The What's For Dinner Thread - March '11 (recipe index in OP)

Kathy last night was blackened catfish with dirty rice (Paula Deen's recipe)

Tonights dinner is chicken wings with beet chips, snap peas for the boy.

This "spring' has brought some wild weather. Did you hear about the St Louis airport. They had a tornando go through. I am convinced I am not going to have clean floors for a looong time. Next week they are calling for more rain. I don't think 2 days is enough to dry out all the standing water and mud I have around me.

I have my eggs cooking for the deviled eggs and need to get my sauce going for the lasagna. This afternoon I'll make the $$$ carrot cake.

Off to finish cleaning.

I always do that too! John and I stopped at Whole Foods (aka Whole Wallet) last night for some asparagus and miso and I ended up doing a huge shop and spent $150!!

Here is a picture of last night's dinner. We had a new-to-us fish called Ono, or Hawaiian moonfish. It was delicious! I served it with a red thai curry sauce, asparagus, and coconut rice.


Gosh flickr has been acting weird lately! I'll put the photo in another post.

WFD: going to the inlaws. They want us to bring pizza, so that is what we are doing.

Thank you ladiesfor all of your kind words. Buddy isreally freakin grouchy today adn I know that it is because he has no idea what is going to happen. I cannot get into the rehab to see her because I have two full days ofcommitments that I made. This evening I am sitting at Welby's so they can go out to dinner. THank goodnessthat Marisa came by with Kady and her friend, they all make Easter decorations and then we had Mickey D's for dinner.

I'm trying to prep Easter lunch today, and clean house, while DH is out of town (state, really) golfing. He'll be back later tonight. Dinner is :confused3

Hi all! We just got back from the family Easter Egg hunt. It was so much fun! Timothy actually understood the point of the game, and had a ball looking for eggs and candy. I got quite a few pictures, so I'll try to get them posted as soon as I can.

I've got stuff as ready for tomorrow as I can. I am trying a new recipe for the ham, and I'm also trying PW's recipe for escalloped cabbage. Cross your fingers for me! The recipe sounded good, and I've got a head of cabbage that I need to use up. I'll also steam some broccoli in case things go wrong! I'm going to get up early tomorrow to get the ham going in the slow cooker. After church, I'll do the potatoes. I decided to do PW's Crash Hot Potatoes instead of sweets, as I got a bag of baby yukon golds from Bountiful Baskets.

Tonight I'll throw the cabbage together while I'm working on baskets for the kids. The jello beans are done and in the fridge. They look yummy, and I know the kids will eat them!

I have no idea what we are doing tonight. Alan just got back from a 3 day trip, so I'm leaving it up to him. He knows how much I have to do, and he knows that he's not much help with the baskets, so if he wants dinner, it's in his court.

Glynis- Thanks for letting us know about Wendie's gram, my thoughts are with her. I'm glad Timothy had fun at the egg hunt.

Becky- Your fish looks like a cross between salmon and tofu!

Janice- I made the mistake of looking at the weather, it's supposed to rain through next Saturday. Probably longer but that's as far out as the report went. The firewood rack was empty so I just brought it in the garage and filled it up. It's almost May and we still need fires.

Kathy- Enjoy your oysters, we won't have them again until October when it's oyster season. (we can buy them from the commercial grants, but they are pricey in the summer, I wait until my dad goes out and get's them.)

So often I take for granted where I live, and then something special happens to remind me how lucky I am...I happen to think this is really cool. Just over 200 right whales are off the coast of Cape Cod! That's about half of the ENTIRE population! It's truly amazing to be able to stand on the beach and be able to see such a rare animal.

Tonight we are having meatloaf, beans and greens, and some Betty Crocker potato scalloped potato thing.

Hi all. Hope you've been well. Your dinners have all sounded AMAZING....mine have just been take-aways! :sad2:


My Easter lunch was pretty nice today. We went to my older brother's for lunch. All in all, they ended up with 11 adults and 5 kids for lunch.

Here's what was served for starters or appertisers.

My brother's MiL made a plate of mixed grilled vegetables, seasoned with S&P, lemon zest, lemon juice and olive oil.

The theme was "A Spanish feel", so we had jamon.

There was also two dips, bread and anchovies, which we were supposed to plate up like this.

The red pepper butter was used as the spread on the bread, the anchovies went on and it was topped with the garlic basil pesto.

The starters were all really tasty.

For main or entree, this was what my brother and SiL served.

The freshwater trout was baked in the oven and topped with grilled lemon and wilted spinach. A light lemon sauce, made with fish stock, was then poured on top.

The fish was delicious, but a touch overdone....only just.


There was also a roast lamb, cooked in a (kettle) BBQ.

The seasoning on the lamb was rosemary, salt and pepper. I think there might have been some thyme as well. I thought the lamb was outstanding! Despite being a little underdone for my tastes, it was really tender.


There was also a chicken, cooked in sherry.

My SiL loves putting fennel on the salad. If you've never tried fennel in salad before, I highly recommend this as an option on your next salad. It adds a delightful crunch and aniseed flavour to the greens.

WOW :eek: What a spread. You really eat good!

This morning we are going to friends for brunch with my deviled eggs and fruit tray.

WFD is Lasgana salad and garlic bread.

Church this morning was wonderful! Now we are getting ready for Easter dinner with my SIL and her family. I'm making ham with cherry-currant sauce, escalloped cabbage, crash hot potatoes, steamed broccoli and jello beans. She is making chicken, baked beans and other stuff. I don't think we'll go hungry. I'm just waiting for the potatoes to boil so I can smash them and then bake them. Yummo!!!

Yay! We got seats this year, so we were pretty happy. I hope things slow down for you now.

Dinner today was grilled fresh ham with a molasses/rum glaze, chicken with fontina cheese and asparagus wrapped in prosciutto, green beans, roasted asparagus, twice baked potatoes and Parker House rolls. I didn't eat the ham, but everything else was delicious!

My crew left a bit ago, I'd rather catch up here than start on the dishes! Everyone's dinners look/sound really delicious!

I had a make your own sandwich bar with Honey Baked ham and roasted turkey, cheese, several bread choices, lettuce, tomatoes etc....

My sister brought au gratin potatoes, my mom brought baked beans and deviled eggs. I added cole slaw and fruit salad. We had a mountain of food but everyone got a bag to take home so no cooking for atleast one dinner or a bunch of lunches!

I made my usual chocolate bundt cake which is very reliable and tried a new lemon bundt cake recipe from Family Circle magazine, the flavor was good but the texture was a bit crumbly :headache: Oh well people still ate it.

Have a good week everyone! Back to work Monday, back to school craziness.....
 
Never Fail Chocolate Chocolate Chip Bundt Cake

1 pkg. chocolate cake mix
1 small pkg. instant chocolate pudding mix
1 c. sour cream
1/2 c. water
1/2 c. oil
4 eggs
12 oz. chocolate chips


Mix all together except chips. Beat at medium speed for 2 min. Add chips. Pour into greased bundt pan. Bake at 350 for apx. 1 hour. Cool in pan 25 min before removing. When cool, dust with powdered sugar.

Welcome back. I'm glad you were able to catch up on your rest. Kids don't generally make good sleeping partners. I went through something similar with my youngest niece in CA. She wanted to sleep with me several nights and at least one of them I woke with her foot in my face. :laughing:

My oldest DN barely moves, the little one is all over the place every time. I told her she was just like a Mexican jumping bean. :rotfl:

Easter was quiet today, stayed home and did nothing much for the first time in two weeks. My next couple of weekends will be busy.

YUM! That's a great looking pizza rustica.

WFDT - Pumpkin soup with crusty rolls.

I also made some chocolate cupcakes.....

175 g butter
175 g caster sugar
175 g self raising flour
20 g cocoa
2 eggs
pinch of salt

Cream the butter and sugar together. Add eggs and when mixed in, add sifted SRF and cocoa with pinch of salt. Cook in a 200 C oven for 15 - 20 minutes. When cool, ice as you like.

I used Betty Crocker frosting today instead of making it from scratch...
