The What's For Dinner Thread - March '11 (recipe index in OP)

Busy, busy again! Story of my life anymore. :headache:

Welcome to the newbies.

Did make dinner last night. Was going to make the Bang Bang Shrimp recipe but didn't have the sriracha, thought I did, but had symbal oleak. Decided to use that in place of the siracha and chili sauce. Made the mistake of adding the sauce to the pan on the burner. :scared1: Talk about SPICY!!!! The air in the kitchen and the shrimp. :rotfl: I had to plateup and leave quickly.

Going to be another busy weekend. The DN's last summer swim meet and I may be taking my godson again, have to check and see what the girls schedule is like. This time though we are going to get a DVD from Redbox, do make your own English muffin pizza's and rest after the meet.

Also going to see about getting my oldest godson gifts from the three little kids as a surprise to send in the box of stuff I have for him to take to college.
 
It's very quiet in this house today. A has needed her pain & nausea meds today, so she's dozing on & off. Jude is feeling better & must be getting ready to have a major growth spurt. He's been napping for 2 1/2 hrs now! Seems to be his thing this week.

I forgot to say that apple pie looked delicious!:thumbsup2 Pie with a scratch crust is something I might attempt once a year! A baker I'm not.

Dinner, I can't decide. Chicken thighs or tuna steaks? I have a pineapple I need to cut up & avocados that are ripe too.
 
NOLADisneyMom what about mixing some finely chopped green apples, onions, and a little softened butter and bacon, rolling the pork around it ( pounding it flatter if necessary) and roasting them? Comes out really well for me :)

That sounds awesome! I have everything except the bacon! Oh and it's Angie..

I'm sure it would be amazing even without the bacon! One thing I forgot to mention is that they stay rolled more neatly if you tie them with butcher's twine. Hope dinner turns out well!

It's Friday night - dinner was Fish and Chips. The boys usually bring it back from the shop after swim class. It's a great night....DH takes DS to class, I get 2 hours by myself! :laughing:

Janice - did you make it to the county fair or is that this weekend? Hope the car maintenance went well.

Emily - thanks for the apple pie recipe. I'm doing the DisBoard summer photography scavenger hunt. Apple pie is on the list and whilst I have already gotten a shot, I was thinking of making a pie. That recipe might come in handy in a couple of weeks.

Vickie - hope the boy's achilles is getting better. Not fun that!

Lindsay - the book date sounds great! Can't wait to see the pics.

Nancy - I was sorry to read the update on Otto. I hope it works out for the best.

Marilyn - sounds like you have a busy weekend coming up. Hope you'll be able to check in and update us sometime.



We've got DS' birthday party tomorrow and another busy day on Sunday. Not sure if I'll be able to get round to cooking anything this weekend; so I may not have anything to share.

Today we're starting to pack for Great Wolf Lodge and cleaning the house a little bit. It's the first day all week where I won't be sitting in some doctor's office somewhere! :cool1:

WFD: Shredded beef sandwiches...a taste of home recipe that I've never tried.

We did not make it to the County fair yet. Yesterday it rained on and off for most of the day,more on than off. It goes through Sunday. I need fair food and more importantly I think it is important to support the fair and local farmers.


Dinner last night was Popeye's. I was planning pork chops but Popeye's won out.:rotfl2:

Vic I hope The Boy is feeling better. Can the doctors make him some orthotics for his shoes to help give him some relief?

I would like the recipe for the peanut butter pie, please.

Peanut Butter 'Ice Cream' Pie

Ingredients:

Large box of instant vanilla pudding
1 tub whipped topping
1 1/2 cup milk
1 tsp. vanilla
1/2 cup peanut butter (creamy)
Graham cracker crust

Directions:

Mix pudding with milk and vanilla. Beat in peanut butter until smooth. Fold in whipped topping until thoroughly mixed. Empty into graham cracker crust and freeze for at least 6 hours. Before serving, take from freezer and let sit for 15 minutes.



You can substitute the vanilla pudding for chocolate and have a chocolate peanut butter pie.

You can also use other "add-ins" besides peanut butter: 3/4 cup crushed pineapple with 1/4 cup coconut for a pina colada pie, 1 cup of fruit such as strawberries or blueberries.

And yes, I licked the bowl clean...:rolleyes1

Shredded Steak Sandwiches

Ingredients:

3 lbs. bonesless beef round steak, cut into large pieces
2 large onions, chopped
3/4 cup thinly sliced celery
1 1/2 cups ketchup
1/2 to 3/4 cup water
1/3 cup lemon juice
1/3 cup Worcestershire sauce
3 tbs. brown sugar
3 tbs. cider vinegar
2 tsp. salt
2 tsp. prepared mustard
1 1/2 tsp. paprika
1 tsp. chili powder
1/2 tsp. pepper
1/8 tsp. hot pepper sauce
buns to serve it on

Directions:

Place meat in a 5 qt. slow cooker. Add onions and celery. In a bowl, combine the ketchup, water, lemon juice, Worcestershire sauce, brown sugar, vinegar, salt, mustard, paprika, chili powder, pepper and hot pepper sauce. Pour over meat. Cover and cook on high for 6-8 hours.

Remove meat; cool slightly. Shred with a fork. Return to the sauce and heat through. Serve on rolls.

Makes 12-14 servings.

We have bacon ower here the same as youse guys,I love it.
The boy never eats bacon here but he eats plates of it in Florida......with syrup !!

We are having to get him heel inserts because the trainers ( sneakers ) he wears will not be helping.
He wears converse or flat soled trainers to break in and they have no support....he's not happy about this new development,its all about the cool points !! :rolleyes:
