The What's For Dinner Thread - March '11 (recipe index in OP)

Hey lassies, I have not read back,sorry.

The boys achilles has flared up again as bad as ever.
Thats 8 weeks now of no dance training or football but after 2 nights at a gym session he was sobbing in pain last night.
The tendon was going into spasm and it was horrible,he got up this morning and collapsed when he tried to put weight on it.
He has been so good at resting it and he was to start training with the new bboy crew this weekend.....he is gutted and it is breakin ma heart. :sad1:

Now we need to get ready for our little mini-vacation to Great Wolf Lodge this weekend and then for another full week next week!

Looong day. Dinner changed to the hubby picking up whatever is the special of the day at our fav po-boy shop. & whatever wine goes with it!!! ;)

Alexis was cranky, Jude was constipated so a little fussy, his Mom had PT so she got here a bit late. I am a tired Nana! but still a happy one!;)

Kathy, Bus to AK. Bob shuttle if your considering the F&W dinner. We are driving this time. (ps that pineapple salsa is YUM!)

I made this Lemon Chicken Cordon Bleu last night and it was really good. I did make some changes. I cooked them in foil packets on the grill. I placed the chicken on a bed of fresh spinach, garlic and about a tsp of evoo and some white wine, pounded the chicken thinner, seasoned inside and out and cooked them for about 20 minutes at 350 -400.

Sounds yummy!!!

Aimee - My only concern with those yummy looking enchiladas is that my guys don't like anything too sweet. It seems like a lot of honey, do they taste sweet?:confused:

I asked DH and he thought they were pretty sweet, at least the filling.

Sheryl, I hope Alexis sees a huge improvement in things. I had mine out as a child (7) and I remember it hurt a lot but it did help things.

Funny story: I called the GI who has a new appointment maker so I don't know her at all. She tells me his first available is August 19. Um, hello? So I ask for the Nurse Practioner instead, just so I can get some drugs sooner. I get the appt and a few hours later, she calls me back and says that my GI wants to see me personally, not have me see the NP, because of the "severity of my disease" so when I ask when he can see me, she now tells me August 23! I told her I was having issues, thus the plea for the NP to see me sooner. She puts me on hold, comes back, and says he'll see me Friday at 9am. :laughing: Thank heavens I have a good relationship with him that he'll work me in! Of course VBS is that morning but they can handle it without me for a couple of hours. My body is rebelling!!

Dinner: homemade Chipotle bowls. I made cilantro lime rice and some black beans (with onions, seasonings, chicken broth, etc) plus grilled some chicken that I just put a fajita rub on along with cheese, guac, shredded lettuce, sour cream, etc. Nothing fancy but it sure was good.

Morning, all!

After a lot of thought, I decided to do the book date for my nephew's birthday. I had coffee with my SIL the other day and ran the Book Date gift idea by her. She looooved it! So probably next weekend, we are all going to go out to eat and head over to B&N. I will send Kevin, Amanda, and Chloe over to the Starbuck's in the store to get a drink and some private time and Scott and I will take Ryan to pick out books. I am also going to let him pay for them himself. He fits in my lap quite comfy and could reach a card swipe really easy. Then we'll take him up to the Starbuck's and get him a cupcake. ;)

With a very little one in the house now, I thought it would be really cool for him and give a chance to really get fussed over all by himself. Know what I mean? Thank you for this wonderful idea. I plan on taking pictures and will update you guys.

Not cooking today! We are picking sandwiches from Firehouse after work today. It's too dang hot here.

I am so far behind! I have been reading but have been trying to reclaim my house and yard. It is terrible when Buddy says that I have too much stuff to keep up outdoors. He never says a word so it was that overgrown :mad:

Sorry I just haven't been able to keep up with posting! Alexis had her tonsils & adenoids taken out on Monday. She's doing just okay. She was having so much nausea they had to call in phenergan for her.

That poor girl has had way too much! There is a patch that can be placed behind the ear and Marisa and Dan swear by it. How is she doing today?

I saw that Baby Jude was constipated. Nola's pediatrician told me to give her 1 oz of warm water and within ten minutes no more problems! He did say if there was no relief in 30 minutes give her one more oz. I would not give to a baby unless the Dr specifies but honestly, it was like a miracle drug....just warm water:thumbsup2

I know that you are the primary everything to your family but please remember to care for yourself. You do not want to get rundown.

Another real quick fly by, as I am still buried at my desk, but I am making headway and do see the light at the end of the tunnel. I will catch up real soon!!

Where is that exhausted smilie when we need it?????? Don't overdo....your dust, laundry and the jungle will still be there tomorrow. Just take it from me............no one thinned my jungle and my dust bunnies just made more bunnies ;)

Aimee The chicken gyros are awesome. I got a little heavy handed with the garlic in the sauce. I don't think I will be bothered by vampires at least until next week:lmao:

Tonight Mike and I are going out for tapas before the Josh Groban concert. So excited for a night out!

I love Josh Groban! Last I heard Donny's song for us to dance is You Lift me up. We have wanted to see Andre Rieu and he is coming to Oakdale in December for the Christmas Show. I am not a cheapskate but the tickets were :dance3: and I could not justify the cost this year. Oh well.........next time.

It's DS's birthday on Monday and his party is on Saturday. I'll be busy running around sorting out party things. And after all that chat about electronic babysitters - we've decided that DS will be getting a Nintendo 3DS for his birthday. :rolleyes1

Every time you mention dinner with your Mum I smile. My Mom stopped cooking unless she made something that she thought Donny would like. I used to try to get there for dinner on those rare occasions. My Dad was a Chef but we always wanted my Mom to cook and I miss smelling those one pot meals she created.

I know that your DS is going to have the best Birthday!!!!!!!!

Last day at work for me, for this week. I took the next 3 work days off. We are going to do stuff around here. There is a county fair that I want to drag A too. I hope the rain stays away.

Hi everyone! So, I'm working the dinner shift at work tonight, which means dinner for me will probably be leftovers, but I will be spending my afternoon baking pies. This is my favorite recipe for apple pie:

Yum...BLT's! I have some lovely slab bacon in the freezer that I am going to use on Friday. Buddy told me he craves a nice BLT for dinner. Now for Buddy "a" BLT means about 5 "BLT's ;)

Lindsay- how was Scot's birthday?

Kat- My poor Deb is not doing to well. There was a rollercoaster ride over Otto's tests but they came back positive for lymphoma. I called her yesterday and she was waiting for the result of an XRAY to determine if it had reached his chest. There are more tests but she said that they cannot wait for the results of those. If the cancer is not showing on the XRAY she will authorize one round of chemo and then go from there. Gail is bringing him home to her on Saturday. The Dr will have the type of lymphoma soon and she can then determine if they will continue the treatment. She refuses to let him suffer.

I am worried about the whole thing. She does not want him sick and wants him with her. I worry because she has long hours and is alone there. Gail is staying with my brother until she moves into her new home so he would never be alone here. I did tell her that Kady and I will take a road trip next week if she needs help with him. Otto was her first dog all her own. He is her very best little Buddy and in only 6. She took better care of him then most people do with their kids.

Dinner was grilled chicken, broccoli and cauliflower, and green beans. I just could not choke down the salad I made. :sad2: 14.5 pounds and at least 10 to go means I need to eat those greens!

Guess what we had loud thunderstorms again last night. Every time I started to go back to sleep another round would come through. I hope I can get outside today to pull up some weeds. There is one that I have kept thinking it is a flower but now I am not sure :confused3.

Not sure about dinner yet. I think it will be whatever and corn. I received my organic box yesterday and got some really good looking corn.

I think I will have another cup of coffee then get going with some cleanup. No fair today since it is supposed to be a rain on and off kind of day.
 
I so need to catch up on what everyone is doing....but I'm in a food coma right now.


We went to a friend's place for dinner. He's Italian and cooked us a substantial meal. Unfortunately, I forgot to bring my camera; so no food porn :headache:.

Cold Vodka martini's (shaken, not stirred - only for the dramatic effect here and I don't know if he actually did this)....were waiting for us on arrival, complete with olives.

We had Porcini Risotto for starters; followed by a herb crusted salmon, that he steamed and a cauliflower bechamel as a side. Loads of lovely soft crusty bread, far too much red wine.

He served up fruit and ice cream for dessert; and a couple of cups of coffees later, I'm ready for bed!

Still floating from the vodka martini, with another work day tomorrow.

Hopefully, I'll catch up on the news at the weekend....late as usual!

Even tho I'm counting calories, I made THIS for hubby last night..

1 cup Frozen mixed veggies
2 cups leftover cooked chicken (i used a rotisserie)
1 can cream of mush and chicken with garlic
1 frozen pie crust

Mixed first three in a skilled, added half a cup of milk to thin it a bit, seasoned with salt and pepper, then poured into pie crust, topped with the second crust and baked for 25 minutes, according to the pie crust directions.

He would have eaten the whole think if he could have. :laughing:
 
Good Morning! I am in slow motion today and really need to kick it into gear. I will be back later but wanted to say hi.

Last night we had grilled pizza. Why have I never done that before? It was so good and then I also had a variation of Janice's sausage and potatoes. I did everything about the same but cooked it in foil packets on the grill.

Dinner tonight is clean out the fridge and salads. I am determined to eat better so we have been eating more fruits and veggies. Tom and I are tracking on sparkpeople.com.

Thanks for asking about Elizabeth . . . . she is still nausous 24/7 but does feel a bit better. I feel so sorry for her, she does not have an easy time being pregnant, but does realize what a wonderful outcome she will have. She goes to the doctor on Aug. 2, so hopefully they will find out the sex. Ethan wants a brother and I want a little girl. We have a running discussion about this - one of us will be right!! :lmao:

Well today I am pooped!! I guess it has all caught up with me, because I had to drag my fanny out of bed and I could seriously take a nap and it is only 10 am. :rotfl:

Ethan and I had a ball last night. We shopped for over an hour before he decided what he wanted to buy for his Momma. He decided on a beautiful necklace with a key and cross on it. She will love it!! Jay is out on a train so won't be home today so we are going to celebrate on Saturday with the family, but I will go over after work to let her open her present from Ethan. There is no way he can wait for Saturday for her to open it.

Dinner tonite: Steamed broccoli and yellow rice for sure.. Have some thin cut pork chops that I have no idea what to do with.. Any ideas for somewhat low-cal pork chops?
 
NOLADisneyMom what about mixing some finely chopped green apples, onions, and a little softened butter and bacon, rolling the pork around it ( pounding it flatter if necessary) and roasting them? Comes out really well for me :)
