The What's For Dinner Thread - March '11 (recipe index in OP)

My heart is just aching for those folks affected by the deadly tornadoes yesterday. The pics on the news are just devastating.:sad1:

We won't know anything on our roof until May 7, but from the looks of our neighborhood I'm pretty sure we will be getting a new one, especially since hurricane season is right around the corner.

Gretchen – The DIS is running very slow here also.

Vicb – Glad your weather fizzled out.

Lauri D – Any update on the people struck by lightening? That is such a sad & tragic story.:sad1:

Lauren – How is Tom feeling? Hoping his procedures went smoothly.
 
Laura- The whole week was supposed to be rainy here, I think we really lucked out. It is so windy and humid here.

Lauren- Hope Tom is doing well.

Princess- That looks so tasty and easy. I haven't been able to find thin rice noodles here, only the wide ones, but I'm going to keep looking.

Kathy- I know you already know this, but I think you see too much of your insurance company!

I have a class I'm taking tonight so it's find your own's for dinner.
 
We have been following the wicked weather here and it has been horrible! We have had heavy rain here but feel blessed that all we got from that storm system was rain. My heart hurts for those affected

Kat- I understand finding out about damage after the fact. THe folks at the FSA told me that a lot of farms would be finding damage in their sheds once they were getting ready to use them. It is a shame really, these old sheds are part of our landscape here in CT and watching them go is hard.

I htink we are going out to eat tonight. There is a major vote here in town and once again, we are a house divided. I almost suggested we just stay home, our votes will cancel each other but I cannot miss a vote.
 
Hi all!! I am jumping back in and hope to catch up with all of you tomorrow.

YEA!!! Easter and Lent is over, paychecks are signed and out, bills are paid and mailed, the monthly Newsletter is all but finished - I have 2 ladies coming in this afternoon to put them together and I am just now coming up for air.

I hope you all had a joyous Easter. Our day was great!!

My prayers are with all in the path of these devasting storms - STAY SAFE!!!

I decided a couple of bunnies needed to be melted down.

Cute idea! We have so much chocolate here it is ridiculous. I usually don't fill the kids' baskets with chocolate, but this year, I didn't want to spend a lot of money and I didn't want to buy junk, so chocolate and a couple small gifts it was. Of course, I had to buy the chocolate that I like to eat...:laughing:

I agree! Liam's game was canceled tonight though due to the thunderstorms in the forecast. So far, none have appeared, and it is fine by me if they decide not to arrive. Liam was happy to get the night off. He is tired.

This weather is just crazy. Every time I check CNN the death toll just keeps rising. :sad1:

We were under warnings and watches, tornado, TS and flood, from about 6 last night to 3 today. :eek:

Dinner tonight is Shepard's Pie. DM is making it. :headache:

Dinner tomorrow or Saturday, whenever I can make it, will be Tandoori chicken. Last week I went on a "field trip" for work, I was chauffer for an exchange program we have, and got to do a little shopping while I waited for the group. There was this really cool new tea and spice shop where we were. I got a Tandoori spice.

They had all these differant finishing salts and I should have gotten one. :headache: Oh well, a good excuse to go down there for the day. :thumbsup2 I also found a good cupcake bakery and a baked potato place. The baked potato place was closed but in looking at the menu on the door I really want to go try it out, they all sounded soooooo good.

Today was an odd day; I am hosting a tea table on Saturday with a friend and we went with an Alice in Wonderland/Queen of Hearts/Mad Teaparty theme and did it all tonight since my friend had to go out of town at the last minute. It looks AMAZING and I want to win the table competition! I'll snap pics and post them once I finish it all tomorrow.

So, I went out of town for a meeting all day, came home for a couple of hours, and then back to work at 4pm until 930. I drove through ChickFilA on the way home.

It is a beautiful day today. The skies are so blue they almost hurt the eyes. It is glorious!! A bit windy but beautiful non the less.

Did you all watch the wedding this morning? I wasn't going to as I had to work, (3am is a bit early to get up) but woke up around 5 and turned the TV on just as Kate was leaving the car (great timing huh?) and then I couldn't stop watching. She was beautiful as was the Queen Mother all in yellow. I was able to watch till after the balcony kiss. I am so happy for them, they hold the future in their hands. They look ready to take it all on.

We are going into Lincoln tonight as we are going to the Berkshire Hathaway Shareholders meeting in Omaha tomorrow. That is always a great and fun time. Plus we will be able to listen to Warren Buffet some and that is always an honor. Fun times!! We will stay with Matthew and he has the whole weekend off (a First!!) so we are really looking forward to having him the whole time.

Robin – You are so right about me seeing the insurance company way too much! I’ll be happy though if I don’t see them at all this hurricane season.;)

Laura – I’m glad Liam got a break since he was tired. Kyle and his team are getting pretty ready for the season to be over. He didn’t realize how much the traveling would tire them. They are in Virginia this weekend.

Thanks for the chicken compliments. It was a new recipe and I really liked it. The crust was super crisp and light, and the meat was not at all greasy.

Ellen, I was not able to watch the wedding but I looked at photos afterwards. Everyone looked so lovely. I wonder where they are going for their honeymoon?

It's a beautiful sunny day here in Boston today. I am going to head out for a nice long walk soon. :)

WFD: John's going to the fish market in the North End for us. They have cockles, tuna, and grouper today. I am really hoping for the cockles, but tuna or grouper would be OK too!

I completely understand. I am nostalgic too and down here we used to have the sweetgrass basket weaver stands all along the highway. Those women made that sweetgrass into works of art and there were tons of them when I was young. Now, due to the shortage of raw materials, the expanding of the highway, and the older generation passing away there aren't many left and I really miss them.

We are going into Lincoln tonight as we are going to the Berkshire Hathaway Shareholders meeting in Omaha tomorrow. That is always a great and fun time. Plus we will be able to listen to Warren Buffet some and that is always an honor. Fun times!! I've never had cockles, but I would be happy with the tuna or the grouper too. That's one of the things I enjoy most about the summer. Kenny thinks that seafood is more of a summer food so he complains when I fix it in the winter. :confused3

Tonight is leftover tuna on a salad for me. Kenny and the kids are having pizza. Our schools have been on spring break this week and I will be glad to see school start back next week. It only takes a couple of days off before Amanda is driving me crazy because she is bored. I don't know what we are going to do this summer but I know I'm going to have to come up with some activities for her or one of us may not survive until the fall. :rolleyes1

I recorded it to watch when I got up - watching now, actually. DVR is great! I can fastforward through stuff I don't care about and get extra sleep! :laughing:

I thought she was stunning as a bride and they look very much in love. Since their relationship has many years already in it, and they are older, I hope it's a lasting marriage for them.

There is a concert at church tonight I have to be at so dinner may be on the run again. The entire weekend looks that way, actually! Busy busy!

The boy had a sleep over at a friends house last night,not that he got any sleep.
They stayed up all night and he is walkin about like a zombie....or a teenager as Colin remarked !!!

Im glad he had fun.....he is finding it tough with not having his partner in crime around.

and as for " The Wedding ".....Im saying nothing.
 
This is now my new favorite way to cook Bok Choy

Spicy Bok Choy in Garlic Sauce

1 pound bok choy
1 tablespoon vegetable oil
1 tablespoon sesame oil
1/4 cup water
1 teaspoon grated fresh ginger root

2 cloves garlic, minced
1 tablespoon oyster sauce
1 tablespoon light soy sauce
1 tablespoon brown sugar
1/8 teaspoon crushed red pepper flakes (optional)


Trim off the ends of the bok choy and chop, keeping the white parts separate from the green as they will need to cook longer. Rinse and spin or pat dry. Set aside
In a small bowl or cup, stir together the vegetable oil and sesame oil. In a separate larger bowl, stir together the water, ginger, garlic, oyster sauce, soy sauce, brown sugar and red pepper flakes. Set this aside.
Heat the oil in a large skillet or wok over medium-high heat. Add the bok choy stems first; stir fry for a few minutes or until the pieces start to turn a pale green. When stems are almost cooked, add the leaves; cook and stir until leaves are wilted, 1 to 2 minutes. Remove from the heat and transfer the bok choy to a serving dish. Pour the sauce into the skillet or wok, and set over medium-high heat. Cook, stirring constantly until sauce has thickened slightly, about 3 minutes. Pour over the bok choy and toss lightly to coat

Ladies, I watched the wedding, i am a total wedding geek but Oh my goodness! The weather related tragedies are overwhelming. I cannot get past all of the destruction that has come to pass this week.

Dinner last night was Red Robin for Kady. we managed to get through the entire night without one single discussion about the referendum in town other than my referring to the bunch of men standing around a gynormous truck/billboard as a bunch of rednecks. I never should have done that..............it was an insult to the rednecks. :sad2: Our library was shot down once again.

I am not sure what to make for dinner. I have chicken I could grill so we'll see.

Its beautiful here today. I really wish my grill was ready. Oh well. We are having chicken with avocado sauce, wild rice, corn and salad...I think.
 
Busy day with shopping for work then I was able to get to my godsons lacrosse game. Was able to get some great shots of the game. :thumbsup2 They lost though and he was not happy at all. :scared:

I made chicken with tandori spices and yogurt. Was okay, could have used more of the spice mix, left out the yogurt grilled it instead of baking. Had it with some rice.

This weekend will be so busy. Swimming for my DN tomorrow and Sunday. My youngest godson has a game tomorrow that I am not sure I will get to. His dad didn't know the time just that it is tomorrow. :headache: And I think my BFF wants me to go take pics of her oldest whose prom is tomorrow night.

Sunday after DN's swim meet I have to run her to a girl scout get together, not sure if I have to stay with her or not. My Dsis has to take her youngest to something and won't be there and her dad is a swim judge and will be at the meet all day.

After the swim meet I am going to go to my cousins for a little while.

I think I need a vacation. :rotfl:
