The What's For Dinner Thread - March '11 (recipe index in OP)

Lindsey- Happy Birthday to Scott. Have fun getting your hair done. My boys loved to have us read them books. Good idea.

Laura- You surely deserve a vacation enjoy yourselves.

Vickie- Glad the boy made it home safe it sure is tough to let go isnt it?

Lindsey I didn't think you were harsh at all. I think what you're doing for your nephew is great.

Aimee- those enchiladas are definitely going on next week's menu. Looks like something that would be a huge hit here!

Lauren- ditto the shrimp. We are huge shrimp eaters here and I know those would be well received.

Dinner last night wound up being grilled halibut in foil packs with herbs, onions and tomatoes. Tonight Mike and I are going out for tapas before the Josh Groban concert. So excited for a night out!
 
Outside was open 10am-7pm and inside was open 9am-9pm. We stayed two nights so one night, we finished at the waterpark in the afternoon, changed, and went to Grapevine Mills and had dinner at the Rainforest Cafe. It's only 2 miles up the road. Then we saw a movie at the theater there.

The second night, they got tired by the afternoon so we went out to Chili's for dinner and then came back and wandered the hotel and rented a PPV move in our suite.

I stayed outside 99% of the time even with the heat. the inside is humid and 84 degrees so I just sat and sweat the whole time. Inside, there was a breeze and it felt great. I just laid on a chair near the zero entry pool and when I got hot, I wandered into a fountain thing, got wet, and laid back down.

I found the whole hotel a lot like a cruise ship. The downstairs level has openings to both pool areas plus a big arcade, sweet shop, pizza hut fast food spot, kids spa, glitter tattoo stand, build a bear stand, hair extension stand, and teen club. All over that hotel is that magicquest game that is pricey but seemed to be really common. Be prepared for your kids to ask to play it :laughing: I think they shut the pool down so early so that you'll come inside and spend money at those spots to keep them occupied :laughing:

There is a bar and grill, but we didn't stop by there, and the main restaurant in the lobby. We ate the breakfast buffet one morning and it was really good and not that expensive. Your dinner is there I'm sure since it's a buffet then, too.

There is also an A&W snack bar inside the indoor waterpark and a snackbar outside (with chicken fingers and such). We didn't eat any of those places.

We did lots of snacking at the sweet shop because the ice cream and treats were really good... and they are open until 11.

Oh - and most importantly - there is a Starbucks. It's also open late and has refills on anything but Fraps! Seriously, I got a Trenta Iced Coffee and refills if I kept the same cup were $1!! Refills on Talls and Grandes were 50cents! The kids drank lots of passionfruit lemonades since they were so cheap to refill.

I brought that to the pool with me.

The rooms all have microwaves and fridges so we brought some snacks.

I'm trying to think what else... I was really impressed with the place. Tons of staff, lots of lifeguards, I just set the kids free and had them check in every once in awhile. They cleaned up used towels all the time and there were plenty of chairs outside and inside.

You can check in and start using the pool at 1pm on your first day so bring some changes of clothes with you. They will call your cell when your room is ready, if it's not at 1pm. The indoor area has a big changing room inside the restrooms and lockers for rent (or someone can watch the bags).

They have other activities going on, too, like a bedtime story and bingo but I had 11 and 12 year olds with me who thought that was all lame :laughing:

Really, Grapevine Mills Mall is right down the road so you could easily hop there for restaurants, movies, or even visit LegoLand that just opened. the kids I had would spend hours in the waterpark but after awhile, you need a break to do something else. There is also a lot of fast food near the mall, like ChickFilA, and downtown Grapevine is super cute to visit with more restaurants nearby.

When I took J to the orthodontist yesterday, the office manager was giving me tips about Great Wolf. She told me that it was freeeezing inside and that I needed to practically bring a parka. I'm thinking that sounds wonderful with this heat we've been having lately. :rotfl2:

Today is Scott's birthday so I am making him some of his favorite tonight: Original Kitten Chicken, (remember that one, lol? it's Parmesan Ritz chicken) macaroni and cheese, and green peas. Mmm mmm mmm!

I'm off to the salon in a little while to get my hair worked on so it's going to be a busy day.

WOW! I'm learning so much about you gals from the newby. I guess we never really got round to the formal introductions when I jumped on this thread, did we?


Let's just say that despite my post count, I'm really a shy, retiring type and haven't yet gotten round to sharing my name with too many people on the Dis.

But if anyone looks at my PTR/TRs, you'll find out that I'm married with a DS about to turn 11 with 2 cats. I work part-time 3 days a week for money $; and then work as a SAHM (unpaid) for the other 4 days.

We love to travel and have been treking across the Pacific pond a fair bit in the last 8 years because DH job is based in Silicon Valley. We choose to live in Oz and DH travels about 3 or 4 times a year. We have made the most of the opportunity to travel around the US.

It's a dream of mine to travel to your current location someday. ::yes::

Today we have more running around to do...gotta love the life of a school employee, we have to get everything done in the summer. :lmao:

So, wfd: take-out chinese. We never eat out unless we're away from home, so it'll be a treat.

Sorry I just haven't been able to keep up with posting! Alexis had her tonsils & adenoids taken out on Monday. She's doing just okay. She was having so much nausea they had to call in phenergan for her. That has improved but her jaw is hurting a lot & of course the normal sore throat. I had a spinal injection yesterday, I'm doing fine today. I only have Jude today, A's Dad stayed home with her today. Tomorrow I'll have both of them.

Dinner tonight, boring Chicken salad with leftover rotisserie chicken. If I had green enchilada sauce in the house, we would be having Aimee's enchiladas.

Still not unpacked but I have put a dent in the wash. I was so tired last night when I finally got home from the grocery store. I was in bed and sound asleep by 9:30. So NOT like me but I was so tired. Slept all night and do feel better today.

Hi Jen, welcome. I don't get here much in the summertime but I try to at least read when I can. I work full time in the summer and am off in the winter. I have a just turned 11 year old daughter that I refer to as Kiddo. Things are crazy here in the summer and my husband and I just sort of wave to each other in passing!

Ellen- Welcome home!!!

Sheryl- Poor Alexis, she had such trouble with her appendix I'm sure she was very nervous about another surgery. I know I would be. How is Jude's bedtime ritual going? He just seems so young to be crying himself to sleep.

Michelle- Welcome back, good to have you here again. Congrats on the puppy!

Lindsay- What a cutie! They get big way to fast.

Aimee- We are having your enchiladas tomorrow night if I can find green enchilada sauce, our store only had red. I'm hoping Trader Joe's has is when I go tomorrow.

Princess- I try not to share too much here either, though I would love to with this awsome group of people I am now fortunate to call my friends.

Vickie- I let my kiddo go off with some friends at the county fair last week, and it was hard! She's a little lacking in the commen sense department and it was the first time she had done something like that. Of course she came back just fine.

Lauren- Good to see you! I hope you get to add another pup to your household. My kiddo wants to go to Tufts vet program because they get beagle pups.

Kathy- You asked about getting to Animal Kingdom from Contemporary, and yes it does take a while but not long enough to worry about. We tend to go for 2 1/2 to 3 weeks at a time, so we never spend a full day in one park. If we went for shorter and spent the whole day at Animal Kingdom, the wait wouldn't be an isssue, we just tend to jump around.

Sausage and onion subs for the other two, I'm having stuffed summer squash which they won't eat. Have a great rest of the day all!

Aimee The chicken gyros are awesome. I got a little heavy handed with the garlic in the sauce. I don't think I will be bothered by vampires at least until next week:lmao:

I will say that I was amazed (appalled?) at what people will run around a hotel wearing :eek: Let's just say that before I went, I was super concerned about my rear in a bathing suit - with pair of shorts and tank over it - until I got there and realized that I had nothing to worry about. I guess because it's a waterpark hotel that people feel like they can run around in a bikini inside at the gift shop, Starbucks, arcade, etc. Sorta odd. I insisted my kiddos throw on coverups before tramping through the hotel lobby. Perhaps I'm a prude? :rotfl:

Another busy day, feeling worse today, but called the GI to see about getting in and left work early again and slept all afternoon. We went out again.

It's DS's birthday on Monday and his party is on Saturday. I'll be busy running around sorting out party things. And after all that chat about electronic babysitters - we've decided that DS will be getting a Nintendo 3DS for his birthday. :rolleyes1

Last day at work for me, for this week. I took the next 3 work days off. We are going to do stuff around here. There is a county fair that I want to drag A too. I hope the rain stays away.

Tomorrow morning I am going to take my car in for some routine maintenance. I don't want the old girl to break down in all this heat.

I think a salad is on tap for dinner for me. Of course that is unless something else calls me.:rolleyes1

I made this Lemon Chicken Cordon Bleu last night and it was really good. I did make some changes. I cooked them in foil packets on the grill. I placed the chicken on a bed of fresh spinach, garlic and about a tsp of evoo and some white wine, pounded the chicken thinner, seasoned inside and out and cooked them for about 20 minutes at 350 -400.

Hi everyone! So, I'm working the dinner shift at work tonight, which means dinner for me will probably be leftovers, but I will be spending my afternoon baking pies. This is my favorite recipe for apple pie:

Crust

2 cups AP Flour
1 tsp salt
2/3 cups Crisco
6-9 Tbs of Water

Filling

5 Granny Smith Apples, peeled and sliced
Cinnamon and Sugar, to taste (it always needs a little more than you think)

Topping

1 cup AP Flour
1 cup sugar
1 stick melted butter
1 Tbs. cinnamon

Instructions

Mix the flour and salt together, then rub the Crisco in with your fingers. Add
enough water to bring dough together. (I usually set the bowl in the sink and just add it in little bursts from the faucet)

Chill in fridge until ready to use. Toss apples with cinnamon and sugar, then set aside.
Stir melted butter with cinnamon, sugar, and flour for topping until it forms pea-sized crumbs. I like to use my fingers here too.
Roll the dough thin (it helps if you take a long piece of wax paper, put the dough on top, and fold the extra over top. Pull the extra wax paper so that it hangs over the edge of the counter and lean your tummy against it, it'll keep your counter cleaner and keep your pie crust in place) place it in
your pie pan (I like to use glass so that I can look at the bottom to see if it's done), crinkling and shaping the edges. Add filling and then top with the
crumble. Bake at 350 for 1 hour, or until the bottom of the crust is cooked
through.

Robin- Hi! I've missed you:hug: We were on the cape for the 4th of July week and I was thinking of you. It was crazy busy... much busier than I've seen it there is years.

Aimee- Josh Groban was great. He did try to "rock out" a little more than I like. I enjoy when he sings slower songs and in latin and spanish but I still thoroughly enjoyed him. It amazed me that someone can have a voice like that and sing so effortlessly. He's also completely adorable. Sadly he is too young for me...

Sheryl- I've been meaning to tell you that I've been following Jude on facebook. I am completely in love!

Janice- my favorite "vacations" are the ones when we just stay home and catch up on things. Nothings more relaxing to me then not working and sleeping in my own bed. Enjoy!

Dinner tonight will depend on what time Mike gets home from work. If he's late then its hummous, grape leaves, and a variety of cold salads. If not then its grilled buffalo burgers with blue cheese and avocado.
 
Hey lassies, I have not read back,sorry.

The boys achilles has flared up again as bad as ever.
Thats 8 weeks now of no dance training or football but after 2 nights at a gym session he was sobbing in pain last night.
The tendon was going into spasm and it was horrible,he got up this morning and collapsed when he tried to put weight on it.
He has been so good at resting it and he was to start training with the new bboy crew this weekend.....he is gutted and it is breakin ma heart. :sad1:

Aimee - My only concern with those yummy looking enchiladas is that my guys don't like anything too sweet. It seems like a lot of honey, do they taste sweet?:confused:

Well half of the jungle we call our lawn is back to square one. We didn't get to the orchard, but the main lawn is mowed. We worked until 9:00 last night. I weeded my flower beds and tried to dodge the mosquitoes - they won!! The other half will be finished tonight. It is just amazing how fast a lawn can go to heck in a hand basket in just 12 days. It has been so hot here in Nebraska that actually the long grass probably saved it. And it rained during the night so it looked great this morning.

I have a date with Ethan after work tonight. Elizabeth's birthday is tomorrow so we are going shopping. I asked him what he thought he would like to get for his Momma and he said - she likes shoes. Boy is that boy right!! We shall see what we come up with.

Whew, It's only 3:30 & I'm pooped! A's Daddy picked her up early, which I have to say I was happy. She is really not feeling well, poor thing. Thank goodness she slept really late, because she is super cranky!! With her & Jude, Wow!

Vickie, I'm so sad for the boy!! :sad1: I hope he can rest it, so he can get with his new group this weekend!

Robin, Jude is doing excellent! The sleep thing worked like a charm! I had to tell my daughter " I was wrong & you were right!" :laughing: He's sleeping through the night now & goes down for a nap in under 5 minutes!!!

Alexis wasn't very scared of this surgery. In fact she wanted it! ( poor thing didn't know it would hurt this much of course.) Her Mom Chris is a surgery nurse ( unit director) & works with ENT's. She chose the dr, nurses, anesthesia, she was very confident. So that made Alexis feel good about it!

Janice, Enjoy your time off! I can't believe your baby is going to be a Junior!!! How the heck did that happen?!
