'll just make a salad for me.

Princess - Glad your hubby is ok and knows where his priorities are! I love a man that shops for me!

Kathy - Sorry about the computer issues! Hope they can be resolved quickly and cheaply!

1. Good for you on the walking. I try to walk 3 miles every night - well me and Cooper and Doug. I love walking more than any other kind of exercise - well except Zumba - I just love that too.

2. YES!! I love balsamic and chicken and the crockpot. Sounds like a meal made for me. ;)

3. This is Alan's crazy LONG day. Seriously - the man needs to slow down or he will be sick. Bless his heart!! I thought yesterday was a killer!!

Kat ~ I totally understand. I love my beef like you love your seafood.

Princess ~ So glad to hear DH is having a great trip. He sounds like my DH - Doug LOVES to shop also. He can shop me under the table on any given day!!

It is cold and dreary out today. It is supposed to rain this afternoon and tomorrow we aren't to reach 50. :scared1: I don't know if I am ready for this or not. :rolleyes1

i have kept up but am not able to remember much lately. I am heading out to the laundramat to dry my clothes.............dryer kicked the bucket :headache:.and then to PT. I'll make time to chat when I get in

Here is the recipe I used last night:

Balsamic Chicken

Drizzle 2 tablespoons of olive oil in the bottom of a crockpot. On top of that, place 4-6 chicken breasts (I used boneless, skinless). Salt and pepper them, then sprinkle with oregano, basil and rosemary (I used about 1/2 to 1 teaspoon each). Slice an onion thinly, and place on top of chicken. Pour a can of diced tomatoes with their juice on top (the recipe called for 2 cans, but I only had 1 and it turned out great!), and drizzle 1/2 cup balsamic vinegar over everything. Cover and cook on high for 4 hours.

This was really good! I served it plain, but the recipe suggested putting it on top of angel hair pasta.

Oops! I forgot to mention that I added about 4 tsp. minced garlic to the pot. Sorry about that!
 
Glynis- The chicken recipe sounds very similiar to a Healthy Choice brand frozen dinner that I like. It also has roasted garlic. I'm going to give it a try, thanks.

Nancy- Sorry about the dryer going at such a busy time. We went months without one, it became a challange.

Ellen- We had cold and dreary last week, we've actually had couple of fires in the woodstove. They weren't really needed but just so nice to have. Today it's sunny and 80. Who knows what next week will bring!

Kathy- That balsamic chicken sounds great too. Hope your computer is an easy fix. With me it's usually not the computer but the user. I wouldn't know a what a ranch would be like either, around here we only have shellfish farms or cranberry bogs. It's amazing what variety can be found in one country, I love it.

My husband cut himself at work and ended up with a few stitches, it's in a wierd spot so he really wouldn't be any good at work today so he's home. Cabin fever has already set in for him so I sent him to the store for buttermilk and an onion. Can't wait to see what he comes home with, I bet he has no idea how many onions there are to pick from.

Dinner is shredded bbq chicken topped with onion and cheese on cornbread. Hopefully. Not sure on the veg.

Ouch! Sorry you're home with a man who has cabin fever... when DH gets that way, I know he's going to start creating home projects for us to do (ie, deep cleaning). Hate it!!



I had a followup xray this morning and even felt up to stopping for breakfast with DH afterwards. I gently nudged him towards hitting the grocery store and cooking at home but he seems content to just pick up food for every meal. :confused3 So, we're eating out again tonight. Er, he's picking up food and we're eating it here.

I think my dogs are totally digging this whole stay at home dog mom thing.

I don't even think I posted here yesterday. I've been so tired and haven't been feeling well. I had my iron tested today to see if that's it. I tend to be anemic. So, we'll see.

Today's dinner is: ham and Aimee's cheesy potato casserole. It's baking now and I can't wait!!!

I don't even think I posted here yesterday. I've been so tired and haven't been feeling well. I had my iron tested today to see if that's it. I tend to be anemic. So, we'll see.

It was really a nice walk. It was even kind of cool. The kids needed jackets. Of course, once we got walking, they heated up and I ended up piling the jackets into the stroller. From our house to the school is downhill, so it's a fun walk. For Timothy and me, the way back is long and uphill. I'm happy to say, though, that I cut almost 8 minutes off the time it took us last week! Hooray!!! My legs are still tired, though! Guess I need to work out some more!

I'm anemic too! Last time I checked, the doctor was amazed I was still standing. I get to take a lovely horse pill every morning! Oh well, it's better than the alternative!

To all who are concerned about Alan, thanks! He is tired, but he's finding some ways to stay alert. Today, for example, he had a 3 hour break between classes. He went back to the tv station he works for and crashed in the break room. He set his alarm on his phone, and made it back to the university feeling much better. I think that once the news kind of settles down (9/11 anniversary was bad), he'll be doing much less overtime.

Could someone tell me what a "lodge" is supposed to be since it's obviously depicted wrong on PW's show. I can't figure out what it is!
 
Kat- I think the lodge is just what they call it. It's the original house on the property.

Dinner tonight is the bangin' shrimp on rice noodles. This time I did have the sriracha and didn't put the sauce on it while it was still on the heat. ;) No trying to asphixiate (sp) myself tonight. :rotfl: Pretty good but needs a little more sriracha.
 
Good chilly morning everyone.

Things have been busy here. Keeping A's spirts up. He has a teacher this year is not the best at explaining the concepts of the course he is taking. I am trying to convince him that using some of the many website for help is not cheating. Who's kid is this. I would have killed for the internet when I was in school.:confused3:confused3

Tonight is library so things will be rushed again.

Dinner is spaghetti and a quick sauce and a salad.
 
Robin - I'm sorry your DH cut himself, hope he's feeling better today. I had to chuckle wondering what he came home from the store with. That sounds so much like Johnny.:laughing:

Tesselaar's is a family owned business and have been doing mail-order bulbs for the last 55 years. The family is originally from Holland....and every spring, for about 4 weeks, the farm is opened for a display of tulips. The family put the word out that the tulips had bloomed early this year and today was the opening day of the 4 week period. So, I made the effort to head for the hills to take a stroll around their 'garden'.

Morning! It's starting to feel like Fall here! I actually had to put my slippers on this morning, as I got out of bed!!!

Today is a "regular" day for Alan, which basically means he goes to work at 9 and comes home at 7:30. So, I'll be cooking today... still no idea what, though. Guess I'll go to the first post and see what hits me in the index!

Janice - Sorry about the teacher problems. We had a similar problem with a math teacher last year. Luckily, the math department offers after school tutoring with ALL the teachers, so the kids can find one that "speaks their language", so to speak, and that's how Katie got her help. I would definitely push the internet! NOT CHEATING AT ALL!!!

Not sure about dinner tonight, didn't take anything out. Found a recipe on Tasty Kitchen for a Hawaiian Pulled Chicken that I am thinking of making this weekend. Chicken thighs are on sale at a couple of places.
