Good Morning! Quick fly by...I hope everyone had a nice holiday. We did. We went to NJ for a long, crazy, weekend. I drove all over the state to see everyone and slept it 3 different places for 3 different nights. Oy! We also took 2 cars since Tom had to stay for work and I had to get Andrew back for school. I was glad to be home yesterday although its gonna take me a week or so to get caught up with all the baseball going on.

I am trying to do quick dinners lately and since there is practice tonight, it will be cheeseburger macaroni and tossed salad. I am looking forward to this recipe...it looks really good! If it is, I will post it.

Lauren- I have to take my husband's truck to get serviced tomorrow, all I can say is everyone better stay out of my way! Glad you had a nice weekend, even if it was a bit crazy.

Kathy- I must have missed something (there's a shock), did something happen to your roof? I hope Stephanie is well.

Aimee- That rissoto looks so good and easy. Did you really only use 2 1/2 cups of broth?

Vic- Hope you did okay in the bad weather.

Sheryl- I remember the first year I was married I made chocolate chip cookies for Christmas, then my husband asked if I was going to make Christmas cookies too. I thought I had because when I was growing up chocolate chip cookies were Christmas cookies. It was the only time my mom baked. Lemon meringue is my mom's, husbands, and daughter's favorite pie too. What's a penny party?

Yet another night I'm not sure on dinner. I cooked a ham last night and since it's just the three of us we have plenty of leftovers but I think I want to save that for tomorrow since it's a crazy night for us. Oh well, I'll figure it out. Have a great day all!
 
This sounds really good! How many people did it feed? My family loves risotto, and this sounds right up our alley!!!

Um, I used a 9x13 but it's not deep. It only uses 1 cup of rice so while it grows some, it's not a huge portion. We each had a decent serving and he took the rest to work for lunch so 3 adult size portions, I guess?

Aimee I am going to have to try that risotto. I tried years ago to make some and it turned into a gross mess so I gave up.

I've also tried a more traditional risotto that requires a lot less stirring that I had a lot of success with - it was a herbed risotto with chicken and carmelized onions. I think I posted it on here? You should give that a try sometime!

Yeah, because it's only a cup of rice. The stovetop risotto I mentioned above was 2 cups of rice and 5 cups of broth/stock.



The Rangers sucked last night but we had good seats and it was nice weather so it was fun regardless. We've had some crazy weather, lots of tornadoes. There were 6 or 8 tornadoes last night while we were at the game but all southeast of us. It was cool, breezy, and beautiful at the ballpark. So weird!

It's church night so I'll find something around here to eat...
 

Sheryl -- I hope Alexis enjoys the rest of the school year! That is dedication by Chris to go back to Mass on Sunday!!

Kathy -- I hope your week slows down. Liam's next game is Thursday. The team will do a lot better if they don't give up 12 walks (maybe more...it seemed like more) in five innings.

Aimee -- I'm glad you had fun at the game, despite the results. At least there were no tornadoes! :eek:

Dinner tonight is baby back ribs with barbecue sauce (I don't have gas for my grill yet, so I am cooking the ribs in my slow cooker and adding the sauce at the end...we'll see how it turns out), macaroni and cheese and green beans.
 
Laura- My grill is still packed away from the hurricane we never had. I've never cooked ribs on the grill, I'm still learning to grill with cheaper cuts of meat. Anyway, I put them in a disposable (about the only time I use disposable) roasting pan with a dry rub. Then I seal them up tightly with foil and cook them at 275 for a really long time. Brush them with bbq and finish off uncovered in the oven. Now I want ribs, I think I have a pack in the freezer.

Aimee- When I make risotto on the stove I use one heaping cup of rice and usually 5-6 cups of stock. I definatly going to try your baked version, so much easier than the traditional way, but I do enjoy making it.

Lauren – Sounds like you had a very busy Easter weekend. Hopefully you’ll be able to rest a bit between baseball games.:hug:

Robin – I may not have been clear. Last month when we had the hail storm and flooding, we assumed we had no damage since it wasn’t visible but at least a dozen of our neighbors have had adjusters come out and turns out they had pretty significant damage. It’s going to be a few weeks before they can come out since there have been so many claims.

Tonight is a hurry up night so WFDT = pan fried steak with soy sauce, white rice, fresh veggies and pineapple jello.

Our weather fizzled out here, just a lot of rain not really stormy but that is fine with me!
 
Quick check in today. The Dis is running very, very slow today for me.

Anyway, dinner is hash brown quiche to use up some of the leftover Easter ham.

Good evening ladies! Dinner has been leftovers from Easter. Tonight Buddy took me, Welby and the girls to the Summerhoue for supper. YUM!
 
My Mexican Meatless Chili

3 TBS olive oil
1.5 pounds of chopped sweet peppers - I use all colors
8 ounces chopped mushrooms
1 or 2 Jalapenos, chopped
1 diced onion

3 cans of beans.... I use navy, black, and cannelli... 1 can of each DRAINED
2 chipotle peppers in adobo, diced
2 ounces hot sauce
salt and pepper to taste
2 shots of tequilla
1 or 2 ounces dark Mexican chocolate ( doesn't have to be Mexican )
2 TBS garlic
1 can Tomato sauce
1 can diced tomatoes
3 - 4 TBS of chili seasoning

In a large pot or Dutch Oven:

Take the first 5 ingredients and saute until somewhat soft... not all the way. Then dump in the rest of the ingredients and simmer for about 20 minutes, stirring every few. Adjust seasoning as needed.

Serve with cornbread.

Optional condiments:

Sour cream, cilantro, sliced FRESH jalapenos.

:scared1: That is so awful! My DD grew up playing soccer and we had some close calls with lightning and tornadic weather conditions, very scary! Kids on fields like that (baseball too) are so vulnerable.
 
My Mexican Meatless Chili

Sounds tasty. I love meatless chili, DH does not like chili at all in any form, which is weird because he loves all other spicy foods and I cook tex-mex a lot in the summer. Chili is the only thing he doesn't like! I think he ate it too much as a kid. Stick around and post more recipes! :)

Fried Rice Noodles

Tonight for dinner, we had some fried noodles.

My starting ingredients:

  • Rice Noodles – about 150 g
  • Shrimp, peeled and deveined – about 300g
  • Fish cake (or balls) – cut in half. I buy these from my local Chinese store. You can substitute with other types of protein.
  • Carrot and Cabbage – finely sliced (julienned). My local Chinese store sells a pack of 250g already cut.
  • Snow peas – about 200g. These are in season over here; you can substitute with green beans or broccoli.
  • Garlic, 1 clove
  • Ginger, finely sliced.
  • Soya sauce, 1 tablespoon
  • Oyster sauce, 1 tablespoon
  • Kecap Manis (sweet soya sauce), 1 tablespoon – if you can’t get this, then add another tablespoon of soya sauce instead.
  • A little water
  • Salt and Pepper

Soak the rice noodles in some boiling water until soft. Should take about 10 - 15 minutes. Strain to remove all the excess water.

Mix the sauces together and add a little water. I ran out of stock today otherwise I would have added some stock for additional flavour. If you have stock cube, then add it to the sauces and use a little hot water to dissolve the stock cube.

In a wok add some oil and heat up. Quickly fry the shrimp until the shrimp changes colour. Do not overcook. Remove from heat and leave to one side.

Fry the fish cake in the same way, although it takes a bit longer to heat up. Remove from heat and leave to one side.

Diced chicken would be a good alternative.

Add more oil to the wok and fry the garlic and ginger for about 1 minute (or until the garlic starts to colour).

Add the cabbage and carrots to the wok and quickly stir.

I cover the wok for about 1 – 2 minutes so that these vegetables are cooked for a little longer.

Add the snow peas and quickly stir.

Place the noodles in the wok and pour the sauce over the noodles.

Quickly stir and add the fish cake back to the wok. Stir through and allow the sauce to infuse into the noodles. Keep stirring.

When the liquid is nearly all evaporated, add the prawns back and continue to stir.

Taste to see if you need to add any additional salt and pepper.
When cooked, transfer to a large bowl and serve.

I served this for the family, so I didn’t dress it up. If you are serving it to guests, put some cilantro over the top for additional colour appeal.

Good morning. Hope everyone has a nice day. The dinner last night was good. More like a homemade taco hamburger helper. I enjoyed it but it wasnt over the top outrageous...it anyone wants the recipe, I will post it.

Kat, I hope you get good news from the adjuster. Yay on the new trucks for the boys!

Laura, good luck to Liam and team today! Now I want ribs too! We have a really good bbq place in town so that might be on the menu this weekend.

Princess, Yum! I love rice noodles but never made them. I just order Singapore style when going out for chinese food.

I think dinner tonight will be chicken noodle soup. Tom is getting some wisdom teeth out and fillings so he will need something softer. I have the broth in the freezer so that will be a good way to use it.

The ribs last night were good. Caili declared them "awesome!!" I am not sure if Liam is going to get his game in tonight. They are expecting thunderstorms to roll in beginning late this afternoon and continuing through the evening. We'll see...we've been having forecasted rain miss us a lot lately. Dinner is going to be ravioli for me, pasta for the kids and salad, regardless.

WFD: some kind of chicken. It has to be inside since it is raining, and given that I have no oven still that means either cut up and cooked in the toaster oven or fried.

Lauren, I hope Tom is feeling OK. Are you allowed to have soup after having wisdom teeth out? For some reason I thought you were not supposed to eat hot foods right after as it can cause bleeding. I had mine out many years ago so maybe I am remembering wrong.
