A little ticked off! I need a new phone, my old one is not working right, and have been thinking about getting the internet capable plan. Went to the store today and they were closed! :mad: The website said they are open 12-5 today. Don't know if they will be open tomorrow or not.

I saw on this page that Elizabeth was having problems but y'all prayers were answered, thank God!!

Had a great time but it was HOT!!!!! Don't think we'll ever go back during the summer. Kyle really enjoyed being back at WDW with us and Mom sure enjoyed seeing the world through his eyes again. Had some great meals and some not so great meals from some of our fave places. Our favorite new place is Kouzzina....AMAZING!!!!!!!!!!!:worship:

I probably won't have time to read back so I hope I didn't miss anything major, if I did will someone please fill me in?:flower3:

Sorry I've been MIA.... I've been putting the garden in finally! It is mostly tomatoes and peppers. Tomatoes = 18 Romas for sauce and salsa, 9 Celebrity for sandwiches and slicing, 12-16 Patio (cherry) and 2 hanging Sweet 100 (cherry)... Peppers = 8 Bell Boy (green), 4 Red Knight, 4 Golden, and 4 Jalepeno. A few onions... and as many potatoes as we can get in as soon as it dries up a bit...

I am so exhausted from all of this manual labor, but I have to do my inside work soon!!!!

WFD = ??? Whatever my husband brings from the store... I don't even care..

No idea on dinner plans - we are still recovering from our late night and early morning today. We had a big lunch with my mom so we may just snack later.
 

So, I made the burgers and brought them to a cookout in my neighborhood. Let's just say they went over well. :thumbsup2

Those burgers looked yum! Glad it went over well.

I'm back in the salt mines for the next two days....hope to catch up with all the news over the next couple of days at some stage.
 
Teriyaki Salmon with Stir Fry Vegetables

Tonight’s dinner is Teriyaki Salmon with stir fry vegetables.


My starting ingredients:

For the salmon:
  • Salmon cutlets, one per person
  • Teriyaki Marinade – 2 tablespoon each of soya sauce, brown sugar, sherry mixed together.
  • Oil

Place the salmon cutlets in the marinade and allow to sit for at least 45 minutes.

For the stir fry:
  • Broccolini, 1 bunch, cut into pieces
  • Chinese Cabbage, 4 leaves, sliced with the stems separated from the leafy part
  • Chinese Flowing Cabbage or Choi Sum, 1 bunch, cut into pieces with stems separated from the leafy part
  • Oyster sauce, 1 tablespoon
  • Soya sauce, 1 tablespoon
  • ginger, sliced
  • Oil
  • Sesame Oil


Remove the salmon from the marinade and transfer the marinade to a pot. Cook the marinade on a low boiling simmer for 5 – 10 minutes.

To cook the salmon, heat oil in a pan or wok and fry for about 3 minutes on each side.

Remove from heat when cooked.


To cook the vegetables, heat the oil and sesame oil and fry the ginger.

Place all the vegetable stems in the wok and quickly stir fry for about 2 – 3 minutes.

Then add the leafy bits of the vegetables to the wok and toss quickly.

Pour the sauce into the wok and mix through the vegetables.

Allow to cook for another 2 minutes.

Place the salmon on a plate with some vegetables and spoon some of the reduced teriyaki sauce over the salmon.

After all the rain we had yesterday I was still able to grill. I have to post the marinade I used for the flank steak. It is definitely a keeper :thumbsup2.

WFD is Becky's thai chicken, green beans and ice cream with fruit.

Out of this world marinated flank steak (ala PW website)

2 pounds Flank Steak
½ cups Soy Sauce (you Can Use Low Sodium If You Like)
⅓ cups Olive Oil
¼ cups Worcestershire Sauce
2 Tablespoons Brown Sugar
3 cloves Minced Garlic
2 Tablespoons Chopped Green Onion
1-½ teaspoon Cracked Black Pepper, More Or Less To Taste
2 teaspoons Balsamic Vinegar

Add soy sauce, olive oil, Worcestershire sauce, brown sugar, garlic and green onion to a bowl and whisk well to combine. Remove 1/4 of a cup of the marinade and place in a small bowl and set aside.
Place flank steak in a large Ziploc bag and add marinade to the bag, seal to close.
Place the steak in the refrigerator for at least 4 hours. The longer you can marinate this, the better; I suggest marinating it overnight or even for up to 2 days.
To the remaining 1/4 cup of marinade you removed, add the balsamic vinegar, cover and set aside until you are ready to serve.
When ready to cook, heat your grill or grill pan, remove the steak from the bag and discard marinade.
Grill steak for 5-7 minutes per side depending on your desired doneness. Remove from the grill and cover with foil and let the steak rest for at least 5-10 minutes. The resting is VERY important, don’t skip this step!!

Johnny had to go back to work today so it's just another Monday here. I'm heading to the gym in a bit and then cooking a pot of red beans. I need to try and get some work done today because I have jury duty tomorrow.:crazy2:

Forgot to mention that I've never seen the crowds at WDW & Universal as massive as they were this past week. Also we've never experienced as many rides having "issues" causing delays and several of them shutting down. Add the heat on top of that = lots of pool time!!!;)

Our best meals were Kouzzina, Cali Grill, Bistro de Paris, Il Mulino and JIKO. We were disappointed in Citricos & Flying Fish. The only "bad" meal we had was La Hacienda, but the Margarita's there were really good!

Princess- Oh my goodness! Your food is killing me.in a good way!

BCB- I have to say that I wish my hubby cooked.............I could get used to those burgers!

I think I missed a lot but I have been trying to get my yard up to speed, I had no flowers in the ground and my beds were not Spring ready. Buddy has been helping me and he is wearing me out!

I basically spent the weekend eating. Beck made enough food for an army. It was good though. I am sure she will post pics and details.

Ellen -- I am so glad everything is okay with Elizabeth and baby!

Nancy -- Congratulations to Debbie!

Kat -- Welcome home! We went to Disney in June once. Never again. I guess we'll have to put Kouzzina on our must-try list!

Princess -- Nice pictures, as always.

marie -- Most of your menus this week sound like salad would be a natural side. My kids love salad with olive oil and a little lemon juice. For the pork roast, you could have baked apples (apples cut up, sprinkled with a little cinnamon and dotted with butter and cooked in the microwave until soft) and wild rice. You could sprinkle toasted almonds on the rice. Kids like plates that have lots of color and lots of different textures. I'll put dried cranberries in salads; raw carrots and cucumbers are good for crunch, and nuts (if not allergic) or cheese are a good salty component. My kids also love green beans with toasted almonds, broccoli or sugar snap peas with sesame seeds, and roasted asparagus with parmesan cheese. Of course, the thing they love the most is starch! Bread, mac and cheese, pasta...etc. Let us know more about your tastes, and I'll have better suggestions.

We have a busy week ahead. I definitely won't get back here tomorrow. I am working a long day, Liam has an event after school, and then he has a baseball game tomorrow night. He is pitching. Wish him luck! They are playing the league's best team, and the kids are huge. It would be really good for him if he pitches a good game. The last time he pitched, he pitched a shut out into the sixth inning. Unfortunately, the other team's pitcher also pitched a shut out, so Liam's team lost 1-0. Liam was so disappointed.
 
Laura Good luck to Liam tomorrow. You sound so busy you must just fall into bed at night. Glad Becky cooked enough for an army, hopefully you have some leftovers;)

Today was a much better day weather wise. It is hot and get this dry:worship:
I wanted to mow the grass but the ground is still too wet. I pulled weeds instead. At least that chore is done for a couple of days. Other than some odd and ends outside stuff I did a lot of nothing.;)

Two kinds of bbq ribs (no pictures). One was boiled and grilled, one was done low and slow in a cider brine and spice rub then grilled over indirect heat for 2 hours.

More in next post because everytime I write a long post I get timed out!

We have been painting all day - much bigger project than I thought it would be... I think DH may vetoe any of my ideas for awhile :laughing: It looks awesome, though!

We are not done, and actually already went through a gallon, so he just went out to get more paint, return the 12 ft ladder we rented, and pick up dinner. Then back to painting to get it finished!

Today: a baked black bean casserole. Aimee, since I know you subscribe, this is the recipe from the current Cooking Light taco article (minus the chorizo, since many in my family dislike chorizo. I subbed bacon fat for the vegetable oil in the beginning to account for the omission):

And, the main dish, fish tacos (sorry for the triple post, but I had forgotten to upload the taco pic.). Tasted great, but man does my house smell like a fish shack right now! The guacamole was the biggest hit--the only thing that got completely comsumed. We will be eating leftovers all week!

She did good. This was a really fast meet. Her first event was at 2:30 and the last was at a little after 3 with one in between.

As for the phone, will get it on Thursday, they were sold out and will get the new ones in that day. I am getting the Samsung Sidekick G4.

We had basic hamburgers, hot dogs, potato salad, etc today.

Tomorrow is my oldest godsons graduation. :sad1:
