The What's For Dinner Thread - March '11 (recipe index in OP)

Hi Ladies!

I got a call from Nan, and Joanie is out of surgery and in recovery. They couldnt put the screws in because I guess her bones couldnt support them. I will have Nan tell you everything later. I just wanted to let you all know what was going on. Thanks for all the well wishes!

That sounds miserable! Our heat index today was 95; I can't imagine spending time in a tent in nice clothes. :scared:

Yeah, it was 92 outside before heat index. Who thought an outdoor reception in TX in May was a good idea?

Congrats on the tags!

The a/c is broken at work. A few weeks ago, it was stuck off. Today, it is stuck at 60! The dew point is 72, so everything in the building is wet!

Good to hear!!

Tonight I'm making indian spiced chicken with curried quinoa with chickpeas and almonds.

Thank you for the update. I tried to check in here earlier today and the boards were down for an upgrade, then my service was spotty.

92 base temp. :scared:

Thanks!

Yeah, there was so much water coming off the walls that there were puddles on the floor.

Good morning! No 80's for us today still not bad though just 60.

Last night we had leftovers, rather I had the ham and Mr A had a grilled cheese.

Tonight I can't think that far yet. My brain really would rather be asleep right now.

have a good day everyone.

Good evening everyone....my mind is ALWAYS in the gutter; not under the desk! :rolleyes1

It's in the 40's here....winter is definitely on us.

It's Tuesday and DH cooked our standard Baked Jacket potato for dinner tonight.

My whole post disappeared!!!!!!!!!!!!!!!! GRRRRRRRRRRRRRRRRRRRRR!

I hate it when that happens! Usually it's when Ive typed in a really long post too.

Here is a photo of last night's dinner. I used quail eggs in the salad:

BBL when I figure out what I am cooking tonight.

Morning. Another rainy day here. It's supposed to clear up this afternoon, though. Good thing! I think I'm sprouting gills!

Dinner last night was so good! I stumbled across my mother's recipe for meat sauce, so I made that and we had it over thin spaghetti last night. It was a meal full of memories for me! Even the kids loved it! Not a speck was left over, and I doubled the recipe!!!

Dinner tonight will be tuna casserole.

Nancy - I hope Joanie is doing ok. Sorry about your post getting lost. I hate that!

Becky - Yummy looking picture, as usual!

Princess - Stay warm, ok? I think your baked potato dinner sounds yummo!

Have a great day, everyone! Timothy and I are off to Costco after I drop off Katie's violin. She didn't think she'd need it this close to the end of the school year, but surprise! She does!

Good morning! Tonight I'm going to out to dinner with some friends and then to a cooking class - we are doing all Spanish inspired desserts. I'm excited! Esp since I suck at baking!

DH is eating leftovers - we have tons!

I'm behind, lost, gone! :rotfl: So much to do this week and not enough time to do it all but I will get caught up!

Good news here- my Timex took a licking and is still ticking! :yay: No need to buy a new watch and my DM gets to live another day. :thumbsup2

Speaking of which, she is going on vacation soon! :woohoo:

Dinner last night was a lemon chicken. I just coated chicken breasts with salt, lemon zest and panko, then baked them in the oven. When they were done I cut them up and squeezed lemon juice on them. Really good, had it with leftover mac and cheese.

Dinner tonight will be leftover chicken and either peas with mushrooms or asparagus and maybe some orzo or rice.

That class sounds like fun!

Where did everyone go?

It is going to be a rainy stormy day here. If you could measure it by my sinus's it is going to be really rough. :sad1:

WFD is going to be a veggie stir fry or maybe a curry. I need to use up some veggies and I need something that has some heat to warm me and clear my sinus's

What a day! Firstly work is frantic this week and we're at crunch time on my project. Lots of testing with the business users to make sure the system works the way it needs to....3 days in; and 2 more to go! And then I get to do it all over again in 2 weeks time. Oh Joy!
Thankfully, I didn't have to cook dinner as it is Wednesday here. But I ended up working late and they put together a doggy bag for me because one of my nephews was doing his confirmation tonight. I was only 20 minutes :headache:. Ceremony went for 90 minutes! There sure were a lot of people being confirmed tonight. So, this will count as number 1 out of 3times I'm expecting to go to church this year. The sister of the nephew confirmed tonight will be doing her first holy communion sometime later in the year. My other brother has twins and they are being confirmed later this year as well. I half expected the floor to open up and swallow me up when I walked into church....definitely no rapture for me.

Dinner was fried noodles and fried rice...because of the confirmation, mum decided it was a light meal tonight. And also because we were having cake and coffee at my brother's place for celebration.

Just got home and I'm catching up on the Dis.

Hope you're all well.

Good morning all, sorry I have been around much. I'm attempting to get some sort of routine going but haven't got there yet!

Marilyn- I make a real easy and tasty lemon chicken. Just marinade raw chicken in lemon juice, zest, garlic, olive oil, salt and pepper. The lemon juice works really quickly so it just needs 20 minutes or so, even less if you pound the chicken thin. Then I either grill it or cook it on the stove. If you pound the chicken it only takes a couple of minutes to cook, of course by then you've invested the time to pound it.

Aimee- Hope you had fun at the class!

Tonight we are having chili for dinner, not really the right meal for a beautiful spring day but I'm making a big batch to freeze for my lunches. Have a great day all.

Good Morning All!

I see tha tthere are a lot of busy folks here, must be Spring! Or Falltime for Princess..............

Buddy and I had dinner salads last night. I picked them up on my way home from the hospital. Joanoe is doing okay I guess , I have no experience to measure it by. The nurse said today will tell more about how she is, yesterday she had limited mobility and so she was frustrated.

We are off to Vermont this evening after Kady gets off of the bus, debbie's induction is Friday! If there is wireless at teh hotel I will check i n

Where did everyone go?

I think some folks are traveling right now. I know Laura's been crazy busy. She'll check in soon I am sure.

Last night I made grilled pesto chicken and grilled red onion panini with provolone cheese and tomatoes. No pictures.

Tonight John and I are heading over to Liam and Caili's school for a children's concert (Liam) and art show (Caili) followed by the school awards ceremony. We know Liam is getting at least one award, not sure what it is for though. Given that we have to head over there straight from work and won't get home until after 8 PM, dinner is going to be something very fast and probably not picture-worthy. Maybe a grilled pizza.

Have a good day everyone!

That sounds good too. I had thought about pounding it out but don't have anything safe to do that with, really need to buy a tenderizer.

Went to see Pirates last night. It was good.

Dinner tonight will be salmon.

Morning, all! It's finally a sunny day here. Forecasters say it's supposed to be nice until Sunday, then another round of storms. Weird spring!

Dinner last night was a huge chef salad. I used up a ton of produce I've had hanging around from my last couple of baskets. I used 2 heads of Romaine, boiled eggs, about 6 tomatoes, 2 cucumbers, a bulb of jicama and cubed turkey. It tasted so good!!! I always forget how good I feel after a salad. I need to make more of them this spring and summer.

No idea what's for dinner tonight. Leslie is down with the same tummy bug that hit Timothy last week. She's been throwing up all morning, which means no school, and no field trip for her. She's pretty bummed about it, but rules are rules. I'm hoping she'll feel good later, so I can leave her and run to the store to pick up some groceries. If I can't make it, then we'll have ham fried rice for dinner, that, or scrambled eggs.

Work on the documentary is frustratingly slow! Alan has been slammed at work, so he hasn't been able to do any "clean up" work on the video, so we're a bit behind schedule. Oh well. He has tomorrow off (our 21st anniversary), so we will hit the grindstone really hard all day, and then go out for a nice dinner in the evening, and then hit it hard again all day Friday. On Friday evening, we will leave to go to Dad's house to show him, and his associates the work that's done so far, and make any changes that they want. Hopefully, there won't be many. Wish us luck, and pray for a slow day for Alan today so he can get some clean up done!

Just in case I don't get back here today, I am busy building the Ark. It is pouring here and thundering.

I am glad to see everyone is ok so far.
